RHODE ISLAND CLAM CAKES

This recipe is best made with freshly ground clams, although it would still be good with finely chopped clams. Canned would be OK, and better to make it with canned than not at all, but please, please, please make this at least once with fresh clams. You will not be sorry. Use cake flour if you can get it; it will make a lighter, fluffier cake. All-purpose is fine if you can't find cake flour. Use a "regular" beer, not a fancy one. Think Budweiser. Be sure to keep your oil as close to 350°F as you can. The cakes will come out greasy if your oil gets too cool. Fry in batches to prevent this.

1 recipe for remoulade
Canola or other vegetable oil for frying
3 beaten eggs
1/2 cup buttermilk
1/2 cup clam broth
1/2 cup cold beer
2 teaspoons maple syrup
1 1/2 cups chopped or ground clams
1 teaspoon salt
2 1/2 teaspoons baking powder
3 1/2 cups cake flour, (or all-purpose flour)

Steps:

  • Make the remoulade first and set aside. Heat the oil to 350°F.
  • Mix all the liquid ingredients together except the beer. Mix all the dry ingredients together. When your oil is hot, add the beer to the liquid ingredients and mix gently. Stir in the dry ingredients just until combined.
  • Drop a tablespoon of batter into the hot oil at a time. Do not crowd the pot. Let them sizzle for 30 seconds or so, then dislodge any that are stuck to the bottom with a chopstick or wooden skewer. Fry until golden brown on both sides, about 5 minutes.
  • Drain on paper towels and serve while hot with the remoulade, Tabasco or tartar sauce. And beer. Lots of beer.

Digging through my recipe file I came across this one. The card is well-used, so we must have liked them, but there are no notes on the card. I probably made these when we were first married and times were tough. But I'm going to try them again soon!

2 (6 1/2 ounce) cans chopped clams, well drained
2 eggs
1 cup crushed saltine crackers
2 tablespoons minced parsley
1 teaspoon grated onion
4 tablespoons butter
lemon slice (to garnish)
parsley (to garnish)
tartar sauce, if desired

Steps:

  • Mix clams, eggs, crushed crackers, parsley, and grated onion.
  • In pan in hot butter, spoon clam mixture into 4 mounds, gently flattening each with back of spoon.
  • Cook cakes until browned on both sides, about 3-5 minutes per side.
  • Serve with tartar sauce and lemon wedges, if desired.

1 large vidalia onion
12 ounces beer (Budweiser or the like is fine)
olive oil
6 lbs steamer clams
2 cups canola oil, according to manufacturer's instructions on deep-fryer (or more)
3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons salt
2 eggs, lightly beaten
1/2 cup evaporated milk
1 1/2 cups clam broth
lemon wedge, if desired
tartar sauce

Steps:

  • Over medium heat in a large pan, pour 3 tablespoons olive oil. Chop onion into large chunks and saute in oil until lightly cooked, about 5 minutes. Add the beer and the clams. Cover and cook until all of the clams are opened, about 10 to 15 minutes depending on how many you have in the pan.
  • Remove pan from heat, uncover and allow to cool to the touch before shucking.
  • Push the clams to the side so that there is broth visible to rinse the clams in after shucking. Remove clams from shell 1 at a time and pull off membrane that covers the neck and discard. Rinse shucked clams in broth and set aside. When all clams are shucked, drain the broth out of them by giving them a slight squeeze over the pan of broth. Chop roughly and set aside.
  • In a deep-fryer or on the stove top in a deep skillet, preheat oil to 375 degrees F.
  • In a large bowl, combine flour, baking powder and salt. Fold in eggs, evaporated milk and clam broth until thoroughly mixed. Stir in clams and mix well.
  • Dip a spoon into the heated oil, then take a 2 tablespoon sized scoop of the fritter mixture and carefully drop into oil. Turn the cake over when the first side is browned. Fritters should be cooked through and browned in 4 to 5 minutes. Remove with a skimmer and drain on brown paper bag. Reseason with additional salt, if desired.
  • Serve with tartar sauce and lemon wedges.

6 dozen fresh clams (littlenecks or middlenecks, your choice)
3 tablespoons grapeseed oil
4 cloves garlic, chopped
1 large onion, chopped
1 cup white wine
2 cups clam juice or water
Chopped parsley leaves
Salt and pepper
1/2 cup melted butter (1 stick)

Steps:

  • Wash the clams thoroughly and remove any blemishes. They should have no odor. Heat oil in a large saucepan (with a cover) over medium heat and cook garlic and onion until translucent. Add the wine and let cook for a couple of minutes to combine the flavors. Add the clams and clam juice (or water) and cover the pan for about 10 minutes until the clams open. Discard any clams that do not open and remove clams to serving bowls. Season the juices in the pan with salt and pepper to make a sauce. Pour the sauce and melted butter over the clams.

2 cups sourdough breadcrumbs, made from stale sourdough loaf, unseasoned (about 1/2 loaf)
1/2 jalapeno
3 garlic cloves, whole
1 shallot, diced
1 1/2 tablespoons dried garlic

1 tablespoon oregano
1 teaspoon chili powder

1 cup cornbread mix (Marie Callendars)

2 cups panko breadcrumbs

Steps:

  • Put sourdough and all spices, jalapeno, garlic cloves and shallot into food processor with chopping blade and run until break is broken down into crumbs.
  • Remove to mixing bowl and add cornbread mix and mix inches Add clam juice, eggs and 1/2 cup milk. Mix until forms batter. Fold in clams.
  • Mix in panko crumbs to thicken the batter to a dough like consistency. If needed, add additional milk from remaining 1/2 cup.
  • Heat oil in a deep sided skillet to 375.

5 pounds steamer clams
1/2 cup cornmeal
2 bottles beer
Chopped fresh parsley
Lemon wedges
Unsalted butter, melted

Steps:

  • Place steamers in a large bowl. Add enough water to cover. Add cornmeal, and stir to thoroughly combined. Let stand for at least 3 hours and up to 6 hours to allow the clams to purge their sand.
  • Remove clams from water, and rinse thoroughly. Refrigerate until ready to use.
  • In a large saucepan, combine beer and 2 cups water. Bring to a boil over medium-high heat. Add clams, and cook, covered, until the clams have opened, 3 to 4 minutes. Remove clams with a slotted spoon, discarding any clams that have not opened or ones with broken shells, to a large bowl. Sprinkle with parsley.
  • Strain cooking liquid through a cheesecloth-lined sieve. Serve clams immediately with lemon wedges, hot broth, and melted butter.
