Summer squash is a Southern tradition- but we always steam ours, instead of cooking in oil. Use small, tender squash, and enjoy!

Steps:
- Combine sliced squash & chopped onion in a wire steamer basket, place over gently boiling water. Cover, & let steam.
- 10-12 minutes, until squash is fork-tender. Remove squash and onion to a large serving dish.
- Immediately stir in margarine, pepper, and sugar. Serve hot.

Steps:
- Slice the onions.
- Place a skillet over Medium heat on your stove top.
- Add the butter.
- Add the bacon grease.
- Add the onions. Stir and cook until slightly translucent, about 5 minutes.
- Wash and slice the yellow squash about ¼ inch thick.
- Add the squash to the skillet.
- Add the black pepper.
- Add the salt.
- Add the sugar.
- Stir gently to combine the ingredients.
- Cover the skillet. Reduce heat to Medium Low.
- Cook until squash are tender. About 10-15 minutes.
- Remove from heat. Serve warm.
- Enjoy!

Steps:
- Heat olive oil in a medium size sauté pan. Add onion and cook on medium until soft.
- Add squash, water, salt and pepper. Stir gently. Continue cooking until squash is tender.
- Gently add butter and toss to coat squash and onions. Taste and adjust seasonings. This can be served with a sprinkle of parmesan cheese or fresh herbs.

- Wash and quarter the squash. Steam in a skillet or saucepan over water until al dente. (Time depends on the size of your squash -- usually about 4-5 minutes.).
- Heat the butter in a saucepan over medium-high heat. Saute the onions until translucent. Add the steamed squash and season with salt and pepper to taste.

- Place skillet over medium heat. Add butter and melt.
- Add onion and stir once to coat with butter. Saute for ten minutes, stirring halfway. Do not stir continually.
- Add squash and garlic, if using, and stir to coat with butter. Continue sauteing until onions are transparent and begin to be golden around the edges. Gently flip and stir every 5-10 minutes, taking care not to mash the squash as it becomes tender. If the vegetables start to stick to the pan, deglaze by adding a splash of water and scraping the bottom of the pan. The delicious fond morsels that come up from scraping will add to the flavor of the squash. Add salt and pepper to taste. Stir gently.

- Rinse the yellow squash thoroughly, using a vegetable brush to remove dirt and grit. Cut off both ends of the squash. Don't remove the peel because it contains most of the flavor and nutrients.
