STEAMED POTATOES
My DH has to have this whenever I make his German Hamburger Patties. It is a recipe that his Mother and Oma always made. It is on the bland side but he likes to eat it with some ketchup.

STEAMED SWEET POTATOES
Sweet potatoes are a nutritional powerhouse, chock full of vitamins A and C, fiber and potassium to name just a few. Steaming helps preserve more of these nutrients and doesn't require any added fat or other ingredients. Plus, it's much faster than baking. Besides serving them with toppings, steamed sweet potatoes are a great staple to have on hand for adding to salads and soups or enjoying as a quick and simple side dish.

Steps:
- Place a steamer basket or colander in a large pot. Add water until it reaches 1 inch below the bottom of the basket. Put the sweet potatoes in the steamer basket and bring the water to a boil. Once the water is boiling, cover the pot, reduce the heat to medium and allow the potatoes to steam until you can insert a paring knife without resistance, about 30 minutes. Using tongs, remove the potatoes from the steamer basket and let rest for 5 minutes. Split potatoes in half lengthwise, and serve as is or with preferred toppings if using.

Steps:
- Set up a steamer. Fill with 1-inch of water and place over medium-high heat.
- For even cooking, make sure to buy potatoes that are all relatively the same size. Wash the potatoes and place them into the steaming basket. Sprinkle with a pinch of sea salt.
- Once the water is simmering, place the basket over the pot and cover it with a lid. Steam for about 20 minutes until tender and cooked through.
- While the potatoes are steaming, mince the garlic. Heat the olive oil and garlic in a small saucepan over low heat until fragrant. Set aside.
- Finely dice the green onions and chop the parsley.
- Once the potatoes are cooked through, remove them from the steaming basket and place them into a large bowl. Add the olive oil/garlic mixture, along with the green onions and parsley.
- Season with salt and pepper to taste and toss to coat. Transfer to a serving bowl and serve. Enjoy!
