EASY STEAMED PARSLEY NEW POTATOES



Easy Steamed Parsley New Potatoes image

This is a simple potato side dish that is dairy free and gluten free. But it's delicious!

Number Of Ingredients 4

1 1/2 pounds very small new potatoes
1 Tablespoon good extra-virgin olive oil (you can also use butter for a richer dish.)
1 Tablespoon chopped parsley
3/4 teaspoon sea salt

Steps:

  • Clean the potatoes. If you were able to find the small ones, you won't have to cut them. Otherwise, cut the potatoes into fourths or halves, depending on their size.
  • Place your steamer basket in a medium saucepan. Add water until just below the bottom of the steamer basket. You don't want the water touching the potatoes.
  • Put the potatoes onto the steamer basket, cover the pan and place over high heat on your stovetop.
  • When the water is boiling, turn down to medium-low heat and simmer for 10 to 20 minutes, depending on the size of the potatoes. They are done when they can be pierced easily with a fork.
  • Carefully uncover the pot and spoon the hot potatoes into your serving dish. Immediately add the oil and toss until all the potatoes are coated.
  • Then sprinkle with the salt and parsley while tossing to distribute evenly.
  • Taste and add salt or parsley if you feel more is necessary. And if you want to add pepper to your liking, now is the time.
  • Serve hot!

Buttered New Potatoes with Parsley, Mint and Chives image

Made with the first young Jersey Royal potatoes, or some well-flavoured mainland variety such as Pentland Javelin, these are so good you could eat a plateful all by themselves!

2 lb (900 g) Jersey Royal or mainland new potatoes
1 level tablespoon fresh chopped parsley
2 level tablespoons fresh chopped mint, plus a whole sprig
1 level tablespoon fresh snipped chives
1½ oz (40 g) butter
sea salt and freshly milled black pepper

Steps:

  • Wash, but don't scrape the potatoes as there are a lot of nutrients as well as flavour in the skins. Place the larger ones over the base of the saucepan and pop the smaller ones on top. Pour in enough boiling water to almost cover, add some salt and the sprig of mint. Cover with a tight-fitting lid, and simmer gently for about 20 minutes. Test them with a skewer, and remember they must be tender but still firm: overcooking really does spoil them. Alternatively, the potatoes can be steamed, sprinkling them with salt and tucking the mint in among them. Meanwhile, mix the butter and herbs thoroughly together with some pepper. Then drain the cooked potatoes, add the herb butter, put the lid back on and swirl the pan around to get each one thoroughly coated. Remove the lid and just savour the delicious aroma for a couple of seconds before you dish them out!

4 tablespoons (1/2 stick) unsalted butter
2 1/2 pounds small white or Yukon gold potatoes, scrubbed but not peeled
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons chopped mixed fresh green herbs, such as parsley, chives, and dill

Steps:

  • Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes, salt, and pepper and toss well. Cover the pot tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning. Turn off the heat and allow the potatoes to steam for another 5 minutes. Don't overcook! Toss with the herbs, and serve hot.

  • Bring the potatoes to the boil in enough lightly salted water to cover.
  • Turn the heat to a very low simmer and cook until fork tender. This could take 30 minutes.
