5 pounds well-marbled sirloin flap meat
6 1/2 ounces 85/15 olive oil/salad oil blend
4 ounces Tuckaway's Steak Seasoning, recipe follows
1 1/4 ounces apple cider vinegar or red wine vinegar
Potato salad, for serving
Coleslaw, for serving
4 tablespoons orange juice
1/2 ounce minced garlic
1/2 ounce minced onion
1/2 ounce ground mustard
1/2 ounce mustard seed
1/4 ounce granulated garlic
1/4 ounce granulated onion
1/2 ounce salt
1/2 ounce finely ground black pepper
1/2 ounce coarsely ground black pepper

Steps:

  • Using a sharp knife, peel all of the silver skin and 90 percent of the surface fat from the meat. Cut the meat into 3-by-3-inch cubes and place them in a non-reactive container.
  • Mix the oil, Tuckaway Steak Seasoning and vinegar in a bowl; pour over the meat. Mix with your hands to be sure all surfaces are covered with marinade. Marinate the meat in the refrigerator for 3 to 5 days. (More time equals more flavor!)
  • Grill to your liking and serve with some homemade potato salad, coleslaw, or any delicious side you can think of.
  • In a bowl, mix together the orange juice, minced garlic, minced onion, ground mustard, mustard seed, granulated garlic, granulated onion, salt and pepper.

STOUT-MARINATED STEAK TIPS



Stout-Marinated Steak Tips image

5 pounds beef flap meat
4 ounces soy sauce
4 ounces Worcestershire sauce
1 cup molasses
1 pound brown sugar
1 tablespoon red pepper flakes
1 teaspoon freshly ground black pepper
5 or 6 cloves garlic, smashed
2 cans stout (recommended: Guinness)

Steps:

  • Trim the silver skin and icky fatty parts from your flap meat, then cut into 3- or 4-ounce chunks, or whatever size you like. Place in a container with a tight-fitting lid; don't forget to leave extra space for the marinade.
  • In a large bowl, whisk together the soy sauce, Worcestershire sauce, molasses, brown sugar, red pepper flakes, black pepper and garlic. Add the stout; be careful, it will foam a bit. There is really no need to add salt--the soy and Worcestershire are plenty salty.
  • Pour the marinade over the beef tips and stir gently to evenly coat. (If you don't use all the marinade, it will keep, refrigerated, in an airtight container for up to 2 weeks.)
  • Refrigerate the meat for 8 hours or overnight; it will keep for up to 4 or 5 days. Cook as desired.

STEAK "TIPS" MB STYLE

When I was a kid, it was a treat to go to a local steak-house restaurant like Bonanza or Hoss's in Pennsylvania. I always ordered Beef Tips with extra onions, mushrooms, and peppers. Now that I have grown, we do not eat steak often but I have made my version of "Tips" on occasion.

1 lb sirloin beef, thin cut and lean
1 tablespoon black peppercorns, whole
2 tablespoons salt, Coarse
2 cups mushrooms, sliced
1 large green bell pepper, sliced
1 large white onion, thinly sliced
2 tablespoons butter
1 tablespoon flour
2 cups beef stock
1/2 cup red wine, I prefer a spicy Zinfandel
1 garlic clove, minced
4 tablespoons parsley, fresh chopped

Steps:

  • Grind Peppercorns and Coarse Salt in your spice grinder (Coffee Bean Grinder). Rub into the Sirloin Beef and cover tightly in plastic wrap. Allow to sit in the Refrigerator for 1-2 hours.
  • Bring a large saute pan to medium-high heat with 2 TBS Olive OIl. Add Bell Pepper and Onion. Cook until translucent. Add Mushrooms. Cook for another 3 minutes, until softened. Remove vegetables from pan and set aside.
  • Add 1 TBS additional Olive oil to Pan and bring to high heat. Add sirloin steak. Sear for 1-2 minutes on each side until crusty. Place the pan in a 450 degree oven to finish cooking through desired doneness. Stop at about 5-10 degrees shy of the desired temperature.
  • Pull steak off of pan and onto a cutting board. Cover with foil and allow to rest.
  • Place the saute pan back on the stove at medium-high heat. Add Butter. Once melted add flour. Whisk vigorously until mixture is golden brown. DO NOT BURN!
  • Add garlic, stock, and wine. Whisk vigorously until mixture is boiling. Reduce heat to medium low. Continue whisking as sauce thickens. Season with salt and pepper.
  • Slice the steak into thin strips.
  • Serve each of four plates by doing the following:.
  • *Ladle some sauce into the middle.
  • *Add 1/4 vegetable mixture, arrange to appear pretty.
  • *Arrange 1/4 steak tips on top of the vegetables.
  • *Drizzle additional sauce on top.
  • *Sprinkle some fresh chopped parsley on top.
  • *Enjoy!

4 ounces bottled BBQ sauce
2 ounces Italian dressing
1 teaspoon teriyaki sauce
1 teaspoon olive oil
Salt and pepper

Steps:

  • In a bowl large enough to hold the meat, combine the cola, BBQ sauce, Italian dressing, teriyaki sauce, olive oil, and salt and pepper. Add the meat, cover, and marinate overnight in the refrigerator.
  • Grill to desired doneness.

Found this on allrecipes.com and it's definately a perfect marinade for steak tips. Nice change to the soy sauce based marinades. Really can be used on any type of beef. Prep time includes marinading.

1/2 cup Worcestershire sauce
1 cup Italian salad dressing
2 teaspoons garlic pepper seasoning
1 cup barbecue sauce (plain is best)
2 lbs sirloin tip steaks, sliced into 1/2 " strips

Steps:

  • In a medium bowl, mix the Worcestershire sauce, Italian-style salad dressing, garlic pepper seasoning, and barbeque sauce.
  • Place the meat in the marinade, and turn to coat.
  • Cover, and refrigerate for at least 1 hour.
  • Preheat grill for high heat.
  • Brush grill lightly with oil to prevent sticking.
  • Place steak tips on the grill, and discard marinade.
  • Grill steaks 10 minutes on each side, or to desired doneness.

As weird as the marinade sounds it is soooooo good. You don't taste any one ingredient over the over. This recipe is a copy cat of a restaurant in Massachusetts that serves these. Preparation times does not include marinating overnight.

  • Make sure to take meat out off the refrigerator at least an hour before grilling to bring them to room temperature.
  • Grill as desired.
