TASTY TURKEY MEATLOAF WITH SAUCE
After looking at many different turkey meatloaf recipes and not liking any one in particular, I decided to create my own! Add Dijon mustard to sauce for an added flavor.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix ground turkey, oats, 1/2 chopped onion, pear applesauce, 3 tablespoons chili powder, egg, garlic, Italian seasoning, salt, and black pepper together in a bowl; press into an 8-inch square baking dish.
- Heat olive oil in a small saucepan over medium heat; cook and stir 2 tablespoons onion until softened and lightly browned, 5 to 10 minutes. Stir brown sugar, barbeque sauce, and 1 teaspoon chili powder into onion; cook over low heat until sauce is warm, about 5 minutes.
- Bake meatloaf in the preheated oven, occasionally brushing sauce over the top, until cooked through, about 50 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
- Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
- In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
- Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
- Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.

- Preheat oven to 350°F Coat 4 x 8-inch loaf pan with nonstick cooking spray.
- Heat oil in a large skillet over medium heat. Add leek, onion, and garlic. Sauté until just golden brown. Add flour, stir and cook for 2 minutes.
- Add wine, broth, tomato sauce, basil, oregano, and salt to skillet. Bring to boil, reduce heat to low and simmer uncovered for 15 minutes. Set sauce aside.
- In large bowl, combine ground turkey, egg, egg whites, zucchini, and flour. Mix well. Add 1/4 cup sauce, and stir in gently.
- Form meatloaf in prepared loaf pan. Cover with foil.
- Bake for 40 to 50 minutes. (Remove foil last 10 minutes if desired, to brown top of loaf). Remove from oven and let rest 10 minutes.
- Re-heat remaining sauce and serve with meatloaf.

Steps:
- Melt butter in a skillet.
- Cook onion and garlic in melted butter for 5 minutes, stirring occasionally.
- Place mixture in a large bowl to cool for 5 minutes.
- Combine turkey, bread crumbs, egg, 1/4 cup of the katchup, Worcestershire sauce, salt, and pepper with onion mixture.
- Press meatloaf into an 8x4-inch loaf pan.
- Spread remaining catsup on top.
- Bake in a 350 degree oven for 50-55 minutes.
- (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

- Preheat the oven to 425 degrees F. Line a baking sheet with foil.
- Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
- Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined. Form the mixture into a 10-by-5-inch loaf on the foil-lined baking sheet. Coat the top and sides with the ketchup.
- Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.

- In a mixing bowl combine beef, eggs, bread crumbs, cheese, steak, Jamaican Blend, Salt, Pepper, worcestershire sauce and ketchup and mix together thoroughly.
- Refrigerate 1 hour.
- Saute mushrooms, onions, and garlic together with butter about 10 minutes over medium high heat.
- Add saute pan contents to previously prepared ingredients and mix together thoroughly.
- Mold meatloaf into a bread pan, smoothing top.
- Cover with a light coating of A1 sauce.
- Bake at 375 degrees 30-45 minutes until done.
TURKEY AND ITALIAN SAUSAGE MEATLOAF
I came up with this recipe myself. I love meatloaf but I can't eat ground beef very well so I tried ground turkey and Italian sausage together and really liked it. This is not a spicy meatloaf, but it is tasty. You can add more spices if you want or use hot Italian sausage. Making the meat mixture an hour or so ahead of time allows the flavors to blend and makes the meatloaf taste better. It also allows the wet ingredients to be absorbed by the meat and oatmeal. This will make really good sandwiches the next day. I didn't put a sauce on my meatloaf. Therefore, there is no topping suggestion included. This is real comfort food. - With one hand, mix the ground turkey, Italian sausage and steak seasoning together in a bowl.
- Add the rest of the ingredients and mix well with your hands.
- Smooth mixture out in same bowl and cover with plastic wrap.

- Remove meat mixture from the refrigerator.

- Preheat oven to 450 degrees and brush a 12-muffin tin with olive oil.
- Put the ground turkey in a large bowl.
- Put onion, celery and green pepper in the food processor. Pulse until finely chopped and add to the bowl of meat.

SAVORY SPICY MEATLOAF AND SAUCE
I modified this recipe from my mom's original. This recipe uses steak sauces, so it's more flavorful than regular versions, I think. And the sauce uses the same ingredients as the meatloaf recipe, so you just need to get everything out once! Feel free to adjust the spices to your tastes, and the measurements are what I guesstimate them to be. I just eyeball it, and you can too. I'd say this yields about 5-6 slices, or 2-3 servings for 2 people. This is the first recipe I've posted, so sorry if it's a little disorganized. Enjoy!
