STEAK-AND-EGG FRIED RICE BOWL

2 tablespoons low-sodium soy sauce
2 teaspoons sugar
4 scallions, thinly sliced (white and green parts separated)
2 cloves garlic, finely grated
1 teaspoon toasted sesame oil
12 ounces skirt steak, thinly sliced
Kosher salt and freshly ground pepper
4 teaspoons vegetable oil
3 cups frozen brown rice, thawed
4 cups baby spinach
1 cup bean sprouts
4 large eggs
Sriracha, for topping

Steps:

  • Combine the soy sauce, sugar, scallion whites, garlic and sesame oil in a large bowl; add the steak and let marinate 10 minutes. Preheat a large nonstick skillet over high heat. Add the steak and marinade and season lightly with salt and pepper. Cook, undisturbed, until the steak starts browning around the edges, about 3 minutes. Stir and continue cooking until the steak is just cooked through, about 2 more minutes. Remove to a bowl.
  • Heat 2 teaspoons vegetable oil in the skillet. Add the rice, season with 1/2 teaspoon salt and cook, stirring occasionally, until slightly crisp, about 3 minutes. Stir in the spinach until just wilted. Add the steak and any juices from the bowl; heat through. Remove from the heat and stir in the bean sprouts; season with salt and pepper. Divide among bowls.
  • Wipe out the skillet, return to high heat and add the remaining 2 teaspoons vegetable oil. Crack in the eggs, season with salt and cook until the whites are set but the yolks are still runny, about 3 minutes. Top each rice bowl with an egg and the scallion greens. Drizzle with Sriracha.

1 beef top sirloin steak (3/4 pound), cut into thin strips

Steps:

  • In a large nonstick skillet coated with cooking spray, cook and stir eggs over medium heat until no liquid egg remains, breaking up eggs into small pieces. Remove from pan; wipe skillet clean if necessary., In same pan, heat oil over medium-high heat. Add beef; stir-fry, 1-2 minutes or until no longer pink. 4 oz sliced white mushrooms
1 medium zucchini (chopped into small pieces)
2 garlic cloves (pressed)
2 eggs
3 cups leftover cooked rice
½ lb leftover steak (thinly sliced)
1 cup 4oz frozen peas
2 tablespoons soy sauce
2-3 teaspoons sesame oil

Steps:

  • In a large non-stick skillet, heat olive oil.
  • Once oil is shimmering, add mushrooms and zucchini. Cook for 3-5 minutes, or until nicely browned and softened.
  • Stir in minced garlic.
  • Push the vegetables to the side, making an empty center in the pan.
  • Add eggs and scramble until mostly cooked. Then mix with the rest of the vegetables.
  • Add rice and stir everything and cook for 2-3 minutes.
  • Add sliced steak and peas.
  • Stir in the soy sauce and sesame oil.
  • Mix and cook until everything is heated though. Serve immediately.

10 ounces flank steak ((285g, cut into bite-sized pieces))
¼ teaspoon salt
1 tablespoon water
1/8 teaspoon baking soda ((optional, but good for tougher cuts of meat))
1 teaspoon dark soy sauce ((mushroom flavored preferred))
1 teaspoon cornstarch
1 teaspoon oil
1 tablespoon hot water
¼ teaspoon sugar
½ teaspoon sesame oil
1½ tablespoons soy sauce
2 teaspoons dark soy sauce
½ teaspoon MSG ((totally optional!))
Fresh ground white pepper
5 cups cooked rice
3 tablespoons canola oil ((divided))
2 eggs ((beaten))
1 medium onion ((diced))
3/4 cup peas
1 scallion ((chopped))
1 tablespoon Shaoxing wine

Steps:

  • First, combine the beef, salt, water, baking soda, dark soy sauce, cornstarch, and oil in a bowl and stir until well-incorporated. Set aside. (We added a bit of water to marinate the beef, which generally is a no-no for beef...but for this fried rice dish, it keeps the small morsels of beef juicy and tender!)
  • Next, combine the hot water, sugar, sesame oil, soy sauces, MSG (if using), and white pepper in a small bowl. This is the sauce that you'll be adding to the rice, and it's much easier to have it combined and ready to go before you start cooking.
  • Take your cooked rice and fluff it with a fork or with your hands (you can rinse your hands in cold water if the rice starts sticking to them). If you are using cold leftover rice, try to break up the clumps as best as possible.
  • Heat your wok over medium high heat, add 1 tablespoon of oil and the eggs, and scramble them until just cooked. You can start scooping them up when they look like they are almost done. Transfer them back into the same bowl you mixed them in and set aside. They will continue to cook in the bowl and you will cook them again in the rice.
  • Heat the wok until just smoking and spread 1 tablespoon oil around your wok. Add the marinated beef in one layer, and let sear for 20 seconds. Next, stir fry the beef until about 70% done. Transfer the beef back to the marinade bowl, and set aside.
  • With the wok over medium high heat, add the last tablespoon of oil, and sauté the onions until translucent, about 2 minutes. Add the rice, using a metal spatula to flatten out and break up any large clumps. If the rice is cold from the refrigerator, continue stir-frying until the rice is warmed up, about 5 minutes. Also, sprinkling a little water on large clumps of rice will help break them up more easily.
  • Once the rice is warmed through, add the sauce mixture. Stir the rice with a scooping motion until the grains are evenly coated with sauce. The rice should be completely hot by now. Next, add the beef and any juices from the bowl you set aside earlier, and stir fry for another minute.
  • Add the eggs, breaking up any large clumps, peas, and the scallions. Continue stir-frying for another 30 seconds. Push the rice into the middle of the wok to let the perimeter of the wok heat up. After about 20 seconds, pour 1 tablespoon of Shaoxing wine around the perimeter of the wok. Stir-fry for another 20 seconds. Adding the wine using this method gives the dish a little extra wok hei! At this point, taste the rice to see if it needs a little more salt, soy sauce, or white pepper and season accordingly.
  • Serve immediately, and, if you're like us, don't forget some homemade chili oil!

350g rump steak
250g mushrooms (we used chestnut), sliced
3 garlic cloves , thinly sliced
200g beansprouts
2 tbsp soy sauce
1 tbsp chilli sauce (we used sriracha), plus extra to serve
500g cooked rice (200g/7oz uncooked)
bunch spring onions , sliced
4 eggs

Steps:

  • Heat 1 tbsp of the oil in a frying pan over a high heat, season the steaks and cook for 2-3 mins each side. Remove from the pan and leave to rest.
  • Heat 1 tbsp oil in a separate frying pan, stir-fry the mushrooms until softened, then stir in the garlic, beansprouts, soy and chilli sauce. Cook for another 2 mins, then add the cooked rice and heat through. Stir in the spring onions and keep warm.
  • Meanwhile, heat the remaining oil in the pan that you fried the steak in. Add the eggs and fry until done to your liking. Slice the steaks and spoon the rice into bowls. Top each one with the sliced steak, an egg and a drizzle of chilli sauce.

4 tablespoons cooking oil
2 teaspoons garlic, minced
1 cup steak, cooked medium and diced
1 cup peas
1/2 cup green onion, chopped
3 cups cooked white rice, day old, dried out uncovered in the fridge
2 eggs, fried and chopped
3 -4 teaspoons soy sauce (to taste)
1 -2 teaspoon A.1. Original Sauce (to taste)
2 teaspoons sesame oil

Steps:

  • Heat 2 tablespoons of the oil in a wok or sauté pan. When the oil is hot, add in the diced steak and toss. Add in the garlic and peas and heat through. Add in most of the green onions and eggs and heat through. Remove the mixture and keep to the side.
  • Reheat the pan and coat the bottom of the wok with oil. When the oil is hot, add in the rice and allow it to sizzle and fry. Toss occasionally to heat through and lightly caramelize. Season with soy sauce and a little A1 sauce.
  • Add in the reserved steak mixture and toss to evenly distribute.
  • Add in the sesame oil and adjust seasoning with soy sauce and A1.
  • Sprinkle the remainder of the green onions over the top and serve.

1 leek (white and light green parts only), thinly sliced and well rinsed
3 cloves garlic, minced
1 1-inch piece ginger, peeled and minced
2 cups frozen grain-and-rice blend, thawed

Steps:

  • Heat 1 teaspoon vegetable oil in a large nonstick skillet over medium heat. Whisk the eggs with 1 tablespoon water and a pinch each of salt and pepper. Pour into the skillet and stir a few times with a rubber spatula to spread. Cook, undisturbed, until just set, about 2 minutes. Fold into thirds like an omelet and transfer to a plate.

4 ounces leftover steak, cut into ½-inch pieces or cubes
1 small shallot, peeled and minced
1 clove garlic, peeled and minced
1 stalk celery, diced into ¼x¼-inch pieces
1 scallion, green tops thinly sliced
1 large egg, beaten
1 tablespoon soy sauce, low sodium
½ teaspoon sesame oil
⅛ teaspoon sugar
⅛ teaspoon ground white pepper
1 tablespoon canola oil, divided
2 cups leftover or chilled cooked white rice, medium grain

Steps:

  • Prep the leftover steak, shallot, garlic, celery, scallion, and egg as described in the ingredients list, and have them ready in individual prep bowls or containers.
  • Place the low sodium soy sauce, sesame oil, sugar, and ground white pepper into a small bowl. Set this sauce mixture aside.
  • Heat a wide cast iron pan (12-inch) or a 14-inch wok over medium-high heat until it just starts to smoke, then add 1 teaspoon of canola oil. (If using a wok, add the oil to the perimeter of the wok.)
  • Add the beaten egg, and scramble for 30 seconds. Then, remove from the pan, and set aside.
  • Add 1 teaspoon of canola oil to the pan, followed by the minced shallot, and stir fry until they turn translucent, about 1 minute. Then, add the garlic and celery, and cook for an additional 30 seconds.
  • Add the last teaspoon of canola oil and the cold rice, using a spatula to break up any large clumps. Stir fry until the rice warms up and can be flattened with the spatula, about 3 minutes.
  • Once the rice is mixed well with the vegetables, add the leftover steak, and stir for 1 minute. Then, add the sauce mixture, and stir fry until the grains are evenly coated with the sauce.
  • Add the eggs back in, and break it up into smaller pieces with the spatula, then top everything with the sliced scallions. Stir fry for another 20 seconds.
  • Turn off the heat, and serve.

1 Tbsp ginger paste or minced ginger

6 cups cooked and cooled jasmine rice
1 onion (diced)
3 eggs
1 12 oz bag frozen diced peas and carrots (thawed)

1 Tbsp ginger paste or minced ginger
1 Tbsp sesame seeds
Optional: store bought yum yum sauce

Steps:

  • Cut the steak into inch size pieces and place them in a container or plastic bag. Add the soy sauce, garlic, and ginger. Toss until combined and marinate for an hour.
  • During the last 3 to 4 minutes of the rice cooking, add the oil and the steak to one side of the griddle. Stir and flip a few times throughout.
  • Heat the flat top griddle or hibachi grill to medium high heat for at least 5 minutes.
  • Add the sesame oil and spread with hibachi spatula, add the rice, onion, and eggs. Cook 2 minutes and mix together with hibachi spatulas.
  • Add the peas and carrots and cook 1 minute, mixing those together with the rice.
  • Add the soy sauce, butter, garlic, ginger, and sesame seeds. Mix together and cook for 7 to 8 minutes, flipping the rice over occasionally.
  • Serve the steak with the rice and add yum yum sauce if desired.
