This is the only chocolate cake recipe you'll ever need! It's SO moist and rich. Pair it with my Best Chocolate Frosting and it's a chocoholics dream!

1 ¾ cup 250g all-purpose flour
2/3 cup 56g cocoa powder (I prefer this one)
1 tsp baking powder
1 tsp baking soda
1 cup 200g granulated sugar
½ cup 110g packed light brown sugar
¾ tsp salt
2 large eggs
½ cup 120ml neutral oil
¾ cup 180ml sour cream
1 tsp 5ml pure vanilla extract
1 cup 240ml hot coffee

Steps:

  • Preheat oven to 350°F. Lightly grease and flour two 8-inch round cake pans and line the base with parchment paper.
  • Sift flour, cocoa, baking powder and baking soda into a large bowl. Add both sugars and salt and whisk to blend well, pressing out any lumps of brown sugar.
  • Combine eggs, oil, sour cream and vanilla in a medium bowl and whisk to blend well. Pour into the bowl with the dry ingredients and mix with an electric hand mixer on medium-low until blended. It will be thick and somewhat dry. Add the hot coffee gradually in two stages to minimize clumps forming and beat until evenly combined and the batter smooth.
  • Divide batter evenly between the prepared pans and bake for 30-33 minutes until cakes spring back when pressed gently and a skewer inserted into the center comes out clean. Transfer pans to a wire rack and let cool for 15 minutes before inverting onto the rack to cool completely.

Steps:

  • Preheat oven to 350°F Line two 9-inch round pans.
  • 1. Mix 1 1/3 cups water, 3/4 cup unsweetened cocoa powder and vanilla. set aside.
  • 2. Cream margarine and sugar until fluffy. Add eggs one at a time until creamy. Add the dry ingredients alternately with the cocoa mixture until well blended. Pour in prepared pans and bake for 30 minutes or until done. Let cool.
  • Filling: Combine all ingredients in a double boiler and cook until thick.
  • Frosting: In a heavy bottom saucepan mix together all ingredients for the frosting except butter. Cook until thick; stir in butter.
  • To assemble: Fill layers of cake with filling. Ice decoratively with frosting.

120g dark chocolate , 70% cocoa solids
5 eggs , separated
200g butter , softened, plus extra for greasing
220g caster sugar
90g plain flour , sifted, plus extra for dusting
284ml pot double cream
200g pot half-fat crème fraîche
2 limes or 1 lemon, grated zest only
150g dark chocolate
142ml pot double cream
25g grated chocolate , to serve
about chocolate shaved into curls, to serve

Steps:

  • Grease and bottom line a 24cm spring form cake tin. Heat oven to 160C/fan 140C/gas. Melt 120g chocolate in a bowl. Cool for 5 mins, then beat in egg yolks. In a bowl, beat the butter and 100g sugar until soft and creamy. Mix in the melted chocolate and yolks.
  • Whisk the egg whites to firm peaks then beat in remaining 120g sugar in three batches and continue whisking until stiff. Beat a third of the meringue into the chocolate mix. Then, gently fold in alternate spoonfuls of the flour and remaining meringue.
  • Spoon into the tin, level and bake 40-45 mins until the top forms a light crust. Test the centre with a metal skewer, it should come out clean. Remove, cool 10 mins, before turning out of the tin. When cooled, cut in half carefully as it is fragile, with a large serrated knife.
  • To make the filling: in a bowl beat the double cream until thickened, but not stiff. Then mix in the crème fraîche and the zest.
  • Spread one half of the cake with all the zesty cream and sandwich together with the other half. Place on a rack with a large plate beneath.
  • To make the ganache icing: break up the chocolate into a pan and add the double cream. Melt over the lowest heat and stir until smooth, then cool until the consistency of thick pouring cream. Pour over the cake.
  • Let excess icing run onto the plate and spoon it back over to fill any gaps. Spread the icing evenly on the top and around the sides using the back of a spoon or a palette knife. While the icing sets sprinkle the grated chocolate on top and around the sides.
  • Make the curls: You will need a large block of chocolate. Ensure the chocolate is at warm room temperature and placed on a worktop. Gordon used a sharp knife to make the curls, but it's easier to draw a swivel vegetable peeler down the side of a thick block of chocolate.
  • Place a large ring cutter (about 10cm) in the centre of the cake and fill with the chocolate curls. Carefully remove the ring and let the curls cascade gently out. Serve at room temperature. If chilled ahead the cake should be allowed to come to room temperature before serving.

Steps:

  • Mix water, 2 cubes butter and 4 T cocoa in a saucepan. Bring to a boil and remove from heat. Set aside.
  • Mix flour, sugar, eggs, sour milk, baking soda, and vanilla together.
  • Add ingredients from saucepan.
  • Mix well.
  • Pour into 9x13 pan.
  • Bake at 350 degrees for 30 minutes.
  • Let cool.
  • In a saucepan, mix 1/2 cup butter, 3 Tablespoons milk, and 2 Tablespoons cocoa. Bring to boil. Remove from heat.
  • Add powdered sugar to desired thickness.(It will still be a little liquidy but will set more as it cools).

Since my wedding, I continue to make this delicious chocolate cake. I like to frost it with a simple buttercream and use cherries for a garnish, or make cupcakes for my husband's lunch. If you are tired of making dry textured homemade cakes, give this recipe a try!

3 cups cake flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 1/2 cups unsweetened cocoa
2 1/2 cups strong brewed coffee
1/2 cup unsalted butter (room temperature)
2 teaspoons unsalted butter (room temperature)
1/3 cup vegetable oil
1 1/2 cups superfine sugar (granulated works fine)
1 1/2 cups dark brown sugar
5 large eggs
1 teaspoon pure vanilla extract

Steps:

  • Set oven to 350 degrees.
  • Cut parchment paper circles to fit three 9 inch cake pans, or 2 larger cake pans (depending on the size and style of cake you want to create).
  • Alternatively, this recipe will make about 3 1/2 dozen cupcakes, using muffins tins lined with cupcake papers.
  • Sift the flour, baking powder, baking soda, and salt.
  • Set aside.
  • Whisk the cocoa and coffee together until smooth (no lumps).
  • Set aside.
  • In a large mixer bowl, cream butter (about 1 minute), add oil, beat for one minute.
  • Add sugars, beat for 10 minutes.
  • Add eggs, beat 5 minutes.
  • Add vanilla, beat until blended.
  • Alternately add coffee and cocoa mixture and dry ingredients into butter mixture, mixing after each addition, making sure to scrape the sides of the bowl often.
  • Pour into prepared pans.
  • Bake for about 25 minutes, or until an inserted toothpick comes out clean.
  • If making cupcakes, bake for about 20 minutes.
  • Spread frosting over layers, and frost entire cake.
  • Another delicious idea is to melt jam until it's syrup consistency (if using raspberry jam, make sure you strain it!) and brush the tops of the layers with the melted jam before frosting them.

Steps:

  • Mix together dry ingredients.
  • Combine wet ingredients in a separate bowl.
  • Combine dry and wet ingredients together (I gently whisk them together with a fork).
  • Transfer mixture to a greased cake pan or cupcake tins. (Mixture usually fits one 13" x 9" pan or two 8" or 9" round pans.).
  • Bake at 350 degrees F for approximately 30 minutes. (Bake for approximately 15 minutes if making cupcakes).
  • Set aside to cool before frosting.
  • To begin the Chocolate Cocoa Frosting beat powdered sugar and butter until blended. (If using an electric mixer, use low speed).
  • Stir in vanilla extract and cocoa powder.
  • Gradually beat in just enough milk to make frosting smooth and spreadable. If frosting becomes too thin, add more powdered sugar.

MY AMAZINGLY SOFT & MOIST CHOCOLATE SPONGE CAKE



My Amazingly Soft & Moist Chocolate Sponge Cake image

I have another recipe for chocolate cake on Zaar but this one has just become by new favourite. Unless I'm baking a really special chocolate cake for an event, I tend not to make cakes that call for chocolate as it is never in the cupboard when I come to bake! This chocolate cake is the result of years of playing around with recipes & I personally think it is fab. You get the same incredibly moist & soft sponge texture you find in a store bought cake but all the great taste of a homemade cake. In fact, I think that this cake is so rich it doesn't even need to be iced / frosted - of course, if you want a really indudgant treat, then go ahead & whack some on! I find that this cake freezes well for a couple of months & keeps well in an airtight container for around a week. I stated 1/3 cup cocoa in the recipe but if the cake if for adult chocaholics then you can always add more - I find that kids sometime find too much cocoa a bit bitter.

8 ounces self raising flour
8 ounces margarine
6 ounces granulated sugar
3 large free range eggs
2 teaspoons baking powder
1/3 cup cocoa powder (unsweetened, best quality available)
1/4 cup water
confectioners' sugar, for dusting

Steps:

  • Preheat your oven to 180c & grease a 10" round springform cake tin.
  • Warm the margarine up in the microwave for about 20-30 seconds, it needs to be extremely soft but not liquid.
  • In a fairly large bowl, beat the sugar & the warmed margarine together. Unlike a regular sponge, you don't need to do this for more than a couple of minutes - creaming to get it fluffy is not required here!
  • Next beat in the eggs, once they are fully incorporated add the baking powder & cocoa powder. Carefully mix them in then quickly beat the mix for a minute.
  • Mix in the flour, being sure to get it well mixed & break up any lumps that may be lurking.
  • Finally, mix in the water little by little.
  • Pour the cake batter into the tin, level off & place in the centre of the oven to bake for 40 minutes.
  • As soon as 40 minutes have passed, turn the oven off & leave the cake in there for 10-15 minutes before removing.
  • Leave the cake in it's tin for 10 mins then pop out & leave to cool on the serving plate.
  • Once the cake has cooled, give it a generous dusting of confectioners sugar.

200g dark chocolate (about 60% cocoa solids), chopped
200g butter, cubed
1 tbsp instant coffee granules
85g self-raising flour
85g plain flour
¼ tsp bicarbonate of soda
200g light muscovado sugar
200g golden caster sugar
25g cocoa powder
3 medium eggs
75ml buttermilk
50g grated chocolate or 100g curls, to decorate
200g dark chocolate (about 60% cocoa solids), chopped
300ml double cream
2 tbsp golden caster sugar

Steps:

  • Heat the oven to 160C/fan 140C/gas 3. Butter and line a 20cm round cake tin (7.5cm deep).
  • Put 200g chopped dark chocolate in a medium pan with 200g butter.
  • Mix 1 tbsp instant coffee granules into 125ml cold water and pour into the pan.
  • Warm through over a low heat just until everything is melted - don't overheat. Or melt in the microwave for about 5 minutes, stirring halfway through.
  • Mix 85g self-raising flour, 85g plain flour, ¼ tsp bicarbonate of soda, 200g light muscovado sugar, 200g golden caster sugar and 25g cocoa powder, and squash out any lumps.
  • Beat 3 medium eggs with 75ml buttermilk.
  • Pour the melted chocolate mixture and the egg mixture into the flour mixture and stir everything to a smooth, quite runny consistency.
  • Pour this into the tin and bake for 1hr 25 - 1hr 30 mins. If you push a skewer into the centre it should come out clean and the top should feel firm (don't worry if it cracks a bit).
  • Leave to cool in the tin (don't worry if it dips slightly), then turn out onto a wire rack to cool completely. Cut the cold cake horizontally into three.
  • To make the ganache, put 200g chopped dark chocolate in a bowl. Pour 300ml double cream into a pan, add 2 tbsp golden caster sugar and heat until it is about to boil.
  • Take off the heat and pour it over the chocolate. Stir until the chocolate has melted and the mixture is smooth. Cool until it is a little thicker but still pourable.
  • Sandwich the layers together with just a little of the ganache. Pour the rest over the cake letting it fall down the sides and smooth over any gaps with a palette knife.
  • Decorate with 50g grated chocolate or 100g chocolate curls. The cake keeps moist and gooey for 3-4 days.
