SQUIRREL POT PIE

Steps:
- Combine the onion, celery, garlic, broth, pepper and squirrel in a large pot and bring to a boil; simmer until meat is very tender and easily removed from bones. Debone the meat and set aside; researve 1 cup cooking liquid.
- Fit the bottom crust into a pie pan.
- Combine the meat, vegetables reserved broth and cornstarch in a large bowl and mix well; spoon the mixture into the pie shell. Top with the second crust, press the edges to seal and cut vents in the top for steam to escape. Bake at 350 degrees until crust is browned, about 1 hour.

BUTTERMILK SQUIRREL PIE

Steps:
- Preheat oven to 375 degrees.
- Wash squirrels well inside and out with warm water.
- Cut into serving pieces.
- Put squirrel into a kettle, add water to cover 2 inches and add salt, heat to boiling.
- Reduce heat, cover tightly and simmer until very tender, 1-2 hours+ depending on age.
- The meat should be almost ready to fall off the bones.
- Remove squirrel and let drain.
- When cooled cut meat from bones.
- Mix together vegetables, soup and squirrel meat in a casserole dish.
- Mix buttermilk, margine and flour together and pour over top.
- Bake at 375 degrees for 40-45 minutes.

LLOYD'S SQUIRREL OR CHICKEN POT PIE
DH started from fluffernutter's Recipe #137552 #137552 (which came from the South Carolina Outdoor Press Association), but made so many changes that I am posting DH's version. I'm not a fan of pot pie, nor squirrel, so I told him he had to take total responsibility for any squirrel dish he fancied. To my surprise, his creation was delicious and had no strange taste at all; the meat tasted similar to dark meat chicken. He had 4 squirrels, which yielded a little over 1 pound of meat. He ended up with 2 pot pies because he wanted a lot of potato, and used full 15 ounce cans of lima beans and green peas. Our pot pies were packed with vegetables with squirrel accents. I appreciated that no cream soups nor heavy cream were used.

- Fit the bottom crusts into 2 pie pans. (The box of Pillsbury refrigerated pie crusts said to lightly brown the bottom crust before filling with pot pie mixture.).
- Combine the meat, vegetables, reserved broth and cornstarch in a large bowl and mix well; divide the mixture between the 2 pie shells. Top with the second crust, press the edges to seal and cut vents in the top for steam to escape. Bake at 350 degrees until crust is browned, about 1 hour.

PINK SQUIRREL PIE AND ALMOND CRUST
Forgot I had this, it's been in the box so long. Hand-copied; origin unknown. I've had this one since before I was legally old enough to purchase the liqueurs involved.

Steps:
- FOR THE CRUST.
- Combine crumbs and almonds. Add melted butter and almond extract. Mix well. Press into a 9" springform pan, working crumbs up the sides slowly. Bake unflilled crust at 350° for 10 minutes. Allow to cool.
- FOR THE FILLING.
- Soften gelatine in cold water according to package directions. Heat to dissolve, then allow to cool.
- In a blender, process the cheese, sugar and softened gelatine. Blend thoroughly. Add the two liqueurs. Blend slightly.
- Pour into bowl and chill in refrigerator until partially set. Beat with wire whisk until smooth. Fold in whipped cream. Pour into prepared almond crust. Sprinkle with chopped toasted almonds. Chill until firm.

- Heat an oven to 400°F. Cut the squirrel meat into 1/2-inch pieces. Put them in a medium bowl, sprinkle with the flour, and toss to coat evenly and thoroughly.
- In a large Dutch oven or other heavy-bottomed pot, heat the oil over medium-high heat until it's almost smoking (you want to use a pot with sides to keep splattering to a minimum). Working in batches, brown the meat on all sides until lightly browned and allow it to drain on a paper towel. Add more oil to the pan as you need it for optimal browning.
- While the meat browns, peel and finely chop the onion, peel and finely chop the carrot, and finely chop the celery.
- When the meat is all browned and out of the pot, add the chopped vegetables to the pot, sprinkle with the salt, and cook, stirring occasionally, until they're translucent and soft, about 5 minutes. While they cook, peel and mince the garlic. Add the garlic and cook until fragrant and just starting to turn golden, about 2 minutes more. Return the meat to the pan, add the broth, Guinness, and tomatoes to the pot. Scrape the bottom of the pan to loosen any browned bits stuck to it. Bring the mixture to a boil.

- Mix the flours, baking powder and salt in a large bowl. In a small pot, heat the milk until it's steaming, then turn off the heat. Stir in the fat until it's mostly melted in; a few bits that aren't melted are fine.
- Heat the bacon fat in a large pan over medium-high heat and add the cabbage and onions. Saute until softened, about 6 to 8 minutes. Salt this as it cooks. Add the squirrel meat, apple, walnuts and Cavender's seasoning (or black pepper), stir well and cook for a few minutes.
- If you have a tortilla press, get it out and cut a heavy plastic bag apart to make two plastic sheets that you'll use to keep the dough off the metal of the press. If you don't have a press, lay out a work space and flour it well.
