1 medium sweet yellow pepper, chopped
1 medium onion, chopped
2 teaspoons olive oil
3 garlic cloves, minced
1 jar (24 ounces) garden-style spaghetti sauce
1 package (16 ounces) frozen Italian vegetables
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (14-1/2 ounces) chicken broth
1/2 pound small red potatoes, quartered
1 cup water
1/3 cup uncooked orzo pasta
1/2 teaspoon dried marjoram
1/2 teaspoon dried thyme

Steps:

  • Saute pepper and onion in oil in a Dutch oven until tender. Add garlic; cook 1 minute longer. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes and pasta are tender.

Steps:

  • 1. Bring broth to a boil in a large saucepan over high heat. 2. Add orzo and carrots; boil 7 minutes. 3. Add asparagus and frozen peas; boil until orzo and vegetables are tender, about 3 minutes. 4. Remove from heat; stir in scallions, dill, lemon juice, salt and pepper. Yields about 1 cup per serving. Notes A few handfuls of fresh baby spinach stirred in at the end of cooking would be a nice addition to this soup. 1 (8 ounce) can water chestnuts, drained, coarsely chopped
2 ounces angel hair pasta, dry, broken (about 1 cup)
1/2 teaspoon fresh thyme, snipped
2 tablespoons cornstarch
8 ounces asparagus spears, cut into 1-inch pieces
1/2 cup frozen peas
2 tablespoons of fresh mint, snipped
4 (5 inch) bread bowls or 4 (5 inch) sliced French bread

Steps:

  • In a medium saucepan combine 3 cups of the vegetable broth, water chestnuts, pasta & thyme.
  • Bring to boil, then reduce heat & simmer, covered, for 5 minutes.
  • Meanwhile, in a small bowl, stir together the remaining 1/2 cup of vegetable broth & the cornstarch, then add it to the chestnuts-&-pasta mixture.
  • Stir in asparagus & peas, then cook & stir until thickened & bubbly.
  • Cook & stir another 2 minutes or until vegetables are tender & pasta is tender but firm.
  • Stir in the mint.
  • To serve, ladle soup into bread bowls or, less fancy, serve with French bread.

2 lbs chicken drumsticks, skinned
2 cups small broccoli florets
2 cups presliced mushrooms
1 1/2 cups sliced carrots
1 cup chopped onion
1/4 cup chopped fresh basil
1/4 cup uncooked orzo pasta (rice-shaped pasta)
1 teaspoon salt
1/8 teaspoon black pepper
6 tablespoons grated fresh parmesan cheese (1-1/2 ounces)

Steps:

  • Combine water and chicken in a 3-quart casserole.
  • Cover with lid; microwave at high 30 minutes or until chicken is done, stirring after 15 minutes.
  • Drain in a colander over a bowl, reserving cooking liquid.
  • Cool chicken slightly.
  • Remove chicken from bones, and discard bones.
  • Shred chicken with 2 forks to measure 2 1/2 cups.
  • Combine broccoli and next 4 ingredients (broccoli through basil) in casserole.
  • Cover; microwave at high 8 minutes or until tender, stirring after 4 minutes.
  • Add the reserved cooking liquid, chicken, pasta, salt, and pepper.

  • In a large pot, over high heat, add the first 10 ingredients; stir to combine.

1 medium leek, medium, sliced

150g orzo
1 lemon , zested and juiced
4 tema, mammole or violet artichokes , or use jarred
5 tbsp extra virgin olive oil
150g new potatoes , such as Jersey Royals, cut into bite-sized pieces
5 spring onions or 4 baby leeks, thinly sliced
1 garlic clove , crushed
1 mint sprig , plus 1 tbsp finely chopped mint
140ml white or rosé wine , or dry vermouth
300g broad beans (podded weight)
200g fresh or frozen peas (podded weight, if fresh)
100g ricotta
1 tsp pink peppercorns , crushed
pecorino or vegetarian alternative, for grating

Steps:

  • Bring a large pot of salted water to the boil and cook the orzo following pack instructions until al dente. Drain, then immediately plunge into cold water to halt the cooking.
  • Halve the lemon, then cut the tips from the artichokes with a serrated knife and strip away the tough outer leaves. Pare away any tough bits from the bases, and trim the stalks to about 5cm, peeling away the outer skins to reveal the white cores. Quarter the artichokes, scooping out the hairy chokes, then halve each quarter. Transfer to a bowl and squeeze over the juice from half the lemon, tossing to coat.
  • Heat the oil in a heavy-bottomed frying pan over a medium heat and fry the potatoes, spring onions, garlic and artichokes, stirring for 5-6 mins until the potatoes are starting to brown. Add the mint sprig, wine and 500ml water, then season, cover and simmer for 12-15 mins until the potatoes and artichokes are tender. Add the broad beans and peas and cook for 2 mins more until tender but still retaining their bright colour. Remove the pan from the heat. Drain the orzo and stir into the pan with the chopped mint and most of the lemon zest, then leave to stand for a couple of minutes so the orzo can absorb the flavours. Taste for seasoning and adjust the salt, and squeeze over the remaining lemon half, if you think it needs it.
  • Dish into warmed bowls and top with spoonfuls of the ricotta. Scatter over the crushed pink peppercorns and the remaining lemon zest, then grate over some pecorino to serve.

2 (14 ounce) cans italian seasoned chicken broth
1 1/2 cups dried orzo pasta
3 tablespoons butter
1 orange bell pepper, seeded and chopped
1 medium onion, chopped
1 (4 ounce) can sliced mushrooms, drained
1 fresh garlic clove, finely minced
chopped fresh parsley (a generous handful)
salt and pepper
1/2 fresh lemon
parmesan cheese
extra virgin olive oil (I use about a tablespoon)

Steps:

  • Cook orzo in chicken broth until tender (add water if necessary).
  • Sauté the the vegetables in butter until tender adding the garlic near the end to prevent burning.
  • This is where I usually add a little salt and fresh cracked pepper.
  • Drain the orzo and combine with the cooked vegetables and add the chopped parsley.
  • The heat of the other ingredients will wilt the parsley.
  • Stir in the juice of the 1/2 lemon and olive oil if desired.
  • Serve with grated Parmesan.
  • Enjoy.

1 leek, white section finely sliced
1 carrot, diced
1 stalk celery, diced
1 large potato, peeled and diced
1 (440 g) can tomatoes
1 1/4 liters vegetable stock
200 g green beans (frozen or fresh)
salt and pepper
2 tablespoons flat leaf parsley, chopped
30 g baby spinach leaves, shredded finely (large handful)

Steps:

  • Heat oil in a large saucepan and cook leek about 3 minutes until softened.
  • Add the carrot and celery, cook 5 minutes.
  • Add potato, tomatoes and stock, bring to a simmer and cook 15 minutes.
  • Add beans and cook a further 5 minutes, season to taste. Add parsley and stir to combine.
  • Divide soup between warmed bowls. Place a pile of shredded spinach on top of soup and serve immediately.
