POTATO, SPRING ONION, DILL & CHEESE FRITTATA

- In a small non-stick frying pan, heat oil over a medium heat. Add potatoes, then fry until beginning to crisp, about 8 mins. In a bowl, whisk together eggs, spring onions, dill and some seasoning. Heat the grill.
- Tip the eggs into frying pan, mix quickly, lower the heat, then sprinkle over cheese. After about 8 mins, once the top side has almost set, pop under the grill for 2-3 mins or until firm and golden. Slide out of the pan. Eat straight away with mayo or ketchup or cool quickly and chill.

- Heat oil in a 20cm non-stick frying pan. Add chipolatas and cook for 7-8 mins until browned. Meanwhile, crack eggs into a large bowl and beat well together. Stir in the bread, spring onions and garlic, then lightly season.
- Heat the grill to medium. Pour the egg mixture into the hot pan, then cook on the lowest heat for 6-7 mins, until the egg is almost completely set. Place the pan under the grill for 2-3 mins until golden brown and cooked through. Slide onto a chopping board and cut into wedges.

- Put the butter, garlic, diced chili and onions in a frying pan and fry gently until the onions are a nice golden brown.
- Beat the six eggs well with the salt and pepper.
- Scoop the onions out of the pan and mix with the eggs.
- Melt the extra butter in the pan and pour in the egg mixture.
- Cook on both sides until browned Slice in wedges and serve hot.

- Turn the oven to 200 degrees. Prepare a small tray and line it with parchment (this will make the cleaning process super easy and you will not have to use any grease for the recipe, so it's better for your health, right?).
