Time 25m

Yield 1 quart

Number Of Ingredients 8

7 medium carrots (about 1 1/4 pounds), sliced 1/4 inch thick

3/4 cup white wine vinegar
1/3 cup sugar
Kosher salt

  • Pour the hot brine into the jar and let cool completely. Cover and refrigerate overnight or up to 1 week.

SPRING CARROT PICKLES WITH CARAWAY

Spring Carrot Pickles With Caraway image

You don't have to limit yourself to the young multicolored carrots that I'm finding at the farmers' market right now, but they are particularly beautiful, at least until the colors fade with time. Carrots and caraway make a good marriage.

Provided by Martha Rose Shulman

Categories     project, appetizer

Time 10m

Number Of Ingredients 7

1 to 2 cups very thinly sliced carrots (slice on the diagonal), preferably an assortment of young orange, yellow and purple carrots from the farmers' market
2 teaspoons caraway seeds
1/2 cup (135 grams) seasoned rice wine vinegar
1 tablespoon (15 grams) sherry vinegar
1/4 cup (50 grams) sugar
1 cup (230 grams) water
2 1/4 teaspoons (10 grams) kosher salt

Steps:

  • Place the carrots and caraway seeds in a bowl or jar.
  • In a large bowl, combine the rice wine vinegar, sherry vinegar and sugar. Bring the water to a boil, remove from the heat and add to the vinegar and sugar mixture. Stir until the sugar is dissolved. Add the salt and stir well. Pour over the carrots and caraway, cover and refrigerate for at least 2 days before eating and for up to 2 weeks. These taste best with a longer brine, as the caraway has more time to infuse the brine. Shake the jar from time to time or, if you use a bowl, place a saucer on top of the carrots to keep them submerged. Remove from the brine with a slotted spoon to serve.

MAKE-AHEAD TURKEY AND SWISS SANDWICHES WITH CARROT SLAW

Make-Ahead Turkey and Swiss Sandwiches with Carrot Slaw image

Provided by Valerie Bertinelli

Time 30m

Yield 4 servings

Number Of Ingredients 12

3 medium carrots, coarsely grated on a box grater
1 tablespoon apple cider vinegar
1 tablespoon mayonnaise
1 tablespoon chopped chives
1 tablespoon chopped fresh flat-leaf parsley
1/4 teaspoon caraway seeds, lightly crushed with the side of a knife
Kosher salt and freshly ground black pepper
8 slices Russian rye bread
Spicy brown mustard, as needed
12 ounces thinly sliced oven-roasted turkey
6 ounces sliced Swiss cheese
About 1/3 cup dill pickle chips

Steps:

  • For the carrot slaw: Mix the grated carrots with the vinegar, mayonnaise, chives, parsley, caraway, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl.
  • For the sandwiches: Lightly toast the bread. Prop the bread against something and let it cool upright so that the steam does not make it soggy.
  • Lay out the bread and generously slather with mustard. Divide the turkey equally among 4 slices of the bread and the cheese evenly among the remaining 4 slices. Top the turkey with the carrot slaw and pickles, then invert the bread with the cheese over top to make 4 sandwiches. Wrap each sandwich in wax paper and refrigerate for up to 4 hours until ready to serve.
  • Cut the sandwiches in halves or thirds before serving.

CARROT & CARAWAY CRACKERS

If you're catering for vegans at a party, make these easy carrot canapés that everyone will love. Top with a sprig of dill and a vegetable crisp to impress

Provided by Sophie Godwin - Cookery writer

Categories     Buffet, Canapes

Time 35m

Yield Makes 20

Number Of Ingredients 9

2 tbsp olive oil
1 shallot , roughly chopped
1 garlic clove , roughly chopped
1 tsp caraway seeds
400g carrots , roughly chopped
300ml vegan vegetable stock
20 crunchy vegan crackers (such as an olive oil toast)
½ small pack dill , leaves picked, to serve
20 veg crisps (we used a small bag of Tyrells), to serve

Steps:

  • Heat the oil in a saucepan over a medium heat. Add the shallot and a pinch of salt, and cook for 6 mins until softened. Stir in the garlic and caraway seeds and cook for 1 min more, then add the carrot and veg stock, bring to a boil and simmer for 12 mins.
  • Once the carrots are completely soft, drain them (reserve the liquid) and blitz to a smooth purée - add a tbsp of the reserved stock initially, but use more if necessary to get the desired consistency. Season and leave to cool. The purée can be made a day ahead and kept in the fridge.
  • To serve, spoon the purée - or, if you want to be extra fancy, transfer it to a piping bag and pipe it - onto the oatcakes and top each with a little dill and a veg crisp.
