Your little goblins and witches will be wide-eyed with excitement making this fun Halloween cake!

1 box Betty Crocker™ Super Moist™ devil's food cake mix
Water, vegetable oil and eggs called for on cake mix box
2 containers (12 oz each) Betty Crocker™ Whipped fluffy white frosting (3 cups)
Betty Crocker™ neon gel food colors (orange, purple and lime green)
1 package (0.88 oz) Betty Crocker™ Candy Shop candy eyeballs

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease or spray bottoms and sides of three 8-inch round cake pans.
  • In large bowl, beat cake mix, water, oil and eggs with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Pour 1 1/3 cups batter in each pan.
  • Bake cakes 17 to 21 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 30 minutes.
  • Divide frosting into 3 small bowls (1 cup each). Stir 1/2 teaspoon different color of food color into each bowl. Fit 3 separate decorating bags with 1/2-inch round piping tip; fill each with different color frosting. Place first cake layer on plate. Using green frosting, pipe around top edge of cake layer, forming a thick frosting border. Spread additional frosting over top of cake inside frosting border. Top with second cake layer; repeat border and filling with purple frosting. Place third cake layer on top; repeat with orange frosting. Pipe remaining frosting into mounds over top of cake, alternating colors and sizes of mounds.
  • Decorate as desired using candy eyeballs on frosting mounds and side of cake. Store cake covered at room temperature.

These taste like Peanut Butter cups. They are fun to make and kids really get a kick out them. A bit time consuming, but the end-product is worth it.

1 ½ cups creamy peanut butter
½ cup butter, softened
2 ½ cups confectioners' sugar, sifted
1 tablespoon vanilla extract
12 ounces white chocolate, chopped
2 tablespoons shortening
2 drops blue food coloring
½ cup miniature semisweet chocolate chips
2 drops red food coloring

Steps:

  • Beat the peanut butter and butter with an electric mixer in a large bowl until smooth. Beat in the sugar and vanilla. Cover and refrigerate for 30 minutes. Roll chilled dough into small, eyeball-sized balls and place on 2 baking sheets lined with wax paper. Refrigerate for another 30 minutes.
  • Melt the white chocolate and shortening in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Dip each eyeball into the white chocolate and transfer to the waxed paper until the chocolate has set. You can chill them in the refrigerator.
  • Stir a few drops of blue food coloring into the remaining melted white chocolate. Make a round "iris" on the top of the cooled eyeball and press a mini chocolate chip in the center for a "pupil." For an extra spooky bloodshot eyeballs take a toothpick dipped in red food coloring and make squiggly lines on the eye.

Now these are fun and guaranteed to put everyone in the Halloween spirit! The cookies remind me of a shortbread and are quite a treat.

1 c margarine, softened
1/3 c powdered sugar
1 large egg
3/4 tsp almond extract
1 tsp vanilla extract
3.4 oz package instant vanilla or white chocolate pudding mix (I used French vanilla mix in picture and the eyes are yellow-ish)
2 c all-purpose flour
FROSTING:
3/4 c powdered sugar
1/2 tsp vanilla extract
1-2 Tbsp milk, as needed to drizzling consistency
red, blue, green food coloring
27 semi-sweet chocolate chips

Steps:

  • 1. Preheat oven to 350 degrees F. Lightly spray a baking sheet with cooking spray or line with parchment paper.
  • 2. In a large bowl, beat margarine and 1/3 c powdered sugar until smooth. Beat in egg, 1 tsp vanilla, almond extract, and pudding mix until blended. Stir in flour just until combined.
  • 3. Roll cookie dough into about 1 inch balls (vary size for different size eyeballs) and place on prepared baking sheet. Use your index finger to make a depression in the center of each eyeball. (Cookies will not spread much when baked.)
  • 4. Bake in preheated oven for 10-14 minutes until cookies are set and lightly golden on bottoms. Remove to a wire rack (with wax paper underneath the rack) to cool completely.
  • 5. To make frosting: in a separate bowl, combine 3/4 c powdered sugar, 1/2 tsp vanilla, and enough milk to get a glaze or drizzling consistency. Divide into 3 smaller bowls and add food coloring to each bowl.
  • 6. To assemble cookie: while the cookie is on the cooling rack, use a 1/4 or 1/8 tsp measuring spoon to scoop a small amount of blue or green frosting into the center depression of cookie. Add a chocolate chip upside down to the center of blue or green. Drizzle red frosting on edges of cookie with a spoon to resemble bloodshot eyes. Serve.

Halloween treats to make with your kids. How can anything that looks so hauntingly creepy taste so good ?? My kids have enjoyed taking these to school for years, and so will yours.

1/2 cup butter, softened
1 1/2 cups peanut butter
2 cups powdered sugar
1 tablespoon vanilla
12 ounces white dipping chocolate
1/2 cup mini chocolate chip
blue food coloring

Steps:

  • Cream the butter and peanut butter together.
  • Beat in the vanilla and sugar.
  • Chill for 1/2 hour.
  • Roll into small balls, chill on wax paper for another 1/2 hour.
  • In a microwave, melt the white dipping chocolate.
  • Using two spoons dip the eyeballs into the white chocolate.
  • Let cool on waxed paper until firm. Chilling will speed up the process.
  • Pour a drop or two of blue food coloring into the remaining melted chocolate.
  • Make a round iris on the eyeball, and immediately press a miniature chocolate chip in the center for a pupil, doing 5 at at time.
  • For the bloodshot effect, dip the tiny end of a toothpick in red food colouring and squiggle the lines from the pupil outward, but not quite to the edges of the ball.
  • These are quite tasty--considering how creepy they are.
  • Note: White dipping chocolate is also known as white bark.

5 hard-boiled eggs
110 g cream cheese
10 pimento stuffed olives
red food coloring

Steps:

  • Cut the eggs in half and scoop out the yolks.
  • In a bowl mash the yolks with the cream cheese.
  • Fill the eggs with the cream cheese mixture and push an olive into the middle of each one.
  • Dip a wooden toothpick into the foodcolouring and draw bloodshot veins onto the cheese mixture, running from the olive to the outside.

  • Line 2 baking sheets with parchment paper or silicone baking mats. In the bowl of an electric mixer, combine the butter and sugars. Optional add black food coloring to get a deeper shade of black in the cookies. Beat together on medium-high speed until light and fluffy, 2-3 minutes. Blend in the egg and vanilla, scrape down the bowl if needed.
  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Slowly add the dry ingredients into the wet ingredients in the mixer on low speed just until incorporated. Mix in the milk on the lowest speed and fold in the chocolate chips.
  • Roll about 2 tablespoons of dough into balls and place on the baking sheets. Flatten slightly. Top cookies with candy eyeballs. Place cookie sheet in freezer for 10-15 minutes. (Alternately you can chill the dough for at least 2 hours or up to 36.)
  • Bake at 350˚ F for 10-11 minutes. Let cool on the baking sheets for about 5 minutes, then transfer to a wire rack to cool completely.
