SPLIT PEA SOUP WITH SMOKED TURKEY
Split pea soup with smoked turkey, carrots, and potatoes. Great flavors and a simple recipe, it doesn't get much better.

Steps:
- Heat a heavy-bottomed soup pot with a lid over medium-high heat.
- Add all ingredients except chicken stock and split peas. Once the ingredients sizzle, turn heat to low, cover the pot and let them sweat for 15-minutes.
- Add the split peas and chicken stock, turn the heat to high and bring to a boil. Once boiling, reduce heat to low, cover and simmer for 1-hour. Stirring occasionally.
- Once the potatoes are soft, mash them with the back of a spoon to help thicken the soup.
- After 45-minutes, remove the turkey legs and let cool slightly. Shred the turkey legs and discard the bones and connective tissues.
- Serve the soup with warm crusty bread and top it with the shredded turkey meat.

- Place the butter in a large soup pot over medium-low heat. Stir in onion, celery, and sliced garlic. Cook slowly until the onions are translucent but not brown, 5 to 8 minutes.
- Mix in ham, bay leaf, and split peas. Pour in chicken stock and water. Stir to combine, and simmer slowly until the peas are tender and the soup is thick, about 1 hour and 15 minutes. Stir occasionally. Season with salt and black pepper to serve.

- Combine everything in slow cooker, except tomatoes.
- Cook on low for 7 hours.
- Last ten minutes, stir in tomatoes and let stand for 10 minutes.
SLOW-COOKER SPLIT PEA SOUP

- Tie the parsley stems and thyme together with kitchen string and place in a 6-quart slow cooker. Add the split peas, leek, celery, carrots, 1 teaspoon salt and 1/2 teaspoon pepper; stir to combine. Add the turkey leg and 7 cups water. Cover and cook on low until the split peas and meat are tender, 6 to 8 hours.
- Discard the herb bundle. Discard the skin and bones from the turkey leg and shred the meat. Vigorously stir the soup to break up the peas and make the soup smoother. Thin with water, if desired. Stir in the chopped parsley and about three-quarters of the turkey meat; season with salt and pepper.
- Ladle the soup into bowls. Thin the yogurt with a little water, then spoon onto the soup. Top with the thawed peas and the remaining turkey. Serve with bread, if desired.
PEA SOUP WITH SMOKED TURKEY WINGS

- In a large soup pot heat oil add onions, celery, carrot, potato and saute for 5 minutes add garlic, oregano, bay leaf, salt, pepper and turkey wings. Add peas and cover with enough water to completely submerge all ingredients by a couple inches.
- Bring to a boil. Reduce heat and simmer for about 3-4 hours, until thickened be sure to stir throughout the cooking. The longer you cook it the thicker it gets.
- Optional:.
- Blend all but meat in a blender to smooth out, then shred the turkey and add to the soup.
CROCKPOT SPLIT PEA AND SMOKED TURKEY SOUP
Everyone is familiar with split pea soup, but this one is a little different; it derives it's flavor from smoked turkey. Actually you can use smoked turkey or smoked turkey sausage.
