2 lbs fresh spinach, washed and stems removed
1 tablespoon olive oil
2 tablespoons pine nuts
1 garlic clove, minced
3 tablespoons raisins
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large covered frying pan, cook spinach in water that clings to leaves 2 or 3 minutes. Drain, squeeze and set aside.
  • Heat olive oil in a frying pan over medium heat. Stir in pine nuts and garlic.
  • Add spinach and raisins when garlic becomes fragrant and pine nuts are golden (about 30 seconds).Cook for 2 minutes to heat through.
  • Season with salt and pepper.

2 1/2 tablespoons kosher salt
4 (10-ounce) bags spinach, washed, big stems removed, or 12 cups raw, roughly torn mustard greens (about 2 pounds)
About 1/4 cup extra-virgin olive oil
2 tablespoons thinly sliced garlic
Kosher salt and freshly ground black pepper
Lemon wedges

Steps:

  • Bring 1 gallon of water to boil in a large pot with 2 1/2 tablespoons kosher salt. Add the spinach, pushing it down into the water with a skimmer, and immediately remove it to a bowl of ice water.
  • Drain the spinach once cooled (don't leave it in for too long) and squeeze out the water. Divide spinach into 4 sections and compress each into a ball (each ball will be about
  • 1 cup and they can be wrapped in plastic and refrigerated for up to a day).
  • Cut each ball in half and then in half again to chop up the spinach.
  • Place 1/4 cup of the oil in a large skillet over high heat. Add the garlic to the pan and shake the pan often, for about 1 minute or until the garlic is lightly browned. Add the spinach and saute for 2 to 3 minutes. Season with salt and freshly ground pepper, to taste. It will seem dry. Remove the spinach to a bowl, sprinkle with a little olive oil and garnish with lemon wedges.
  • Variations:
  • Try adding some chopped anchovy with the garlic.
  • For creamed spinach: substitute butter for half of the oil and add 1 cup of heavy whipping cream as you cook the spinach.

1 kg (2 lbs.) spinach (see Notes)
3-4 heaping spoonfuls of lard, or butter, or a combination of butter and olive oil
1-2 cloves of garlic, slightly crushed (optional)
75-100g (2-1/2 to 3 oz.) raisins, softened in hot water for a few minutes and drained well
75-100g (2-1/2 to 3 oz) pine nuts
Salt and pepper

Steps:

  • Heat the fat over moderate heat in a large casserole able to contain all the spinach. If using the garlic, toss it in as the fat in heating up, and remove it as soon as it begins to color and give off its aroma.
  • If using pre-washed baby spinach: Add the raw spinach directly into the casserole. No need for liquid; the vegetable will steam in its natural moisture. Cover the casserole and let the spinach cook down. It will reduce enormously, down to a mere faction of its original bulk. Uncover and turn the spinach as it cooks, turning it in the fat so it is well covered all over.
  • If using mature spinach: Wash the spinach well to get any grit out. (If the vegetable is very gritty, you can soak it in a large bowl of cold water.) Then trim the leaves off their woody stems. Pre-cook the trimmed leaves in salted boiling water for a five minutes or so, drain immediately and run the spinach under cold water to stop the cooking. Squeeze out the liquid from the spinach and chop it up roughly. Add the chopped spinach to the fat in the pan, turning it over to impregnate it with the oil. (No need to cover the spinach.)
  • Now add the raisins and pine nuts to the spinach. Season with salt and pepper. Let the spinach simmer gently over moderate heat for, say 5-10 minutes, until the spinach is perfectly tender and the flavors have a chance to meld. If there is juice left in the pan, raise the heat to high and let it cook off. The spinach should moist, but not wet.
  • Serve immediately.

Manicotti stuffed with meat, spinach and cheese, coated with tomato and white sauces. Delicious and a tricky way to get kids to eat spinach! This takes a little time but is a beautiful, special dish. Great with breadsticks!

2 tablespoons olive oil
1/2 cup onion, finely chopped
3 garlic cloves, minced
1/2 lb ground beef (I use venison)
1/2 lb ground pork
1 teaspoon salt (to taste)
1 teaspoon italian seasoning
1 lb frozen chopped spinach, thawed
2 cups cottage cheese
2 eggs
2 tablespoons butter
2 tablespoons flour
2 teaspoons chicken bouillon granules
2 cups half-and-half
1/4 cup fresh parsley, chopped or 2 tablespoons parsley, dried
12 ounces manicotti
3 cups spaghetti sauce, divided (I make my own or use prego)
2 cups mozzarella cheese, shredded
1/2 cup romano cheese, grated

Steps:

  • To prepare the filling: Saute onions in oil over medium heat until soft. Add garlic, saute 1 minute. Remove from pan to a large bowl. Brown meat in same skillet; season with salt and Italian seasoning. Drain and cool.
  • Cook spinach in microwave, covered, with a little water for 2-3 minutes. Drain well and add to the bowl with onions, along with the eggs, cottage cheese and meat. Mix well.
  • To prepare the white sauce: melt the butter in a saucepan over medium low heat. Whisk in the flour and bouillon granules till lumps are gone. Slowly add the half and half. Bring to a simmer, stirring constantly until thickened. Remove from heat and stir in parsley.
  • Cook manicotti shells in boiling salted water for half the time indicated on package (5 minutes.) Drain and cover with a damp towel to prevent shells from drying and cracking.
  • Spread 1/2 cup spaghetti sauce in the bottom of a 10x14 baking dish.
  • Gently stuff the manicotti with meat mixture, placing in baking dish. Keep the manicotti covered while working.
  • Spoon the white sauce evenly over the manicotti.
  • Spoon the remaining red sauce over the white sauce, being careful not to mix the two.
  • Cover with foil and bake at 350 degrees for 40 minutes.
  • Sprinkle the mozzarella and romano cheeses on top and bake, uncovered, 10 more minutes or till cheese is melted.

SPINACH ROMAN STYLE

This dish is all technique. The garlic cloves are browned, the pine nuts toasted and the raisins are plumped in water and heated, each flavor enhancing the spinach. I cut this recipe out of a June 2007 New York Times magazine. The original recipe was published in 1989 and came from "The Food of Southern Italy" by Carlo Middione. Put here for safekeeping, and will try this soon. I will definitely lower the amount of oil way below 1/3 cup, which is what the published recipe stated. If you are not concerned about your waistline, go ahead and use that much. I think this is a very sophisticated recipe, appropriate for a dinner party.

3 tablespoons raisins (black or golden, smallest available)
4 bunches spinach, bunches washed at least twice but not dried, trimmed of stems (2 1/2 pounds untrimmed)
1 tablespoon virgin olive oil
5 medium garlic cloves, peeled and well crushed
4 tablespoons pine nuts
1 pinch salt (big pinch)
fresh black pepper (6-7 grindings)

Steps:

  • Put the raisins in a small bowl with enough warm water to cover. Soak for about 15 minutes and set aside.
  • Put the wet spinach in a frying pan large enough to hold it all and cook over a high flame until it collapses and turns dark green, stirring constantly. Transfer the spinach to a colander and set aside. If the frying pan is wet, dry it with a paper towel.
  • Pour olive oil into the frying pan over medium-high heat. Add garlic and brown it, being careful it doesn't burn. Remove and discard. Take the raisins from the water, squeeze as dry as possible and add them to the oil with the pine nuts. Turn the heat down to medium and cook until the nuts turn a golden color. Be careful because the nuts can burn easily.
  • Return spinach to the pan, stir with a fork and add salt and pepper, to taste. Mix all ingredients and continue cooking for about a minute. You may add additional olive oil if desired.
