1 bag (10 oz.) spinach leaves, washed, well dried
1 pt. (2 cups) strawberries, sliced
1 pink grapefruit, peeled, sectioned
1/2 cup sliced almonds, toasted
1 cup KRAFT Balsamic Vinaigrette Dressing

Steps:

  • Combine spinach, strawberries, grapefruit and almonds in large bowl.
  • Add dressing; toss lightly to coat.
  • Serve immediately.

2 tablespoons balsamic vinegar
1 tablespoon honey
1 grapefruit, cut in supremes
1/2 cup walnuts, chopped
1/4 cup dried cranberries
4 cups baby spinach leaves

Steps:

  • In a big bowl, mix olive oil, balsamic vinegar and honey.
  • Add grapefruit supremes, walnuts, cranberries and baby spinach leaves.
  • And grab a fork and begin to eat ;).

5 ounces baby spinach
1 1/2 cups sliced strawberries
1 medium shallot, thinly sliced
1 tablespoon sliced almonds
4 slices bacon, chopped
1 teaspoon whole-grain mustard
1 teaspoon sugar
2 1/2 tablespoons red wine vinegar
1 tablespoon olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Put the spinach, strawberries and shallots in a large bowl.
  • Toast the almonds in a small skillet over medium heat, stirring until golden brown, about 2 minutes. Transfer to a bowl or plate and set aside to cool.
  • Put the bacon in a cold medium skillet; cook over medium heat, stirring occasionally, until browned and crisp, about 10 minutes. With a slotted spoon, transfer to a paper-towel-lined plate; leave the bacon fat in the pan.
  • Take the skillet off the heat and stir in the mustard and sugar until the sugar is dissolved. Add the vinegar and then whisk in the olive oil. Season with 1/4 teaspoon salt and pepper to taste.
  • Add the bacon and almonds to the salad, pour over the bacon vinaigrette, and toss to coat. Serve immediately.

Sweet, ripe strawberries, tangy goat cheese, and crunchy pecans make this simple strawberry spinach salad perfect for any time of day.

1/3 c. extra-virgin olive oil
1/4 c. fresh lemon juice
3 tbsp. honey
1 tbsp. apple cider vinegar
1 tbsp. poppy seeds
2 tsp. dijon mustard
1/2 tsp. salt
1/4 tsp. ground black pepper
2 5-oz. containers baby spinach
1 lb. strawberries, halved or sliced
2 oranges, peeled and sliced
1 1/2 c. chopped pecans, toasted
4 oz. goat cheese, crumbled

Steps:

  • For the dressing: In a small jar, combine the olive oil, lemon juice, honey, vinegar, poppy seeds, mustard, salt, and pepper. Seal the jar; shake vigorously to combine. Set aside.
  • For the salad: Just before serving, add the spinach to a large bowl or platter; top with half of the strawberries and orange slices. Drizzle with half of the dressing; gently toss to coat. Top the salad with the remaining berries, orange slices, pecans, and goat cheese. Drizzle with your desired amount of the remaining dressing, and serve the remainder on the side, if you like.

4 cups baby spinach leaves, washed
1 cup red cabbage, shredded
2 green onions, diced
1/4 cup cider vinegar
1/2 cup extra virgin olive oil
1/4 cup sugar
2 tablespoons poppy seeds
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
salt & freshly ground black pepper
1 cup fresh strawberries, halved
1/2 cup toasted slivered almonds
1 tablespoon toasted sesame seeds

Steps:

  • Combine the spinach, red cabbage and green onion.
  • Whisk the cider vinegar, olive oil, sugar, poppy seeds, paprika and worcestershire sauce together in a bowl.
  • Season to taste with salt and pepper.
  • Toss the salad with the poppy seed dressing and arrange on eight individual plates.
  • Top with fresh strawberries, almonds and sesame seeds.

1/2 small red onion, thinly sliced
4 cups water
24 walnuts or 24 pecan halves
2 tablespoons icing sugar
2/3 cup vegetable oil
6 tablespoons walnut oil
2 small shallots or 2 small chives, minced
2 tablespoons raspberry red wine vinegar or 2 tablespoons sherry wine vinegar
salt
fresh ground white pepper
12 ounces fresh spinach, trimmed
1 pint strawberry, sliced
6 ounces gorgonzola, crumbled

Steps:

  • Place onion in a small glass or stainless steel bowl. Add enough water to cover. Chill, covered with plastic wrap for 30 minutes or longer.
  • Bring 4 cups water to a boil in a small saucepan. Plunge the walnuts into the boiling water. Boil for 30 seconds. Remove with a slotted spoon to a small bowl. Add the icing sugar and toss until the walnuts are well glazed.
  • heat the vegetable oil in a small saucepan over medium heat. Drop the walnuts carefully into the hot vegetable oil, keeping the walnuts seperated. Cook for 1 to 2 minutes until dark golden brown. Remove to a wire rack lined with parchment paper to cool.
  • Heat the walnut oil in a small saucepan over medium heat. Add the shallots. Saute for 2 minutes or until translucent. Remove from heat. Add the vinegar, salt and pepper. Do not overseason with salt as the cheese is quite salty also. Whisk until lightly emulsified.
  • Tear the spinach into bite size pieces into a large bowl. Drain the onion. Add the onion, strawberries and cheese, tossing to mix well. Drizzle the dressing over the top and toss until lightly coated. Divide among salad plates and top with the candied walnuts.

The raspberry wine vinegar adds a marvelous taste, and compliments the first two ingredients. This salad is very eye pleasing in crystal.

1 lb spinach (I pinch off the larger stems)
1 pint strawberry, sliced set a few aside (egg slicer works wonders)
1/2 cup pecans, toasted
1/3 cup roland raspberry red wine vinegar
1/2 cup sugar or 1/2 cup sugar substitute
1 teaspoon dry mustard
3/4 cup vegetable oil
2 teaspoons poppy seeds

Steps:

  • Toast pecans over low heat, set aside to cool.
  • Combine dressing ingredients and shake well.
  • Toss and garnish with a few sliced strawberries.
  • Serve immediately.

2 tablespoons Dijon mustard
6 tablespoons olive oil
1/2 red onion, chopped (about 1/2 cup)
1/4 lb bacon, cut into 1/2-inch pieces (about 1/2 cup)
1/4 teaspoon sesame seeds
1 large spinach, coarse stems discarded and leaves washed well and spun dry
2 grapefruits, peel and pith cut away and sections cut free from membranes
1 avocado, chopped (optional)

Steps:

  • In a bowl whisk together vinegar, honey, and mustard and add oil in a stream, whisking until emulsified.
  • In a large heavy skillet cook onion and bacon over moderate heat, stirring occasionally, until onion is pale golden and bacon is browned. Add sesame seeds and cook, stirring, until pale golden.
  • In a large serving bowl toss together spinach, grapefruit sections, avocado, and bacon mixture. Add about half of dressing and toss to combine, adding more dressing if desired.
