SPINACH SALAD WITH WARM MAPLE DRESSING

Steps:
- Toast pecans in a small dry skillet over low heat, stirring often, until fragrant, 2 to 3 minutes. Transfer to a small bowl and let cool.
- Toss spinach and cucumber in a salad bowl.
- Heat oil in a small skillet over medium-low heat. Add shallot and cook, stirring, until softened, about 4 minutes. Add vinegar and maple syrup and bring to a boil. Season with salt and pepper.
- Immediately pour dressing over the spinach and cucumber. Toss well and sprinkle with cheese and toasted pecans.

- Place 3/4 cup spinach on each of 12 individual plates. Top each with 1/4 cup mushrooms and 1 teaspoons pinenuts.
- Beat dressing, mayo and syrup with wire whisk until well blended.
- Drizzle 1 tablespoon of the dressing over each salad just before serving.
- To serve this salad family style, simply layer spinach and mushrooms in a large glass bowl. Drizzle with the dressing and sprinkle with pine nuts just before serving.

I got this out of a coupon paper, it looks awesome. I'd like to use granny smith apples with this, and it calls for 2 apples so I picked one of each recommended. I'm also subbing the cranberries for chopped dates because it looks sweet enough!

- Whisk in the oil gradually until the mixture thickens slighlty, season with salt and pepper to your liking.
- Toss the greens, apples, cranberries, and half the walnuts together in a large bowl, toss with enough dressing to coat.
- Sprinkle with remaining walnuts, and serve.

- Wash and dry the spinach leaves. Place on a large serving platter. Sprinkle the pecans, cranberries, and onion rings on top of spinach.
- Place the vinegar, cranberry juice, maple syrup, Dijon mustard, salt and pepper in a jar with a tight-fitting lid. Shake or whisk until well combined.
- Add the vegetable oil and shake again. Just before serving, shake the vinaigrette once more and pour it over the salad.
