My step-mom makes this salad and for a life-long spinach "hater", this is what turned me around! It is one of my favorite salads now! Quick and easy to make. Enjoy!

Ingredients

1 bunch fresh spinach leaves
8 -10 small radishes, extra crispy
2 -5 green onions, chopped
1 (6 ounce) can water chestnuts
6 -10 slices bacon
1/2 cup light oil
1/2 cup sugar
1/4 cup catsup
2 tablespoons vinegar
2 tablespoons Worcestershire sauce
salt & pepper, to taste

Steps:

Toss chopped spinach and onions with thinly-sliced radishes and water chestnuts Top with crumbled bacon slices.
In dressing bottle, shake dressing ingredients together, and drizzle over salad.
Serve with crunchy breadsticks or hot cornbread, for a special summer meal in itself.

10 ounces Baby Spinach
1/2 cup pecans, chopped & toasted
1/2 cup craisins
feta cheese, crumbled
3/4 cup extra virgin olive oil
3 tablespoons sugar
3 tablespoons balsamic vinegar
1 tablespoon sour cream
1/2 teaspoon Dijon mustard

Steps:

Toast pecans in oven at 350 for 5-10 minutes.
Mix Dressing.
Put Spinach in a bowl, add pecans, craisins and feta cheese. Toss, add dressing & toss again.

Absolutely delicious. Rivals any salad in A1 restaurants (any restaurant for that matter). Can't get any easier than this. I've also topped this salad off with mandarin orange sections and sweet nuts (optional).

1 bag Baby Spinach
1 medium onion, minced
3 tablespoons oil
2 tablespoons brown sugar

Steps:

Saute' the minced onion in the oil until tender and slightly brown.
Remove from heat and add the brown sugar.
Mix together well.
Pour dressing over the baby spinach and toss to coat. It may look like there's not enough dressing (it's plenty) just keep tossing and tossing until spinach is completely coated.
