1 lb spinach, washed and stems removed
1 lb ground beef
3 garlic cloves, minced
1 medium onion, finely chopped
1/2 teaspoon chili-garlic sauce
1/4 cup beef broth
red pepper flakes, to taste
1/2 lb sliced mushrooms
1/2 cup sour cream
salt and pepper

Steps:

Sauté onion until cooked.
Minced garlic and spinach.
Add beef and cook until brown and minced garlic.
Add broth and spinach.
Cook until spinach is wilted.
Red pepper flakes, and sour cream.
Season with salt and pepper.
This can be served with rice or noodles and topped with Parmesan Cheese.

12 ounces cooked beef (such as steak, roast, pot roast or deli roast beef), thinly sliced
4 eggs or 1 cup egg substitute
1/2 cup chopped fresh baby spinach
1/2 cup diced tomatoes
Salt and pepper (optional)
4 slices reduced-fat Swiss cheese
4 whole wheat round thin sandwich breads, split, toasted

Steps:

1)Combine eggs, spinach and tomato in medium bowl. Spray large nonstick skillet with cooking spray; heat over medium-high heat until hot. Add egg mixture; cook 2 to 4 minutes or until eggs are almost set, stirring occasionally. Sprinkle with salt and pepper, if desired. 2)Divide egg mixture into 4 separate portions in pan. Evenly top with cheese and beef. Remove from heat and cover. Let stand 1 to 2 minutes or until cheese is melted. 3)Place one egg portion on bread bottoms. Close sandwiches; serve immediately.

1 medium onion, chopped
3 cups diced peeled potatoes
1/2 cup water
Salt and pepper to taste
1 can (14-1/2 ounces) diced tomatoes, undrained
4 large eggs, lightly beaten
4 ounces Velveeta, sliced

Steps:

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. add the potatoes, water, salt and pepper. Cover and simmer for 20 minutes or until potatoes are tender. , Add tomatoes; cook for 5 minutes. Pour eggs over mixture. Cook and stir until eggs are completely set. Top with cheese. Cover and cook for 1 minute or until the cheese is melted.
