One-Pot Pasta With Spinach and Tomatoes image

This one-pot pasta dinner is simple, fresh, and healthy-what's not to love? Cooking the pasta right in the sauce saves time and cleanup while infusing the noodles with more flavor. This speedy recipe is also endlessly adaptable, and lends itself to plenty of easy ingredient swaps (make sure to check out the clever riffs below). Change up the spinach for any vegetables you have on hand such as sliced zucchini and mushrooms, or add leftover diced cooked chicken thighs or cooked and crumbled sausage. Yield Serves 4 (serving size: about 2 cups pasta mixture and 1 tablespoon cheese)

Number Of Ingredients 10

1 tablespoon olive oil
1 cup chopped onion
6 garlic cloves, finely chopped
1 (14.5-ounce) can unsalted petite diced tomatoes, undrained
1 1/2 cups unsalted chicken stock (such as Swanson)
1/2 teaspoon dried oregano
8 ounces whole-grain spaghetti or linguine (such as Barilla)
1/2 teaspoon salt
10 ounce fresh spinach
1 ounce Parmesan cheese, grated (about 1/4 cup)

Steps:

  • Heat a Dutch oven or large saucepan over medium-high heat. Add oil; swirl to coat.
  • Add onion and garlic to pan; sauté 3 minutes or until onion starts to brown.
  • Add tomatoes, stock, oregano, and pasta, in that order. Bring to a boil. Add noodles; stir to submerge in liquid.
  • Cover, reduce heat to medium-low, and cook 7 minutes or until pasta is almost done.
  • Uncover; stir in salt. Add spinach in batches, stirring until spinach wilts. Remove from heat; let stand 5 minutes. Sprinkle with cheese and serve.

LOW-CAL FETTUCCINE ALFREDO



Low-Cal Fettuccine Alfredo image

This lighter version of alfredo gives you all the creaminess of the original without loads of heavy cream and butter.

Number Of Ingredients 11

1 tablespoon unsalted butter
1 clove garlic, minced
1 teaspoon grated lemon zest
2 teaspoons all-purpose flour
1 cup low-fat (2%) milk
Kosher salt
2 tablespoons Neufchâtel or low-fat cream cheese
3/4 cup grated parmesan cheese, plus more for topping
3 tablespoons chopped fresh parsley
12 ounces fresh fettuccine
Freshly ground pepper

Steps:

  • Make the sauce: Melt the butter in a skillet over medium heat. Add the garlic and lemon zest and cook until the garlic is slightly soft, about 1 minute. Add in the flour and cook, stirring with a wooden spoon, 1 minute. Whisk in the milk and 3/4 teaspoon salt and cook, whisking constantly, until just thickened, about 3 minutes. Add the Neufchâtel and parmesan cheese; whisk until melted, about 1 minute. Stir in the chopped parsley.
  • Meanwhile, bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, 2 to 3 minutes. Reserve 1 cup cooking water, then drain the pasta and return to the pot. Add the sauce and 1/2 cup of the reserved cooking water to the pasta and gently toss to combine, adding more cooking water as needed to loosen. Season with salt. Divide among bowls and top with parmesan and pepper.

From the August 2006 issue of Cooking Light, this is one of their lightened recipe makeovers, also one of the magazine's monthly "greatest hits." Very thick, smooth and cheesy sauce with lots of bacon. You won't believe this is the light version! I plan to use the sauce as a base and experiment with roasted red peppers, grilled chicken, shrimp...the possibilities are endless! I used plain old fresh grated Parmesan cheese.

1 lb fettuccine pasta, uncooked (reserve 1/2 cup pasta water)
1 tablespoon butter
1 garlic clove, minced
1/4 cup reduced-fat cream cheese
3/4 cup reduced-sodium fat-free chicken broth
3 tablespoons all-purpose flour
3/4 cup asiago cheese (3 oz.) or 3/4 cup parmigiano-reggiano cheese (3 oz.)
3/4 cup half-and-half
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1 (10 ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
10 slices cooked bacon, crumbled (center cut bacon, about 1 1/4 cups)
parsley sprig (optional)

Steps:

  • Cook pasta according to package directions, omitting salt and fat. Drain pasta, reserving 1/2 cup pasta water.
  • Melt butter in a large nonstick skillet over medium-high heat. Add garlic; saute 30 seconds. Add reserved pasta water and cream cheese, stirring with a whisk until smooth.
  • Combine broth and flour in a small bowl, stirring with a whisk to combine; bring to a boil. Cook 2 minutes or until mixture thickens, stirring constantly. Remove from heat; add pecorino Romano, stirring until smooth. Add half-and-half, salt and pepper. Stir in spinach.
  • Combine cheese mixture and pasta in large bowl, tossing to coat. Place about 1 cup pasta mixture in each of 8 bowls; top each serving with 2 1/2 tablespoons bacon. Garnish with parsley, if desired.

1 package (6 ounces) baby spinach
2 tablespoons olive oil
4 garlic cloves, minced
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
2 medium plum tomatoes, seeded and chopped
1/2 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 cup shredded Parmesan cheese

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a large skillet, saute spinach in oil for 2 minutes or until spinach begins to wilt. Add garlic; cook 1 minute longer. , Add the shrimp, tomatoes, Italian seasoning and salt; saute 2-3 minutes or until shrimp turn pink. Drain fettuccine and add to skillet; toss to coat. 1 box (9 oz) frozen chopped spinach
1 tablespoon light stick butter
1 clove garlic, finely chopped
2 oz fat-free cream cheese, cut into cubes
3/4 cup Progresso™ reduced-sodium chicken broth (from 32-oz carton)
3 tablespoons Gold Medal™ all-purpose flour
3/4 cup freshly grated Romano cheese
3/4 cup fat-free half-and-half
1 teaspoon salt
1/2 teaspoon freshly ground pepper
8 slices center-cut bacon, crisply cooked, crumbled (about 1 cup)

Steps:

  • Cook fettuccine in 5-quart Dutch oven as directed on package, omitting salt and oil. Drain, reserving 1/2 cup cooking water. Return fettuccine to pan; cover to keep warm. Meanwhile, cook frozen spinach as directed on box; squeeze dry.
  • In 12-inch nonstick skillet, melt butter over medium-high heat. Add garlic; cook and stir 30 seconds. Add reserved cooking water and cream cheese, stirring with whisk until smooth.
  • In small bowl, stir broth and flour with whisk until smooth. Add flour mixture to skillet, stirring with whisk until blended. Heat to boiling; cook 2 minutes, stirring constantly, until mixture thickens. Remove from heat. Add Romano cheese; stir until smooth. Add half-and-half, salt and pepper. Stir in spinach.
  • Add spinach mixture to fettuccine in Dutch oven; toss to coat. Divide mixture among 8 bowls; sprinkle evenly with bacon.
