2 cups all-purpose flour
2 eggs plus 4 egg yolks
1/3 cup loosely packed tarragon leaves, finely chopped
Kosher salt
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil
1 shallot, minced
Kosher salt
4 cloves garlic, minced
1/2 teaspoon crushed red pepper
1/2 cup vodka
Two 14-ounce cans no-salt-added diced tomatoes
1/4 cup loosely packed tarragon leaves, chopped, plus small leaves for garnish
3 fresh basil leaves, chopped
1 lemon, zested
1/2 cup heavy cream
1 tablespoon extra-virgin olive oil
Two 6-ounce lobster tails, chopped into 1-inch pieces
Kosher salt
1/2 lemon

Steps:

  • For the pasta dough: Create a mound of flour on a clean, flat work surface. Using your fingers, make a well in the center of the mound. Pour the eggs and egg yolks into the well; add the tarragon and 1 tablespoon water. Using a fork, whisk the eggs while incorporating the flour from the inside of the mound, working outward until the flour and eggs are combined. With the palms of your hands, knead the dough. If the dough seems dry and shaggy, dampen your hands with water and knead until the dough is moist but not wet. If it feels wet, add flour, 1 teaspoon at a time. Knead the dough until smooth and elastic, about 10 minutes. Wrap the dough in plastic wrap and allow to rest at room temperature for 30 minutes.
  • For the vodka cream sauce: Meanwhile, heat the butter and oil in a medium saucepan over medium heat until the butter is melted. Add the shallot, sprinkle with salt, and cook until softened, 5 to 7 minutes. Add the garlic and crushed red pepper and cook until fragrant but not burned, 1 to 2 minutes. Remove the pan from the heat before carefully adding the vodka and tomatoes. Then put the pan back over medium-high heat and simmer until the alcohol has evaporated, 5 to 7 minutes. Stir in the tarragon, basil and lemon zest. Then lower the heat to medium-low and add the heavy cream; cook for 3 to 5 minutes, until the sauce thickens. Cover and keep warm over low heat.
  • To make the linguine, remove the dough from the plastic wrap. Cut the dough into equal quarters and roll each into a small, thick log. Use your hands or a rolling pin to flatten the logs of dough. Feed one piece of dough through a pasta roller set to the widest setting. Fold the dough into thirds and continue to rolling, adjusting the setting to achieve desired thickness. Cover with a thin towel and repeat with the remaining dough logs. Cut the sheets into the preferred noodle length.
  • Switch the pasta roller to a linguine cutter. Feed each sheet through the cutter. Flour the noodles and then separate them, or hang them to dry to prevent sticking. Repeat with all of the pasta sheets.
  • Bring a large pot of salted water to a boil over medium-high heat. Add the fresh pasta and cook until al dente, about 3 minutes. Remove the pasta and transfer to the pan with the sauce. Turn off the heat and gently stir just to coat the noodles.
  • For the lobster: Heat the oil in a heavy medium skillet over medium-high heat. Add the lobster pieces, sprinkle with salt and cook until the lobster is cooked through, 3 to 5 minutes. Squeeze the lemon over the lobster.
  • Transfer the pasta to serving bowls, cover with a spoonful of sauce and top with the cooked lobster. Garnish with tarragon leaves and serve.

1 pound rigatoni or penne pasta
2 tablespoons olive oil
4 ounces diced pancetta, optional
1 medium yellow onion, finely chopped
2 garlic cloves, finely chopped
1/2 teaspoon red-pepper flakes
3/4 cup vodka
1 (28-ounce) can crushed tomatoes
Freshly ground black pepper
3/4 cup heavy cream
1/4 cup grated Grana Padano or Parmesan cheese, plus more for serving
1 tablespoon roughly chopped fresh oregano
2 tablespoons roughly chopped Italian parsley

Steps:

  • Bring a large pot of salted water to a boil (2 heaping tablespoons kosher salt to about 7 quarts water). Add the pasta and cook according to package instructions until al dente.
  • Meanwhile, prepare the sauce: Heat the oil in a deep 12-inch skillet or pot over medium. Add the pancetta, if using, and fry until crispy, stirring occasionally, 3 to 5 minutes. Add the onion, garlic and red-pepper flakes and cook, stirring occasionally, until onion is translucent, about 3 minutes. Turn the heat to medium-low, add the vodka and cook until reduced by half, 2 to 3 minutes.
  • Stir in the tomatoes and then fill the can halfway with water and swish it around to loosen up any leftover tomatoes; add a quarter to half of the water to the pan. Simmer until the sauce begins to thicken, about 10 minutes, and season with salt and pepper. If you prefer your sauce a little looser, go ahead and add the remaining water and simmer 2 to 3 minutes more. Reduce heat to low, add the cream and cook, stirring, until the sauce becomes an even pinkish-rust color, about 1 minute.
  • Stir in the cooked pasta and 1/4 cup cheese; toss to coat. Season to taste with salt and pepper. Divide among bowls, top with additional cheese, if desired, and sprinkle with the oregano and parsley.

1 small to medium onion
EVOO
4 tablespoons butter
3 large cloves garlic
Salt
1 teaspoon Calabrian chili paste OR 1/2 teaspoon crushed red pepper flakes
1 cup vodka
1 can (28 ounces) Italian crushed tomatoes
A few leaves of basil, torn, plus a few to serve
1 pound penne rigate pasta
1 pound large raw shrimp, deveined and tails removed
1 lemon
1/4 cup Pernod or white vermouth
A handful flat-leaf parsley, finely chopped
1 cup heavy cream
A handful freshly grated Parmigiano-Reggiano cheese, plus some to pass at table, optional ( -- and controversial to some Italians)

Steps:

  • Place a large pot of water on the stove for pasta. Also put up a deep skillet for sauce and a nonstick skillet for shrimp.
  • Gather your ingredients.
  • Peel and finely chop the onion.
  • In a large deep skillet, heat EVOO, a turn of the pan. Add 2 tablespoons butter and when it foams add the onions. Stir to soften while you peel and chop the garlic. Add 2 cloves of chopped garlic to onions and season with salt. Stir in 1/2 teaspoon of chili paste or about 1/4 teaspoon of red pepper flakes. Add vodka and reduce by half, 2 to 3 minutes. Add tomatoes and tear in a few leaves of basil. Reduce heat and simmer sauce, 10 minutes.
  • Season pasta water with a fat tablespoon of salt, add penne and cook 1 minute less than package directions, about 8 minutes. Have a mug or measuring cup on hand.
  • Add shrimp to a medium bowl and toss with remaining garlic. Thinly slice a lemon and toss with shrimp.
  • In the second skillet, heat EVOO, 2 turns of the pan, over medium-high and melt in 2 tablespoons butter. Add the shrimp mixture and toss 2 to 3 minutes; shrimp should be pink and opaque. Add a splash of Pernod or vermouth, the remaining red pepper flakes, a little salt and parsley; toss. Turn off heat.
  • Add cream to sauce and stir. Add shrimp to sauce, bring back to a bubble and turn off heat.
  • Reserve about 1/2 cup of starchy salty water and drain pasta or transfer to sauce with a spider. Toss pasta with sauce and grated cheese, using water to loosen as necessary.
  • Transfer pasta to large serving bowl or to individual shallow bowls to serve.

CHICKEN AND LINGUINE IN CREAMY VODKA SAUCE

1/2 lb uncooked spinach linguine or 1/2 lb regular linguine
4 tablespoons butter, divided
2 boneless skinless chicken breasts
1/2 cup chopped yellow onion
1/2 cup sliced mushrooms
1/4 cup chopped roasted red pepper
1/4 cup chopped green onion
4 cloves garlic, minced
1/2 cup good vodka
1 cup unsalted chicken stock
2 cups half-and-half
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 tablespoons grated parmesan cheese
3 tablespoons chopped fresh basil
salt and pepper

Steps:

  • Cook linguine according to package directions; drain and set aside.
  • In a large skillet, melt 2 Tbsp butter over medium-high heat.
  • Brown the chicken breasts on both sides until nicely golden and juices run clear, about 6 to 7 minutes per side.
  • Remove from pan and cut into 1/2-inch cubes; set aside.
  • Pour out drippings from pan, but do not wipe it out.
  • In the pan you cooked the chicken in, melt remaining butter over medium heat.
  • Add the yellow onion and mushrooms and cook, stirring, until onions are soft, about 3-5 minutes.
  • Add the roasted pepper, green onion, and garlic and cook, stirring, for 30 seconds.
  • Remove the pan from the heat and add the vodka.
  • Return to the heat and flame; when the flame dies out, add the broth.
  • Bring to a boil and reduce by half.
  • Whisk in the half and half (cream can be substituted), salt, and pepper, and simmer until reduced by half again.
  • Add the pasta to the cream sauce and toss to coat.
  • Add the Parmesan, chicken, and basil, and remove from the heat; toss to coat.
  • Season to taste with salt and pepper, serve, and enjoy!
  • Makes 2 servings.
  • Note: if you're a low-carber, add a bunch more sliced mushrooms and eat those instead of pasta.

LUXURIOUS PASTA WITH VODKA CREAM SAUCE

½ lb. mezzi rigatoni with ridges, or penne with ridges
1 medium onion, chopped
4 garlic cloves, sliced
3 oz. triple - concentrated tomato paste in a squeeze tube
¾ cup of grated parmesan cheese, more for plated garnish
2 oz. vodka ( smooth character )
¾ cup heavy cream
1 cup or so of reserved pasta water
pinch of red pepper flakes
olive oil
parsley for garnish

Steps:

  • Start your water boiling for the pasta, make sure it's salted
  • Have all your ingredients ready to go.
  • Drizzle olive oil into a heavy bottomed pan.
  • Saute the onion and garlic until the onion starts to brown around the edges, could take 5 or so minutes.
  • Squeeze tomato paste in along with red pepper flakes.Sir well until the paste coats the onion.
  • Continue stirring until the paste reaches a deep red color and starts to brown on the bottom of the pan, around 5 or so minutes.
  • Add the vodka and deglaze the pan, stirring to incorporate, reduce heat to low.
  • Using a heatproof measuring cup scoop ¼ cup of the boiling water from the pot, then add all the cream to the hot water, this will temper the cream so it doesn't break when added into the sauce.
  • Slowly add the warm cream into the pot, stirring to incorporate.
  • Remove from heat for a few minutes.
  • Add the pasta to the pot of boiling water and cook it al dente according to box instructions.While pasta is boiling, add a little pasta water so it's not so thick.
  • Reserve a good cup of the pasta water to add to sauce to thin out later if needed.
  • When cooked, transfer the pasta into the sauce pot using a spider (as pictured in post).
  • Toss everything together, adding pasta, then the grated cheese, plus enough of the pasta water to have the right consistency.
  • Sauce should be smooth, glossy and coating each piece of the pasta, not runny.
  • Toss in some chopped parsley.
  • Garnishing each plate with a drizzle of olive oil, cheese and more parsley.
  • Enjoy!

  • Heat a large skillet over moderate heat. Add oil, butter, garlic, and shallots. Gently saute shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan, 3 turns around the pan in a steady stream will equal about 1 cup. Reduce vodka by half, this will take 2 or 3 minutes. Add chicken stock, tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.
  • While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it). While pasta cooks, prepare your salad or other side dishes.
  • Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Pass pasta with crusty bread.

Sit back and tuck into a big bowl of pasta alla vodka, a creamy tomato pasta with - as you can guess - vodka, which balances out the intense flavours

2 tbsp olive oil
1 banana shallot or ½ onion, finely chopped
3 garlic cloves, crushed
¼ tsp chilli flakes
100g tomato purée
5 tbsp vodka
100ml double cream
200g penne or rigatoni pasta
30g grated parmesan or vegetarian alternative, plus extra to serve
small handful of basil leaves, to serve

Steps:

  • Heat the oil in a large frying pan or casserole dish. Add the shallot and a large pinch of salt and gently fry over a low heat for 10 mins or until softened and translucent. Add the garlic and chilli flakes and cook for 30 seconds. Stir through the tomato purée, cook for 2 mins, then stir through the vodka and cook for 3 mins. Quickly stir through the cream to combine, then remove from the heat.
  • Cook the pasta in salted water following pack instructions. Drain and reserve 150ml cooking water. Add roughly 50ml of the water to the tomato sauce, then tip in the pasta and cheese, tossing everything together over a low heat until well coated and glossy (loosen with a splash more of the cooking water if it's a little dry). Season to taste, then serve with a sprinkling of the extra parmesan, a good grinding of black pepper and the basil leaves scattered over the top.
