BACON, SPINACH, AND EGG SCRAMBLE

This is my new favorite way to scramble eggs. I don't have the cooking chops to flip an omelet, but I can mix the same ingredients together. It may not be as pretty, but it tastes just as good!

1 egg
2 egg whites
1/2 fresh spinach, chopped
2 slices bacon, sliced
1 tablespoon milk
1 tablespoon shredded cheddar cheese
salt and pepper

Steps:

  • Fry chopped bacon in a non stick skillet.
  • Beat together egg, egg whites, milk, salt, and pepper.
  • When bacon is almost done, add chopped spinach and saute until just wilted.
  • Add egg mixture and scramble.
  • Top with cheddar cheese.

1 tbsp rapeseed oil , plus 1 tsp
3 tomatoes , halved
4 large eggs
4 tbsp natural bio yogurt
⅓ small pack basil , chopped
175g baby spinach , dried well (if it needs washing)

Steps:

  • Heat 1 tsp oil in a large non-stick frying pan, add the tomatoes and cook, cut-side down, over a medium heat. While they are cooking, beat the eggs in a jug with the yogurt, 2 tbsp water, plenty of black pepper and the basil.
  • Transfer the tomatoes to serving plates. Add the spinach to the pan and wilt, stirring a few times while you cook the eggs.
  • Heat the rest of the oil in a non-stick pan over a medium heat, pour in the egg mixture and stir every now and then until scrambled and just set. Spoon the spinach onto the plates and top with the scrambled eggs.

2 slices brown bread (wholemeal)
3 large eggs
100 g baby spinach leaves (3 handfuls)
125 g feta cheese
15 ml extra virgin olive oil

Steps:

  • Mix the eggs together in a bowl.
  • Cut the feta into small cubes and add to egg mixture.
  • Put spinach leaves in a pan and drizzle with olive oil. Put the bread in the toaster.
  • Once the spinach leaves are slightly cooked add the egg and feta mixture.
  • Once cooked serve the egg, feta and spinach mixture on the toast.

This is something that my Nee used to cook as a quick side dish. Don't be afraid, it really is a good dish despite the weird combination of ingredients.

1/2 cup onion, chopped
1 (16 ounce) package frozen spinach
2 tablespoons butter
1/4 cup water
2 eggs
seasoning salt

Steps:

  • In a large skillet, saute your onion in the butter until translucent.
  • Dump the frozen spinach into the skillet with the onion and add the 1/4 cup water. Cover and cook on medium heat, stirring occasionally to keep the spinach from sticking.
  • Once the spinach is wilted and appears done, pour in the 2 eggs which have been whisked well.
  • Stir continually until the egg turns white and the spinach appears "dry", but make sure not to overcook.
  • Sprinkle with seasoned salt (to taste) immediately before serving.

2 tablespoons flour
1/4 cup milk
3 tablespoons sour cream (or pureed cottage cheese)
2 eggs
salt & pepper
1/4 cup cheddar cheese, grated
1/2 cup fresh spinach, washed,dried and chopped fine
1 pinch thyme
lite olive oil

Steps:

  • Gradually mix the milk into the flour, whisk until smooth.
  • add sour cream (cottage cheese), eggs, thyme, salt& pepper.
  • Whisk until very well blended.
  • Stir in the cheese and spinach.
  • Heat skillet, spray with oil.
  • Over medium heat pour in the egg mixture, allow to firm on the bottom, with a spatula disturb the eggs and flip so you continually get the uncooked egg on the bottom.
  • Do not over cook the eggs.
