- Preheat the broiler. Arrange the tomatoes cut-side up on one half of a rimmed baking sheet and season with salt and pepper. Broil the tomatoes until they begin to soften, about 2 minutes. Remove from the broiler. Arrange the English muffins on the other half of the baking sheet and brush with 1 tablespoon olive oil. Set aside.
- Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add the shallot and cook, stirring, until soft, about 2 minutes. Add the Canadian bacon and cook, stirring, until lightly browned, about 3 minutes. Stir in the spinach until wilted; season with salt and pepper. Transfer the mixture to a bowl; keep warm. Wipe out the skillet.
- Heat the remaining 1/2 tablespoon olive oil in the skillet over medium-high heat. Crack the eggs into the pan, season with salt and pepper, and fry until the whites are set but the yolks are still runny, about 5 minutes. Remove the pan from the heat. Top the tomatoes with the cheese. Return the tomatoes and English muffins to the broiler; broil until the cheese is melted, 2 to 3 minutes. Divide the English muffins among plates, then top each with some of the spinach mixture and a fried egg. Serve with the broiled tomatoes.

- Prepare recipe for chicken breast.
- On high heat, heat 1 Tbsp oil in a skillet. Sear chicken 2 minutes on both sides. Turn heat down to low, close lid of the skillet and cook another 5-6 minutes, until chicken is tender.

- 1. In a small bowl add the chicken, onion, dip, and salt and pepper. Stir to combine. Chill at least 15 minutes for flavors to get happy.
- 2. Lay sliced bread out. butter one side of each piece. Next spread brie cheese on the other sides of each piece of bread.
- 3. Divide the chicken mixture up between five slices, putting chicken on cheese side.
- 4. Break bacon into and lay halves on top of chicken.
- 5. Next add three spinach leaves to top of bacon, then two tomato slices on each.
- 6. Top the mixture with the other slices of bread, cheese side down on top of sandwiches.
- 7. Heat a skillet or indoor grill for stove. Place sandwiches in skillet or grill. Set another heavey iron skillet on top. Cook about 3 to 4 minutes, flip and do the same on other side.

- Preheat oven to 400°F. Pull some bread from ciabatta rolls to form slightly hollow centers. Drizzle ciabatta rolls with olive oil. Spread roll bottoms with whole grain mustard. Sprinkle roll bottoms with half of Fontina cheese.

- Combine the 1st 7 ingredients in a lightly sprayed baking dish, mix well to combine.
- Bake at 350°F for 30 minutes or until bubbly.

- Stir together the artichokes, spinach, sour cream, fontina and Parmesan in a bowl. Season the mixture with salt and pepper to taste.
- Preheat a grill pan or panini press on medium heat.
- Spread the artichoke mixture on all the slices of bread. Place 1 layer of chicken on 4 of the bread slices, then top each with a couple of layers of roasted red peppers. Top with the remaining bread. Brush the outside of each sandwich with some olive oil.
- Place the sandwiches on the grill pan or in the panini press. If using a grill pan, place a cast-iron skillet or brick wrapped in foil on top of the sandwiches to weigh them down. Cook, flipping halfway through, until golden brown and the cheese is melted and gooey in the center, 3 to 5 minutes per side. If using a panini press cook 6 to 10 minutes total.
