1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
6 tablespoons butter, melted
1 egg
1 cup whole milk
½ cup frozen chopped spinach - thawed, drained and squeezed dry
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 cup muffin cups.
  • Mix the flour, baking powder, baking soda, and salt together in a mixing bowl.
  • Stir the melted butter, egg, milk, spinach, and Cheddar cheese together in a large mixing bowl until evenly blended. Slowly stir in the flour mixture to form a batter. Spoon about 2 tablespoons into each muffin cup.
  • Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 35 minutes.

Delicious savoury muffins packed full of vegetables like spinach and peppers; perfect for a family lunch or a kids afternoon snack!

2 medium eggs
150ml / 1/2 cup milk
75g / 1/2 cup butter, melted
150g / 2 cups grated cheddar cheese
1 spring onion, chopped
75g / 2 cups fresh baby spinach, chopped
1/2 red pepper, diced
250g / 2 cups self raising flour
1/2 vegetable stock cube (can use low or no sodium stock cube)
salt and pepper to taste (but can be left out)

Steps:

  • Preheat the oven to 180c / 350f and line a muffin tin with 12 muffin cases.
  • Gently whisk the eggs in a large bowl and stir in the milk and melted butter. Mix in the grated cheese, spring onion, baby spinach and diced pepper.
  • Finally, add in the flour, salt and pepper (if using) and crumble in the stock cube and mix just enough until all the ingredients have combined.
  • Divide the mixture between the 12 muffin cases and bake in the oven for 20-25 minutes until cooked through (a skewer stuck into the middle should come out dry).
  • These muffins can be frozen once they have cooled completely. To defrost simply leave out for a few hours or overnight.

1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), chopped
1 ½ cups whole wheat all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon garlic powder
⅛ teaspoon ground black pepper
⅛ teaspoon paprika
1 cup milk
1 cup shredded Cheddar cheese
6 tablespoons butter, melted
½ cup chopped fresh spinach
1 egg
¼ cup chopped onion
5 basil leaves, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups.
  • Heat a skillet over medium heat; cook and stir luncheon meat until browned on all sides, about 5 minutes.
  • Whisk flour, baking powder, baking soda, salt, garlic powder, pepper, and paprika together in a bowl. Mix luncheon meat, milk, Cheddar cheese, butter, spinach, egg, onion, and basil together in a separate bowl; slowly stir into flour mixture just until batter is mixed. Pour batter into muffin cups until each is 3/4-full.
  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 33 minutes.

1/3 cup butter or 1/3 cup margarine, melted
1 egg
2 cups all-purpose flour
1/4 cup parmesan cheese, freshly grated
2 tablespoons green onions, chopped
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup fresh spinach, coarsely chopped, stems trimmed off
1/2 cup swiss cheese, grated
parmesan cheese, for sprinkling on top

Steps:

  • In large bowl beat milk, butter and egg.
  • In a separate bowl stir together flour, 1/4 cup Parmesan, green onion, baking powder and salt.
  • Fold flour mixture, spinach and Swiss cheese into milk mixture until just combined.
  • Divide evenly among 12 greased muffin cups and sprinkle additional Parmesan on top.
  • Bake in preheated 400 degree oven for 18 to 20 minutes, until golden brown.
  • Try decreasing butter to 1/4 cup, increasing green onion to 1/3 cup and spinach to a full cup. Add fresh ground black pepper and 2 Tbsp chopped basil or dill.

I got this recipe yesterday from a recipe group and made it last night. The original recipe called for Jack cheese (and only half the amount), low fat milk, no garlic or onion or Parmesan and used white bread. I played with it and this is what I came up with. It turned out quite nicely as a side dish to Lamb chops but I imagine it would also make a lovely vegetarian main dish served with a salad on the side.

6 large eggs
1 cup milk
1 cup heavy cream (whipping cream)
2 garlic cloves, minced
1/2 cup green onion, sliced thin
1 1/2 tablespoons cooking oil
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
1/8 teaspoon ground nutmeg
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
2 cups shredded swiss cheese
16 ounces French bread, crusts removed and cut into cubes
3 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 375°F.
  • Sautee onions and garlic in oil in small pan until soft but not browned. Set aside to cool.
  • In large bowl, with wire whisk or fork, beat eggs, milk, cream, thyme, salt, pepper, and nutmeg until blended.
  • With rubber spatula, stir in spinach, cheese, onion/garlic mixture and bread.
  • Pour mixture into 13" by 9" ceramic or glass baking dish (do NOT use metal pans for ANY bread pudding as they can easily pick up a metallic flavor).
  • Sprinkle Parmesan cheese over the top of the pudding mixture.
  • Bake bread pudding 20 to 25 minutes or until browned and puffed and knife inserted in center comes out clean.
  • Remove bread pudding from oven; let stand 5 minutes before serving.

2 1/2 cups all-purpose flour
4 teaspoons baking powder
1/4 teaspoon ground cayenne pepper or 1/2 teaspoon ground black pepper
2 ounces firm feta cheese, chopped into smallish cubes (75 grams)
1/4 cup asiago cheese or 1/4 cup parmesan cheese, finely grated
2 eggs
1 1/2 cups milk
1/4 cup canola oil or 1/4 cup vegetable oil
7 ounces fresh spinach leaves, can use baby spinach leaves (200 grams)
3/4 cup sun-dried tomato, chopped

Steps:

  • Preheat oven to 390°F (200°C) if using fan-forced oven or 420°F(215°C) if not using a fan-forced oven.
  • Spray a 12 muffin tray with cooking oil or grease with butter (ensure thoroughly coated). Can use paper cases to line instead of spray or butter if you wish.
  • Combine the flour, baking powder and pepper in a large mixing bowl. Mix thoroughly with a balloon whisk.
  • In another mixing bowl or a large jug - whisk the eggs, milk and oil together. Stir through the chopped spinach and the sliced sun-dried tomatoes. Gentley stir in the crumbled fetta and the finely grated asiago (or parmesan) cheeses.
  • Combine the wet and dry ingredients. Fold together gently -until just mixed. Do not overbeat or you will end up with 'heavy' muffins.
  • Spoon into the greased or paper-lined muffin pans.
  • Bake approx 15 - 25 minutes, until well risen and golden. Allow the muffins to cool in the pans for 5 minutes. Serve warm or reheat later.

200g fresh spinach
100g cheddar, grated
1 tbsp dried thyme
2 eggs
5 tbsp Greek yoghurt
150g plain white flour
150g wholemeal flour
3 tsp baking powder
butter to grease

Steps:

  • Set the oven to 180. Place the spinach in a food processor and blitz until shredded (not pureed). Add to a bowl along with the grated cheese and dried thyme.
  • Crack the 2 eggs into a bowl and mix along with the yoghurt.
  • Sieve the flour and baking powder over the bowl then mix well to combine
  • Spoon into a muffin tray and bake for 20-25 minutes before allowing to cool.
