The Best Spinach Artichoke Dip image

This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

Nonstick cooking spray
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic, grated
One 10-ounce box frozen leaf spinach, thawed, drained, squeezed dry and coarsely chopped (see Cook's Note)
One 14-ounce can artichoke hearts, drained well and coarsely chopped
1/2 cup shredded whole-milk mozzarella
3/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper
Crackers, chips or toasted bread, for serving

Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
  • Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. Transfer the mixture to the prepared baking dish and top with the remaining 1/4 cup Parmesan.
  • Bake until the dip begins to bubble, 20 to 25 minutes. Turn the oven to broil and continue to cook, keeping an eye on it so it doesn't burn, until the top is golden brown, about 5 minutes. Serve warm with crackers, chips or toasted bread.

3 pounds small red potatoes
1 (9-ounce) package frozen chopped spinach
1 (8-ounce) package cream cheese, softened
3/4 cup mayonnaise
1/2 cup buttermilk
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons white wine vinegar
2 garlic cloves, minced
2 teaspoons dried Italian seasoning
1 teaspoon salt
1/2 teaspoon freshly ground pepper
2 (3-ounce) jars marinated artichoke hearts, drained and chopped
3/4 cup freshly grated Parmesan cheese
3/4 cup chopped red onion
1 1/2 cups coarsely crushed kettle-cooked potato chips

Steps:

  • Cook potatoes in boiling water 20 to 25 minutes or just until tender. Drain; cool 15 minutes. Cut into cubes. Cook spinach according to package directions, and press between paper towels. Whisk together cream cheese and next 8 ingredients in a large bowl. Stir in artichoke hearts, next 2 ingredients, and spinach; gently stir in potatoes. Sprinkle with potato chips; serve immediately.

8 green onions, chopped
6 hard-boiled large eggs, sliced
1/2 pound fresh mushrooms, sliced
1 can (8 ounces) sliced water chestnuts, drained
1 jar (6-1/2 ounces) marinated artichokes, drained and quartered
8 bacon strips, cooked and crumbled
DRESSING:
1/2 cup cider vinegar
1/2 cup sugar
1/2 teaspoon salt
1/2 teaspoon ground mustard
1 teaspoon grated onion
1 cup vegetable oil

Steps:

  • In a large bowl, combine the first seven ingredients. For dressing, combine the vinegar, sugar, salt, mustard and onion in a blender; cover and process until smooth. While processing, gradually add oil in a steady stream. Drizzle over salad; gently toss to coat. Refrigerate any leftover dressing.

2 (15-ounce) cans artichoke hearts packed in water, drained and sliced
1 clove garlic, finely chopped
2 teaspoons lemon zest
1 tablespoon lemon juice
2 tablespoons red wine vinegar
1/4 to 1/3 cup extra-virgin olive oil
Salt and pepper
A handful shredded Parmigiano-Reggiano

Steps:

  • Combine spinach and artichokes. Place garlic, lemon zest and juice in small dish and add vinegar. Let it stand 5 minutes then whisk in extra-virgin olive oil. Pour oil and vinegar dressing over salad and toss to combine. Season the salad with salt and pepper, to your taste. Top the salad with cheese then serve.

  • Heat olive oil and butter together in a saucepan. 1/4 cup olive oil
2 tablespoons unsalted butter
3/4 cup diced white onions or 3/4 cup yellow onion
1 1/2 tablespoons minced garlic
1/2 cup all-purpose flour
1 1/2 cups chicken stock (vegetable works too!)
1 1/2 cups heavy cream
3/4 cup grated parmesan cheese
2 crumbled bouillon cubes (optional if you want to make a vegetarian version)
1 1/2 tablespoons lemon juice
1 teaspoon sugar
3/4 cup sour cream
12 ounces frozen spinach, defrosted, drained, wrung out by hand and coarsely chopped
6 ounces artichoke bottoms, drained and cut into slices
1 cup finely shredded monterey jack cheese
3/4 teaspoon Tabasco sauce

Steps:

  • In a large saucepan, warm the olive oil and butter over medium heat. When butter has melted, add onion and cook, stirring occasionally, until wilted, 3-4 minutes.
  • Stir in garlic and cook 2-3 minutes longer, stirring frequently and stopping before onion and garlic start to brown.
  • Sprinkle the flour over and continue cooking, stirring continuously, until the mixture turns a golden-blond color, about 10-15 minutes. Slowly add the stock, whisking continuously until it is smoothly incorporated.
  • When the mixture begins to simmer, stir in the cream. Return to simmer. Remove from heat and add the Parmesan, bouillon cubes, lemon juice and sugar and stir until thoroughly blended.
  • Add the sour cream, spinach, artichoke bottoms, Monterey Jack and Tabasco sauce. Stir until all ingredients are thoroughly combined and the cheese is melted.
  • Transfer to a warm serving bowl and serve immediately, accompanied by tortilla chips, pita chips or toasted baguette slices.
  • I make mine the day before, refrigerate and then heat up in a 350°F oven for about 30 minutes or until heated through.

1/4 cup sweet onion, chopped
1 tablespoon butter

Steps:

  • Microwave spinach according to package directions, drain and squeeze dry; set aside.
  • In medium size bowl microwave onion and butter 2-3 minutes until tender.
  • In large mixing bowl blend cream cheese and heavy cream until smooth. Fold in the spinach, artichoke, onion, montery jack, mozzerella, swiss, cayenne and black pepper.
  • Transfer dip to a 9 inch microwave safe pie dish. Sprinkle with parmesan cheese. Microwave for 4-5 minutes or until bubbly.
  • Serve with crackers, sliced baguette or tortilla chips.

1 lb baby yukon gold potato, peeled and quartered
1 (14 ounce) can artichoke hearts, drained and divided
0.5 (10 ounce) package frozen spinach
1/4 cup skim milk
1/4 cup sour cream
2 tablespoons margarine
2 tablespoons parmesan cheese, grated
1 garlic clove, minced
salt and pepper

Steps:

  • Cover potatoes in cold, salted water in a large saucepan. Bring to a boil, reduce heat to medium and simmer for 20 minutes or until soft.
  • Meanwhile, puree half of the artichoke hearts in a food processor. Set aside.
  • Roughly chop remaining artichokes. Set aside.
  • Defrost spinach. Thoroughly squeeze dry and season to taste with salt and pepper. Set aside.
  • Drain potatoes. Return to the saucepan. Add the pureed artichokes, margarine, parmesan cheese, sour cream, milk, and garlic to the potatoes. Blend with a hand mixer until creamy.
  • Fold in chopped artichokes and spinach. Season to taste with salt and pepper.
