OUZO SPRITZ WITH PICKLED WATERMELON RIND

- For the pickled watermelon rind: Slice off each end of the watermelon and discard. Stand the watermelon up and begin trimming the thin green layer off, leaving the white pith layer on the watermelon. Depending on the size, slice the watermelon in half widthwise so it is easier to work with.
- Trim the white rind off in the same way the green rind was removed. When all the white rind has been removed, trim each piece into a 1-by-6-inch plank. (This measurement doesn't have to be exact, you are just trying to create pieces of relatively the same size and thickness.) Trim any remaining pink parts off. Wedge as many planks as you can into a 32-ounce wide-mouthed glass jar with lid. Discard the rest.
- Combine the cider vinegar, 1 cup water, sugar, salt and aromatics in a saucepot over high heat and bring to a boil. Whisk to dissolve the sugar, then pour over the rinds while hot. Allow to cool to room temperature before refrigerating. Refrigerate overnight before using. The rinds will keep up to 1 month in the refrigerator.
- For the ouzo spritz: Fill 2 lowball glasses with ice. Place the ouzo, lemon juice, egg whites and pickling liquid in a cocktail shaker without ice. Vigorously shake to froth the egg whites, then strain into the glasses. Top with seltzer and garnish with a spear of pickled watermelon rind and a sprig of mint.

SPICY WATERMELON RIND SPREAD
One of summer's gift to the world is watermelon. We all know it as a thirst quencher loaded with antioxidants, but most of us dispose the rind (the white part between the the green outer husk and the red inner fruit) without knowing it has nutritional value too. We can use it in our cooking as salads, chutney/ dip/ spread and in moru kuzambu/ spiced buttermilk. Slice only the white part from the green rind.

Steps:
- Slice only the white part (the white part between the the green outer husk and the red inner fruit) from the green rind.
- Dry the (can) garbanzo beans in a towel. Heat oil in a pan and add garbanzo beans, chili flakes and garlic, stir fry it for 2 minutes.
- Now add the chopped watermelon rind and fry for few mins.
- Add the cilantro leaves and stir it till it becomes wilted (this step is optional)
- Add the chopped tomato and cook, till the tomatoes are well blended.
- Pour the lemon juice and cook till it becomes dry. Add salt
- Grind the mixture in a blender.
- Transfer it to a bowl, We can add cream cheese with it and use it as a sandwich or tortilla spread or as a dip.

PICKLED WATERMELON AND WATERMELON RIND
This is a great way to have some fruit mixed in with your pickled vegetables. The pickling liquid is also delicious. I use the liquid in marinades for meat, salad dressings or sauce, and even cocktails! I do pickled rind and pickled watermelon at the same time to maximize the use of the fruit. I start with a huge wedge of melon (because you will nibble, and so will everyone else as they see you making this) and cut the cubes. Cut the rind (not the skin) into small pieces once you have removed the flesh.

- In a small saucepan, combine the vinegar, sugar, salt and 4 cups water over medium heat. Bring up to a boil. Place the coriander and peppercorns on a cutting board. Lightly crush the spices with the bottom of a sturdy pan, then add them to the liquid. Turn the heat down to low, and simmer for 5 minutes. Taste for seasoning. It should be a mix of vinegary, sweet and slightly salty. Shut it off to cool slightly.
- Fill a quart-size jar with the watermelon cubes and a pint-size jar with the rind pieces.
- Pour the vinegar mixture over the melon and rind and let it cool at room temperature, uncovered, for 2 hours. Place in the refrigerator and let it chill, uncovered, overnight. Then cover tightly. The pickles will be good for 2 to 3 weeks in the refrigerator.
PICKLED WATERMELON RINDS
Steps:
- Combine 6 cups of water with the salt in a pot and bring to a boil. Add the watermelon rinds and boil until slightly tender, about 10 minutes. Drain and set the rinds aside.
- Combine the sugar, vinegar, mustard seeds, peppercorns, red pepper flakes, bay leaf, cinnamon and ginger with 1 cup water in a small pot. Bring to a gentle simmer, add the rinds and cook for 10 minutes. Let cool, then transfer to a pickling jar or a releasable glass container. Store in the refrigerator.
WATERMELON RIND PRESERVES
This is an old-fashioned recipe and a wonderful way to reduce food waste. Watermelon rind preserves are not like traditional preserves that you buy in a grocery store. They are more like candied watermelon pieces in a cinnamon-spiced syrup. The watermelon pieces can be eaten plain or stirred into cakes and cookies, as you would use candied cherries, pineapple or citrus peel. - Trim green skin and pink flesh from watermelon rind; chop enough rind to yield 6 cups. In a large bowl, stir salt and 2 quarts warm water until salt is dissolved. Add 6 cups chopped rind. Cover and refrigerate 5-6 hours. Drain and rinse in cold water; drain. Cover rind with cold water and let stand 30 minutes. Drain. Transfer rind to a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer until just tender, 10-15 minutes; drain., To make preserves, in a stockpot, combine sugar, lemon juice and 7 cups water. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Stir in rind. Place cinnamon, cloves and cardamom on a double thickness of cheesecloth. Gather corners of cloth to enclose seasonings; tie securely with string. Add to stockpot. Return to a boil. Reduce heat; simmer, uncovered, until rind is clear, 30-45 minutes. Discard spice bag., Remove from heat. Ladle hot mixture into 6 hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with water simmering, ensuring that they are completely covered with water. Bring to a boil; process 5 minutes. Remove jars and cool.
