Quesadillas with Jack and Spicy Saute image

Provided by Aida Mollenkamp

Categories     main-dish

Time 30m

Yield 6 quesadillas

Number Of Ingredients 9

1 tablespoons peanut oil
1/2 medium yellow onion, halved lengthwise and thinly sliced
3 medium cloves garlic, thinly sliced
2 medium jalapenos, halved lengthwise, seeded, and thinly sliced crosswise
Salt and freshly ground black pepper
4 medium poblano peppers, quartered lengthwise, seeded, and sliced crosswise into 1/2-inch strips
1 1/4 cups low-sodium chicken broth
12 (6-inch) flour tortillas
3 cups shredded jack cheese

Steps:

  • Heat oven to 500 degrees F and arrange 1 rack in top and a second rack in middle.
  • Heat oil in a large frying pan over medium-high heat. When it shimmers, add onions, garlic, and jalapenos, season well with salt and freshly ground black pepper, and cook until softened, about 3 minutes. Add poblanos and stir to coat. Add broth and cook until the liquid reduces enough to just coat the vegetables, about 10 minutes. Remove from heat.
  • When pepper mixture is cool enough to handle, top 1 tortilla with 1/2 cup cheese and 1/6 of the pepper mixture, close with a second tortilla. Repeat to make 6 quesadillas.
  • Arrange quesadillas on 2 baking sheets and place 1 sheet on top rack and another on middle rack. Bake until cheese is melted, about 5 minutes. Switch baking sheets and continue to cook until tortillas are golden-brown and crisp, about 5 more minutes.

SPICY BREAKFAST QUESADILLAS

Spicy Breakfast Quesadillas image

A spicy and fun breakfast or brunch your whole family will love, with sausage, egg, cheese, and green onions. This is such a versatile dish. I basically make them with whatever I have on hand at the time. Serve with salsa, hot sauce, and sour cream, if desired.

Provided by Maryann D.

Categories     100+ Breakfast and Brunch Recipes     Eggs     Breakfast Sandwich Recipes

Time 30m

Yield 2

Number Of Ingredients 8

cooking spray
2 (4 ounce) links spicy pork breakfast sausage
3 large eggs
2 tablespoons milk
3 tablespoons chopped green onions
salt and ground black pepper to taste
4 (6 inch) flour tortillas
2 tablespoons nacho cheese sauce, or to taste

Steps:

  • Spray a skillet with cooking spray and heat over medium-low heat. Add sausages and cook, turning often, until cooked through and browned, 12 to 16 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Remove sausages from the skillet and chop when cool enough to handle.
  • Beat eggs in a small bowl with milk.
  • Spray a small skillet with cooking spray and set over low heat. Add the beaten eggs, green onions, salt, and pepper; cook until edges are set, then gently turn with a spatula until scrambled, 3 to 5 minutes. Remove eggs to a plate and wipe out the skillet with a paper towel.
  • Place 1 tortilla in the skillet over low heat. Top with 1/2 of the nacho cheese sauce, 1/2 of the chopped sausage, and 1/2 of the scrambled eggs. Top with another tortilla and cook, carefully turning once, just until lightly browned on both sides, about 5 minutes. Remove to a plate and repeat to cook remaining quesadilla.

SPICY CHICKEN QUESADILLAS - MY GOOF TURNED GOOD

Spicy Chicken Quesadillas - My Goof Turned Good image

Simple, spicy and quick! Let me explain the title: I had bought ingredients for 2 different recipes and was making the quesadillas. As I dumped the second can of tomatoes with chiles into the mix, I realized they were for the other recipe! Ooops! Well, guess what? It turned out pretty good! :) As most of my recipes, don't make this if your family doesn't care for spicy food.

Provided by Valina

Categories     Chicken Breast

Time 15m

Yield 4 quesadillas, 4-8 serving(s)

Number Of Ingredients 5

1 (10 ounce) can chicken breasts, strained and shredded
2 (10 ounce) cans tomatoes and green chilies (I prefer Rotel)
2 cups monterey jack cheese, shredded
1/4 cup green onion, sliced
8 flour tortillas (burrito size)

Steps:

  • Strain the tomatoes using a strainer. Make sure all liquid is out.
  • Mix shredded chicken, tomatoes, cheese, and onions.
  • Lay out 4 of the tortillas. Spread a thin even layer of the mix over the tortillas - making sure to cover the entire tortilla. Cover each with extra tortilla.
  • Using non-stick pan, lightly brown on both sides, making sure cheese melts.
  • Slice into 4-6 pieces and serve with sour cream, salsa, pico de gallo, salad --
  • We use this as a meal, but if you want to use it as appetizers, substitute the burrito-sized tortillas with 16 taco-sized. Spread the mixture over 8 of them and top with the other 8. Slice into 4 pieces.

SPICY QUESADILLA

  • Spread the sauce over the base of a flour tortilla, lay the sliced turkey on top of that, then the tomato, red onion and cheese. Season with salt and pepper. Place another tortilla on top of all of this and carefully move to a large non-stick pan.
  • Dry fry this until it starts toasting. Flip (you can use a plate to flip if it makes it easier) and cook the other side. I also put a lid on my frying pan which helps heat the quessadilla through.
