I found that these are a great way to get a bit more fish into our diet, plus they taste great. And by not frying the fish, these are pretty healthy, depending on your toppings. I love topping them with a mango or pineapple salsa and homemade coleslaw.

5 tilapia fillets
1 tablespoon olive oil
1 lime, juice of
1 tablespoon cumin
2 tablespoons southwest seasoning
salt
8 corn tortillas (small size) or 8 flour tortillas (small size)
cooking spray
sour cream (optional)
guacamole (optional)
minced onion (optional)
shredded cheese (optional)
fresh salsa (optional)
lime slice (optional)

Steps:

  • In a nonstick pan, heat over medium high heat the oil and then add the tilapia.
  • Season with half the lime juice, salt, cumin and southwest seasoning.
  • Once that side is cooked, flip and season, cooking till golden.
  • Heat a small pan over medium heat and then spray with cooking spray. Add tortilla, cooking and heating both sides.
  • Fill tortilla with a portion of fish and then top with desired toppings.

1/2 pound tilapia fillets, cut into small chunks
2 tablespoons extra-virgin olive oil
3 cloves garlic, chopped
1/2 to 3/4 teaspoon red pepper flakes
1/2 cup dry white wine
1 28-ounce can San Marzano tomatoes, crushed by hand
1/2 cup chopped fresh basil, plus more for topping
Kosher salt
10 ounces multigrain spaghetti
2 tablespoons chopped fresh parsley

Steps:

  • Toss the tilapia, 1 tablespoon olive oil, 1 teaspoon of the garlic and 1/4 teaspoon red pepper flakes in a medium bowl. Cover and refrigerate.
  • Heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Add the remaining garlic and 1/4 to 1/2 teaspoon red pepper flakes and cook, stirring, until the garlic starts to soften, about 30 seconds. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes, 1/4 cup basil and 1/2 cup water. Bring to a boil and cook, stirring occasionally, until the sauce is slightly thickened, about 12 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook as the label directs.
  • When the pasta is almost done, add the tilapia to the skillet with the tomato sauce and simmer, stirring gently, until just cooked through, about 3 minutes. Stir in the parsley and the remaining 1/4 cup basil; season with salt. Drain the pasta and add it to the sauce. Divide among bowls and top with more basil.

4 tilapia fillets (about 4-6 oz each)
1 tablespoon vegetable oil
2 tablespoons southwest seasoning (Emerils or recipes on genius kitchen)
1 ripe avocado
1/4 cup sour cream
3/4 teaspoon salt, divided
3 plum tomatoes
1/4 cup cilantro
1 jalapeno pepper, seeded
2 tablespoons lime juice
1 garlic clove, pressed
3 cups coleslaw mix
4 (11 inch) flour tortillas

Steps:

  • Prepare grill for direct cooking over medium coals. Season tilapia fillets with oil and seasoning mix. Lightly grease grid of grill. Grill fillets, covered, 5-6 minutes or until tilapia flakes easily with a fork, turning once. Remove tilapia from grill.
  • Mash avocado in medium bowl. Stir in sour cream and 1/4 tsp of the salt; cover and set aside. Dice tomatoes; set aside. Snip cilantro and finely chop jalapeño pepper. Combine cilantro, jalapeno pepper, lime juice, remaining 1/2 tsp salt and garlic in large bowl; mix well. Add slaw mix and tomatoes; mix well.
  • Spread tortillas with avocado mixture to within 1 inch of the edge. Place 1 cup slaw down center of each tortilla and top with tilapia. Fold in ends of tortillas and roll up tightly.

  • Mix the spices together in a small bowl and sprinkle evenly over both sides of the fish filets. (I like to season my fish a LOT, but just sprinkle on however much looks good to you.) Add salt and pepper to taste.
  • In a large nonstick skillet over medium high heat, heat a drizzle of olive oil. Add the garlic and saute for 1-2 minutes. Add the fish filets to the pan. Grill the fish on each side for several minutes, checking the middle for doneness (fish should be completely white and flake apart easily). Remove fish filets and set aside.
  • Add corn, red peppers, and onions to the pan with no additional oil. Heat over high heat for several minutes WITHOUT stirring to get a brown/black roasted look on the outside. Repeat for several minutes (stir, wait, stir, wait) until the peppers and onions are tender-crisp. Add the black beans and heat through.
  • Layer rice, corn/pepper mixture, and fish in a bowl – or mix everything together in the skillet. Top with any of the toppings listed above!
