This has been a favorite for years. Did not include marinating time in prep time. If you do not like too much spice, cut back on the cayenne pepper.

1/2 lb round steak, cut into thin slivers
7 tablespoons soy sauce, divided
2 tablespoons sugar, divided
1/2 teaspoon white pepper
3 tablespoons cornstarch
4 tablespoons oil, divided
3 tablespoons hoisin sauce
1 -2 teaspoon cayenne, to taste
2 cups celery, julienned
1 cup carrot, julienned
2 green onions, julienned
steamed white rice

Steps:

  • Combine 4 tablespoons of soy sauce, 1 tablespoon sugar, 2 tablespoons oil, white pepper, and cornstarch to form marinade. Add beef and let stand 30 minutes, or longer.
  • Combine 3 tablespoons soy sauce, 1 tablespoon sugar, hoisin sauce, and cayenne. Reserve.
  • Heat remaining oil in skillet over high heat. Add beef and stir fry for 3 minutes.
  • Meanwhile add vegetables to meat. Stir fry until just done, crisp tender.
  • Add prepared sauce. Cook until heated through, about 30 seconds.

This dish is hot enough to make you sit up and take notice, but the heat isn't so powerful that it overwhelms the flavors from the meat and veggies.

8-ounce sirloin steak
1 tablespoon cornstarch
2 tablespoons soy sauce
2 teaspoons mirin, divided
3 tablespoons of chili oil, divided
1 teaspoon brown sugar
1/2 teaspoon salt
1 red bell pepper
1 carrot
1/2 cup beef broth
1 teaspoon crushed red pepper
1 teaspoon Szechuan peppercorns

Steps:

  • Freeze the steak in the freezer overnight to make for easier slicing.
  • Take the steak out of the freezer 1 hour before you plan to cook it, and slice it into thin strips.
  • Place the steak strips into a large bowl along with the cornstarch, soy sauce, 1 teaspoon of mirin, 1 tablespoon of chili oil, brown sugar, and salt. Mix well and let the steak marinate for 15 minutes.
  • Slice the red pepper and carrots into thin matchsticks.
  • In a large pan, add 1 tablespoon chili oil and turn the heat to medium-high.
  • Cook the sliced red pepper and carrots for 3 to 4 minutes, then set aside.
  • Cook the marinated steak in 1 tablespoon of chili oil (in batches, if need be) for 3 to 4 minutes, stirring constantly.
  • Turn down the heat to medium-low and add the cooked vegetables, mix these together with all of the cooked steak strips.
  • Add the beef broth, 1 teaspoon mirin, the crushed red pepper, and the Szechuan peppercorns to the pan. Cook for 5 minutes until slightly thickened.
  • Serve the Szechuan beef over rice. If desired, garnish with spring onions and sesame seeds.

Hot cherry peppers and spicy black bean sauce give this dish its fire, but you can use sweet black bean sauce for a mellower version. To get closer to the original dish, seek out Sichuan peppercorns.

2 tablespoons low-sodium soy sauce
2 teaspoons cornstarch
1 English cucumber, peeled, halved lengthwise, seeded and cut into 3/4-inch chunks
2 stalks celery, chopped, plus celery leaves for topping
3 tablespoons Asian black bean sauce
4 pickled hot cherry peppers, chopped, plus 2 tablespoons brine
2 tablespoons vegetable oil
2 cloves garlic, minced
1 tablespoon minced fresh ginger
1 teaspoon mixed peppercorns
4 cups cooked jasmine rice

Steps:

  • Toss the steak with 1 tablespoon soy sauce and 1 teaspoon cornstarch in a large bowl. Combine the cucumber and celery in a separate bowl; set aside.
  • Stir the black bean sauce with the remaining 1 tablespoon soy sauce and 1 teaspoon cornstarch, the cherry pepper brine and 1/4 cup water in a small bowl; set aside.
  • Heat 1 tablespoon vegetable oil in a large nonstick skillet over high heat. Add the cucumber-celery mixture and cook, undisturbed, 1 minute. Toss and cook, stirring occasionally, until crisp-tender, 1 to 2 minutes. Transfer to a bowl.
  • Heat the remaining 1 tablespoon oil in the same skillet. Add the steak in a single layer. Cook until browned on the bottom, about 1 minute. Toss and continue cooking, stirring, until just a few pink spots remain, 1 more minute. Add the garlic, ginger and peppercorns and cook, stirring, until the meat is cooked through, 1 to 2 more minutes. Add the black bean sauce mixture and cherry peppers and bring to a boil. 3 tablespoons Chinese Shaoxing rice wine, dry sherry or white vermouth
1 pound beef sirloin, thinly sliced against the grain into strips
Kosher salt and freshly ground pepper
2 tablespoons oyster sauce
2 teaspoons toasted sesame oil
3 to 4 tablespoons peanut oil
1 1-inch piece fresh ginger, thinly sliced
2 cloves garlic, smashed
5 to 7 dried red chiles, halved
1 small onion, thinly sliced
8 heads baby bok choy, halved
Pinch of sugar
Cooked rice, for serving

Steps:

  • Whisk the cornstarch with 2 tablespoons rice wine in a medium bowl; add the beef, season with salt and pepper and toss to coat. Set aside for 15 minutes.
  • Mix the remaining 1 tablespoon rice wine, the oyster sauce and sesame oil in a large bowl; set the bowl near the stove.
  • Heat a wok or large nonstick skillet over high heat until very hot, about 1 minute. Add 3 tablespoons peanut oil, then the ginger, garlic and chiles; stir-fry until fragrant, about 1 minute. Add the beef and cook, stirring or shaking the skillet occasionally, 1 to 2 minutes. Transfer the beef with a slotted spoon to the sauce mixture and toss.
  • If the pan is dry, add 1 tablespoon peanut oil, then add the onion and stir-fry until just soft, about 2 minutes. Add the bok choy and sugar; stir-fry until just wilted, 1 to 2 minutes. Return the beef and any juices to the pan and stir to combine. Serve over the rice.

2 tablespoons chili bean paste
1 tablespoon tamari
1 tablespoon rice vinegar
1 teaspoon coconut sugar
1/2 teaspoon Chinese five-spice powder
4 red or green shishito peppers
2 red jalapenos, seeded if desired and thinly sliced
2 stalks celery, thinly sliced
1 carrot, thinly sliced
1 scallion, chopped

Steps:

  • Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the beef and cook, stirring occasionally, until browned, about 10 minutes; drain on paper towels. Meanwhile, in a medium bowl, stir together the bean paste, tamari, vinegar, coconut sugar and five-spice powder. Set aside.
  • In the same skillet, heat the remaining 1 tablespoon oil over high heat. 1 medium red bell pepper (sliced thin)
1 teaspoon ginger (minced)
1 teaspoon garlic (minced)
green onions for garnish (if desired)

1 pound strip steak or flank steak (sliced thin)
2 tablespoons cornstarch
2 tablespoons mirin
1 tablespoon low sodium soy sauce
3 tablespoons low sodium soy sauce
1/2 teaspoon chili oil

Steps:

  • Add the steak and the marinade ingredients to a large ziplock bag. Toss to coat and let the beef marinate for 15 minutes or while you are getting the sauce ingredients together.
  • Meanwhile in a small bowl combine the sauce ingredients, set aside.
  • When you are ready to cook heat 1 tablespoon oil in a large skillet over medium high heat.Add in beef (discard marinade). Sear beef for 2-3 on both sides. Just until the beef is browned on the outside. Remove from the pan and set aside.
  • Add the remaining tablespoon of oil to the pan. Add in bell pepper, ginger, and garlic, and sauté for 3-4 minutes or until the pepper is tender.
  • Add the beef back to the pan along with the sauce. Simmer for 1-2 minutes or until the sauce is thickened.
  • Serve immediately with green onions and sesame seeds for garnish, if desired

2 teaspoons cornstarch
¼ teaspoon crushed red pepper
1 clove garlic, minced
2 tablespoons vegetable oil

2 small onions, cut into wedges
1 (8 ounce) can water chestnuts, drained
¼ cup chicken broth
½ cup peanuts

Steps:

1 lb round steak
2 tablespoons soy sauce
1/4 cup chili sauce (I use Heinz)
1 tablespoon dry sherry
1 teaspoon cornstarch
1/2 teaspoon ground ginger
1/4 teaspoon red pepper flakes
3 tablespoons vegetable oil
3 garlic cloves, smashed
1 bunch green onion, cut into 1 inch pieces

Steps:

  • Cut beef into thin slices (I do this when slightly frozen for more ease).
  • Mix soy sauce, chili sauce, sherry, cornstarch, ginger, and pepper flakes in a small bowl. Set aside.
  • Heat 1 T. oil in a wok. Add garlic and onions, stir fry 1 minute.
  • Remove to a bowl with a slotted spoon. Add remaining oil to wok.
  • Add meat a 1/3 at a time, stir frying until it loses it's red color.
  • Place in bowl with onions.
  • Add chili mixture to wok, heat until bubbly hot. Stir in meat and onion mixtures, stirring until sauce coats meat and onions and is warmed through.
  • Serve over rice.

3/4-pound New York strip steak or fillet
1/2 cup soy sauce
1 tablespoon honey
1 teaspoon red chili flakes

2 garlic cloves, blanched and chopped finely (about 1 tablespoon)

Steps:

  • Soak the bamboo or wooden skewers in cold water and refrigerate for 1 hour.
  • Cut the steak into 24 (3 by 1-inch) strips, each weighing about 1/2-ounce. Stick a skewer into each strip lengthwise and arrange on a large platter or baking pan. Refrigerate until needed.
  • Prepare the marinade: In a small bowl, combine all the marinade ingredients and pour over the meat, turning to coat all sides. Let marinate at room temperature for about 15 minutes.
  • Preheat the grill or broiler while the steak is marinating.
  • Prepare the sauce: In a small skillet, melt 2 tablespoons butter. Add the garlic and green onion and saute over medium-high heat until soft, about 2 minutes. 1 tablespoon oil
1 orange, zest of

  • Cut the carrot, chili pepper, garlic, and orange zests. Set aside.

  • Add the carrot and beef and stir fry for about 2 minutes to brown the beef.

  • Mix the potato starch and water in a small bowl and add the mixture into the pot for another stir.
  • Serve with rice, bread, or noodle. You can also take it as a main dish.

This used to call for a cheap cut of flank steak but flank steak has been 'discovered'. It's not worth $6-7 a pound. It is probably my fault, I spent years singing the glories of the stuff and people finally believed me. That is the way of it all. If you can find it use soy sauce made with water, soy beans, and salt and nothing else. It is much richer and better. Portions and cooking time are a guess.

  • Add oil, swirl to coat.
  • Add Crushed Red chilies, cook a few seconds.
  • Add Beef, stir fry 3 minutes.
  • Add ginger, stir fry 1/2 minute.
  • Push Meat to the sides of the wok.
  • Pour Sauce into the center of the wok.
  • Stir and thicken for 30 seconds.
  • Return the vegetables, stir and heat through.
  • Serve.
