SPICY SOUTHWEST TURKEY BURGERS WITH GARLIC AIOLI
This is a very zesty, garlicky, and spicy turkey burger that even my husband who normally does not like turkey burgers, well he raves about them. I like to put these on toasted buns and top the burger with pepper jack cheese. To kick up the spiciness to the next level add 1/2 teaspoon cayenne. If you can find it, I highly recommend using smoked salt. It adds an awesome smoky flavor to these, I always use it.

Steps:
- Chop your garlic and veggies.
- Sauté garlic and onion in olive oil on low heat for 7-10 minutes until soft and very light golden brown.
- Then combine turkey meat, garlic, onion, oil that you cooked garlic and onion in (very important), thyme, chipotle powder (or you could use one chipotle in adobo diced), roasted pepper, Worcestershire sauce, cumin, hot pepper sauce, or salt and pepper. Be careful not to overmix!
- Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with a little olive oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like. slather buns with Garlic Aioli.
- If you want to decrease the heat use plain old chili powder instead of chipotle and cut it back to 1/2 teaspoon.
- For Garlic Aioli.
- Mince garlic very fine, I like to sprinkle mine with salt and mash it but totally optional. Mix all ingredients together in small bowl, this will taste even better if it sits a while and will keep in the fridge for almost a week.
- Pile cooked cheeseburgers into buns. Serve and enjoy!

Steps:
- Toast cumin seeds and coriander seeds in small skillet over medium-high heat until aromatic and slightly darker in color, shaking skillet often, about 1 1/2 minutes. Cool. Finely grind toasted seeds in spice grinder or in mortar with pestle. Whisk mayonnaise, 2 tablespoons extra-virgin olive oil, fresh lemon juice, smoked paprika, garlic, and ground spices in small bowl. Season aioli to taste with salt and pepper. DO AHEAD: Aioli can be made 1 day ahead. Cover and refrigerate.
- Place turkey in medium bowl. Add 2 tablespoons aioli; mix gently. Using damp hands, divide turkey mixture into 4 equal portions, then form each into scant 3/4-inch thick patty, about 3 1/2 inches in diameter. Using thumb, make small indentation in center of each burger. DO AHEAD: Can be made 4 hours ahead. Cover and chill.
- Prepare barbecue (medium-high heat). Sprinkle burgers with salt and pepper. Brush onion slices and bell pepper pieces with oil; sprinkle with salt and pepper. Grill onions and bell peppers until soft and charred, about 4 minutes per side.
- Grill turkey burgers 5 minutes. Turn over; grill until almost cooked through, about 4 minutes. Top each burger with 1 cheese slice and grill until meat is cooked through and cheese melts, about 1 minute longer. Place 1 turkey burger on each of 4 bun bottoms. Arrange grilled red pepper pieces, then grilled red onion slices over. Top each with dollop of aioli and some arugula. Cover burgers with bun tops and serve with pickle wedges and corn chips.
SOUTHWEST TURKEY BURGERS
Most of the turkey burgers that I have had were overcooked and flavorless. This recipe was inspired by some friends of ours that put a Southwest spin on the burger. With a few tweaks these Southwest turkey burgers have become a staple recipe in our house. The patty is flavorful and plays well with some creamy guacamole and spicy salsa.

Steps:
- Combine turkey, eggs, onion, bread crumbs, 2 tablespoons oil, jalapenos, Worcestershire, mustard, paprika, chili powder, and cumin in a bowl. Form into 8 patties. Season lightly with salt and pepper.
- Heat remaining olive oil in a saute pan over medium to medium-high heat. Place patties in the hot pan and cover partially to help retain moisture, but not so much that the patties braise (boil). Cook until browned and halfway cooked through, about 4 minutes. Continue to cook until no longer pink and an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C), about 3 minutes more.
- Serve patties on toasted buns with guacamole and salsa.

- Start the caramelized onions by adding the butter and oil to a large skillet over medium low heat. Once the butter is melted add the onions and stir to coat in the butter and oil.
- Season the onions with the salt and pepper and cook over low heat for 30 minutes, stirring often so that the onions don’t burn. The onions are done when they are golden brown and caramelized. Add the onions to a bowl and cover until ready to use.
- While the onions are cooking you can make the aioli by adding all the ingredients to a small bowl and stirring to combine. Let the aioli sit at room temperature until you’re ready to add it to the turkey burgers.
- Mix the ingredients together for the turkey burgers and divide into 6 large or 8 smaller patties. Spray a large skillet with non stick cooking pray and cook the turkey burgers over medium heat for 5 minutes on each side until the turkey is no longer pink inside.
