SPICY BEEF BURRITOS
These beef burritos contain various peppers and seasonings on top of refried beans. Top them off with lettuce, sour cream, cheese, and wrap up in a soft shell.

- Mix jalapeno peppers, tomato, green chile peppers, green bell pepper, red bell pepper, onion, hot sauce, and cayenne pepper together in a large bowl.
- Cook beef in a large skillet over medium-high heat, stirring to break up clumps, about 5 minutes. Drain excess grease. Add jalapeno pepper mixture and burrito seasoning; cook, covered, stirring occasionally, until flavors combine, about 10 minutes.
- Pour refried beans into a saucepan over medium-low heat. Cook and stir until heated through, about 5 minutes.
- Warm each tortilla in the microwave until soft, 15 to 20 seconds. Spread a layer of refried beans on top. Divide beef mixture among tortillas. Top with lettuce, sour cream, and Cheddar cheese. Fold in opposing edges of each tortilla and roll up into a burrito.

SHREDDED BEEF BURRITO FILLING

- In a 6-qt. slow cooker, combine beef and broth. Cook, covered, on low until meat is tender, 6-8 hours. Remove meat; discard juices. When cool enough to handle, shred with two forks. Return to slow cooker., In a large skillet, heat oil over medium heat. Add onion and jalapenos; cook and stir until softened, 3-4 minutes. Add garlic and seasonings; cook 1 minute longer. Stir in crushed tomatoes and salsa; bring to a boil. Pour mixture over shredded beef; stir to combine. Cook, covered, on high until heated through, about 1 hour., Using tongs, serve on tortillas for burritos or tacos; add toppings as desired., Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.

SHREDDED BEEF FOR TACOS OR BURRITOS
We love tacos around here, so this is a favorite. I have used the meat to make burritos and enchiladas too. This recipe also works well with pork. The house smells so good when it is cooking! Leftovers freeze great too.

- Place onion in slow cooker and top with beef roast.
- In a small bowl, whisk together remaining ingredients and pour over beef roast.
- Cook on low for about 8 hours.
- Remove roast from slow cooker, reserving juice.
- Use 2 forks to shred meat; mix in enough of the reserved juice until it is the desired consistency.
- Use as filling to tacos, burritos, enchiladas, quesadillas, or nachos.

SPICY BREAKFAST BURRITOS WITH CHEESE

- Wrap the flour tortillas in paper towels and microwave them for 1 minute to make them pliable. Set them aside.
- Crumble the sausage finely into a large skillet over a medium heat and cook until brown, 5 to 6 minutes.
- Add the butter to a large nonstick skillet over a medium heat. Beat the eggs in a large bowl with the salt and pepper. Stir in the hot sauce, jalapenos and a splash of jalapeno juice. When the butter has melted, turn the heat to low and pour in the eggs, then add the sausage. Slowly cook the mixture, using a wooden spatula to push it around the skillet, until the eggs are totally cooked through, 8 to 10 minutes.
- Place approximately 1/2 cup of the egg and sausage mixture into a warm tortilla, then add a pinch of cheese and roll up (do not tuck in the ends). Wrap in a foil square and keep warm until ready to serve. Repeat with the remaining ingredients. Serve with more hot sauce, jalapenos and salsa.
SPICY BEEF BURRITOS
This recipe is from a pamphlet Del Monte put out. I have been making this for years, as it has become one of our favorites. I must confess I usually substitute a can of plain stewed tomatoes and add my own spices - chipotle powder, garlic powder, cumin and pepper. I use approximately a 1/4 - 1/2 teaspoon of each, depending on my taste buds that day. Suggest you make it with the Mexican spiced tomatoes for the first time. Ole!

- Saute ground beef, onion and green pepper in a skillet over medium-high heat for 5 minutes.
- Stir in chili powder and Worcestershire sauce.
- Spoon beef filling into centre of tortillas, fold in sides and roll up to enclose the filling.
- Spoon a thin layer of tomatoes on the bottom of a 9" x 13" pan that you coated with cooking spray. (if you use plain tomatoes, combine spices listed in recipe description with the tomatoes before using).
- Put tortillas seam side down in baking dish.
- Spoon remaining tomatoes over and sprinkle with cheese.
- Bake at 350°F for 30 minutes, or until bubbling.
- Serve abd garnish with shredded lettuce, sour cream, chopped green onions or sliced olives if desired.

SPICY BEEF BURRITOS

- Heat oil in heavy large pot over medium-high heat. Add half of beef and sauté until brown, about 3 minutes. Using slotted spoon, transfer beef to bowl. Add remaining beef to pot and sauté until brown, about 3 minutes. Return beef in bowl to pot. Add salsa, broth, garlic, sugar and soy sauce to pot; bring to boil. Reduce heat to medium-low, cover pot and simmer stew until beef is tender, stirring occasionally, about 1 hour 10 minutes.
- Uncover pot and simmer stew until sauce thickens, about 5 minutes. Mix in cilantro and lime juice. Season with salt and pepper. (Can be made 2 days ahead. Refrigerate until cold; then cover and keep refrigerated. Rewarm before continuing.)
- Heat tortillas 1 at a time on gas or electric burner, about 10 seconds Per side, turning with tongs. Cover with foil or napkin to keep warm.
- Serve stew, tortillas and rice, allowing diners to assemble burritos.
SPICY SHREDDED BEEF BURRITOS~ROBYNNE
Adapted from a copycat version of Chipotle Mexican Grill Barbacoa Burritos. I make them and my husband say's "Chipotle's got nothin' on you, honey"! I usually make the beef the day before I serve the burritos and reheat and adjust seasoning, as needed, but this is not necessary. Serve with your favorite salsa, guacamole and don't forget the sour cream! Thanks to Bonnie Dare for the great rice recipe "Cilantro Lime Rice" found on this site! - Sprinkle seasoning on roast. In a large dutch oven, heat olive oil and cook each side of roast until lightly browned.
- Adobo Sauce: Combine the lime juice, vinegar, chipotle peppers, garlic, cumin, oregano, black pepper, salt and clove in a blender (you can also use a food processor) and blend at the highest speed until it's smooth and creamy.
- Pour the adobo sauce over the meat and add in the beef broth and bay leaves. Cover and roast in 325 F degree oven for approx. 5 hours or until tender.
- While roast is cooking, add all the bean ingredients in a crock pot and heat on high until bubbling, stir and simmer on low heat until ready to serve.
- When roast is done, let cool and remove the butchers twine and bay leaves. Shred the beef using two forks and remove excess fat as you shred. Adjust seasoning if needed and simmer on low heat until ready to serve.
- Make Lime Cilantro Rice as directed.
- When ready to serve, warm tortilla in a dry skillet or wet with water and roll in a paper towel, heat in microwave for 30-45 seconds.
- Add a rice, beef, beans, salsa, cheese, guacamole and sour cream. Fold in both sides of the tortilla and then roll up as tight as possible from bottom to top, keeping the sides closed in as you go.

- In a small bowl combine all spice seasoning ingredients and mix well. Coat all of your pieces of beef with seasoning. I used a couple tablespoons. Save the remaining spice to add to sauce.
- Heat oil in a large dutch oven or large deep pot with a cover on high heat. Add meat and sear on all sides. (You may need to do it in batches.) Remove to a plate and set aside.
- Reduce heat to medium and add more oil if needed. Sautee onions and garlic until tender, about 3 -5 minutes.
- Add orange juice and lime juice, scraping up any brown bits from bottom of pan. Add tomatoes, beef broth and remaining seasoning and stir together.
