SPICY SHEPHERD'S PIE CHORIZO MEATLOAF

Steps:
- Preheat oven to 400 degrees.
- Poke holes in the sweet potato or yam and wrap in foil. Place in oven and cook for 35-40 minutes or until sweet potato or yam is soft to the touch, and completely cooked through then remove from oven.
- Turn oven temperature down to 375 degrees.
- In a large bowl, mix together beef, chorizo, onion, chipotle pepper in adobo sauce, adobo sauce, garlic cloves, chili powder, garlic powder, salt and pepper, eggs, and almond flour until well combined.
- Press meat mixture down into a bread pan or two bread pans, depending on the size you own.
- Cook for 35-40 minutes.
- While the meat cooks, steam the cauliflower until cauliflower is fork tender.
- Place cauliflower in a blender or food processor (I used a blendtec which gets it's to a more fine puree). Puree cauliflower until completely soft and almost a soup consistency.
- Then add baked sweet potato or yam (be sure to peel it first) and puree with cauliflower. Scrape down the sides, as needed. Then add coconut milk or some kind of mixture to get the cauliflower and sweet potato to completely come together in a smooth consistency.
- Once meatloaf has cooked has cooked through (around 35-40 min) place cauliflower/sweet potato mixture on top, smooth out, and place the meatloaf back in the oven under a high broiler. Cook for about 5 minutes.
- Top with chopped avocado, goat cheese, and red pepper flakes.

- In a large non-stick frying pan, cook the lamb, onion and carrots, stirring often, until the lamb is browned and veg is starting to soften, about 8 mins. Add the garam masala and some seasoning and cook for a further 2 mins until fragrant. Pour in the stock, bring to the boil, tip in the peas and cook for a further 2 mins until the peas are cooked and most of the liquid has evaporated.
- Meanwhile, cook potatoes in a large pan of salted water until just tender, about 8 mins. Drain well, return to the pan and gently stir in turmeric and coriander - try not to break up the potatoes too much.
- Heat oven to 200C/180C fan/gas 6. Transfer the mince to a baking dish and top with the turmeric potatoes. Squeeze over the lemon juice, then bake for 30-35 mins until potatoes are golden. Serve immediately with extra lemon wedges on the side.

MEXICAN SHEPHERD'S PIE
This is a Mexican version of the Shepherd's Pie that is so popular in the UK. I decided to try this one night when I did not have any mashed potatoes. Its cheap, quick and easy...and my kids loved it! Serve with a tossed green salad for a great family meal!

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13 inch baking dish with cooking spray.
- Place the beef and onion in a skillet over medium heat. Cook until beef is evenly brown and onion is tender. Drain grease. Season with garlic powder, salt, and pepper. Mix in the tomatoes, and cook 5 minutes. Stir in the taco seasoning and water. Bring to a boil, reduce heat to low, and continue cooking 5 minutes, until thickened. Transfer to the prepared baking dish, and top evenly with corn.
- Prepare the corn muffin mix according to package directions. Spread evenly over the corn layer in the baking dish.

- Preheat the oven to 400 degrees F. Put the potatoes in a large saucepan, cover with cold water by 1 inch and season with salt. Bring to a boil, then reduce the heat and simmer until tender, 20 to 25 minutes.
- Meanwhile, heat the olive oil in a large ovenproof skillet over medium heat. Add the chorizo and cook, breaking it up with a wooden spoon, until slightly browned, about 5 minutes. Add the beef and cook, breaking it up, until browned, about 5 minutes. Add all but 1 tablespoon of the scallions to the skillet along with the corn, poblano, tomato paste, cumin, chili powder, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the vegetables are slightly softened, about 5 more minutes. Add the tomatoes and chicken broth. Bring to a simmer, then reduce the heat to medium low; cook, stirring occasionally, until slightly thickened, about 10 minutes.
- Drain the potatoes and let cool slightly. Return to the pot, add the sour cream and butter and mash well. Stir in the cheese and season with salt and pepper. Dollop the mashed potatoes on top of the meat mixture in the skillet, then spread with the back of a spoon. Transfer the skillet to the oven. Bake until bubbling around the edges and the topping is browned in spots, 25 to 30 minutes. Let rest 10 minutes, then sprinkle with the reserved scallions before serving.
BAKED MEATLOAF SHEPHERD'S PIE
After doing a search, I couldn't find a decent Shepherd's Pie recipe... I did find recipes for meatloaf and mashed potato bake, however. And thus, Baked Meatloaf Shepherd Pie was birthed. This recipe is an adaptation of two highly rated recipes, Meatloaf #54257 and Mashed Potato Bake #41344. It is comfort food and a great dish to bring to someone who needs a meal, as it doubles easily, and freezes well. Enjoy!

- Preheat oven to 350 degrees.
- Prepare meatloaf: Combine first eight ingredients in a large bowl.
- Smooth into a loaf baking dish.
- Bake uncovered for 1 hour.
- While meatloaf is baking, prepare potatoes: Boil potatoes until tender, drain water.
- Mash potatoes with fork, stirring in 1/3 cup of half & half.
- In skillet melt margarine and brown slices of onions.
- Put on lid and cook, stirring occasionally, making sure all of the onions get brown (usually about 10 minutes).
- Mix potatoes and onions in a medium-size bowl.
- Place mixture in 2-qt baking dish and top with cheese.
- Bake at 350 for 20 minutes.
- When meatloaf and potatoes are done, remove from oven.
- Assemble shepherd's pie: Drain the meatloaf of grease and spoon into a 3-qt casserole dish (The meatloaf will break apart as you spoon it out.) Mash the meatloaf down into a flat layer.
- Mix peas and carrots together and add them on top of the beef.
- Spoon mashed potato mixture on top of the vegetables. The potatoes should form the top layer, so be careful not to mix the vegetables with the potatoes.
- Bake at 350 degrees for 20 minutes.

I got this recipe out of Taste of Home's "Weeknight Cooking Made Easy." This was SO tasty that we devoured all of the leftovers really quickly. I am posting the original recipe, but I do it a LITTLE differently. I use Rotel instead of diced tomatoes, and I didn't put in the olives. Enjoy!
