SIZZLING SAUSAGE SALAD



Sizzling sausage salad image

A classic wintry salad topped off with tasty sausage and onion

1 tbsp olive oil
400g pack good quality sausages
1 red onion , roughly chopped
1heaped tbsp wholegrain mustard
1 tbsp light muscovado sugar
16 cherry tomatoes
2 Little Gem lettuces
1large avocado
¼ cucumber
1 tbsp red wine vinegar
crusty bread , to serve

Steps:

  • Heat the oil in a wok or deep frying pan. Using scissors, snip the sausages into quarters straight into the pan. Throw in the onion, and fry for a minute or two, stirring every now and then to brown everything. Spoon in the mustard and sugar, tip in the tomatoes and cook for a few minutes more, stirring occasionally, until the tomatoes are just beginning to split and the mixture is coated in the sweet mustard glaze.
  • Meanwhile, separate the lettuces into leaves, peel, stone and slice the avocado and halve and slice the cucumber. Mix them together and pile onto a platter. Spoon the hot sausage mixture on top. Add the vinegar and 1 tbsp water to the pan and stir it over the heat to dislodge all those tasty flavourings from the pan. Spoon the pan juices over the salad and serve with crusty bread.

1 ½ lb(s) (675 g) extra lean ground beef
3 - 4 narrow links of spicy, cooked sausage (salami, pepperoni or ham sausage)
1 medium onion
1 14 oz (398 ml) can kidney beans and juice
1 19 oz (284 ml) can mushrooms and juice
2 medium carrots
1 10 oz condensed cream of tomato soup
¼ tsp pepper
1 to 2 teaspoons chili powder
1 bag baby spinach
Fruits and nuts (optional)
Your favorite salad dressing

Steps:

  • Brown meat in large nonstick stovetop pot at medium/high until meat is no longer pink.
  • Cut spicy sausages in ½ inch slices and add to pot.
  • Chop onion and add to pot.
  • Add kidney beans and juice to pot.
  • Add mushrooms and juice to pot.
  • Peel and thinly slice carrots and add to pot.
  • Add soup, pepper and chili powder to pot and stir.
  • Bring chili to a boil, reduce heat, let simmer for 1 hour. Add water if it appears too dry and thick. Add more chili powder if desired.
  • Rinse spinach and spin in salad spinner. Add fruits and nuts. Drizzle with favorite dressing.
  • (Set aside some chili for Taylor's famous burgers).

These sausage balls are the perfect bite-size combination of cheese, meat and biscuits -- all rolled into one. A staple around the holidays in the South, they are perfect on their own as an appetizer, or served as a side dish at your holiday table.

1 pound spicy Italian sausage, casings removed
4 cups grated extra-sharp Cheddar
2 cups baking mix, such as Bisquick
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • In a large bowl, combine the sausage, Cheddar, baking mix, garlic powder and salt and knead with your hands until a homogenous dough forms (this will take about 5 minutes). Pinch off golf ball-size pieces of dough, roll them into balls and arrange them 1 inch apart on the prepared baking sheets.
  • Bake until the sausage balls are golden brown and cooked through, about 25 minutes. Let cool for 5 minutes and serve warm or at room temperature. Store any leftover sausage balls in an airtight container for up to 1 week.

2 tablespoons extra-virgin olive oil, plus more for drizzling
12 ounces spicy Italian sausage, removed from casing
2 medium carrots, peeled and finely chopped (3/4 cup)
1 small onion, chopped (1 cup)
4 cloves garlic, minced (2 tablespoons)
Coarse salt and freshly ground pepper
2 tablespoons tomato paste
3 cups low-sodium chicken broth
1 cup brown lentils, rinsed and drained
1 small head escarole, thinly sliced (5 cups)
1 tablespoon fresh lemon juice

Steps:

  • Heat 1 tablespoon oil in a large pot over medium-high. Add sausage, carrots, onion, and garlic. Season with salt and pepper. Cook, stirring occasionally and breaking up sausage into bite-size pieces, until meat is no longer pink, about 5 minutes. Stir in tomato paste; cook, stirring, 1 minute. Add broth, 3 cups water, and lentils. Bring to a boil. Cover, reduce heat to low, and simmer until lentils are tender, about 30 minutes.
  • Meanwhile, toss escarole with lemon juice and remaining 1 tablespoon oil in a large bowl. Season with salt and pepper. Top stew with escarole salad, drizzle with more oil, and serve.

½ cup canola oil
⅓ cup tarragon vinegar
1 tablespoon white sugar
1 teaspoon chopped fresh thyme
½ teaspoon dry mustard
2 cloves garlic, minced
1 (8 ounce) can artichoke hearts, drained and quartered
5 cups romaine lettuce - rinsed, dried, and chopped
1 red bell pepper, cut into strips
1 carrot, grated
1 red onion, thinly sliced
¼ cup black olives
¼ cup pitted green olives
½ cucumber, sliced
2 tablespoons grated Romano cheese
ground black pepper to taste

Steps:

  • In a medium container with a lid, mix canola oil, tarragon vinegar, sugar, thyme, dry mustard, and garlic. Cover, and shake until well blended. Place artichoke hearts into the mixture, cover, and marinate in the refrigerator 4 hours, or overnight.
  • In a large bowl, toss together lettuce, red bell pepper, carrot, red onion, black olives, green olives, cucumber, and Romano cheese. Season with pepper. Pour in the artichoke and marinade mixture, and toss to coat.

2 sausages
1 garlic clove , crushed
1 tbsp grated ginger
1 red chilli , chopped
1 tbsp sesame oil
160g green beans
200g straight-to-wok noodles
soy sauce
fresh coriander leaves
sesame seeds

Steps:

  • Squeeze the sausages out of their skins. Mix the sausagemeat with the garlic, ginger and red chilli, then fry in the sesame oil until browned. Add the green beans, then fry for 1 min more.
  • Tip in the straight-to-wok noodles and a splash of soy sauce, and toss together. Add a splash of water and put the lid on to allow the beans to steam for a couple of mins. Sprinkle with fresh coriander leaves and sesame seeds to serve.

Gorgeous!! Morish!! ...and the easiest Pasta Salad to make by far!! One helping is never enough!! Prep time does not include the time taken to *cook the Pasta which usually takes about 10 minutes in the microwave. I add plenty of salt and a good dollop of Olive Oil to the water. (I find the Olive Oil flavours the Pasta) 'BEER STICKS' are about the size of Frankfurters, but the meat is like that of pepperoni OR salami. They are called Beer Sticks in N.Z. but there may well be another name used for them elsewhere.
