Steps:
- Preheat oven to 400 degrees. Line a rimmed baking sheet with parchment paper.
- Pat rinsed chickpeas with a clean kitchen towel and place in a large bowl. Add olive oil, cajun seasoning and sea salt. Toss to coat and transfer to a prepared baking sheet in a single layer.
- Bake for 35 to 45 minutes, stirring half way through. Remove from oven and allow to cool.

Steps:
- Mix spices together in a small bowl.
- Combine flour with 2-3 tsp of spice mixture.
- Drain and rinse chickpeas and dry with a paper towel.
- Heat olive oil in medium skillet over medium high heat.
- Roll chickpeas in flour mixture until lightly dusted, Shake off excess flour.
- Cook in batches, shaking chickpeas occasionally, until browned.
- Remove from pan and serve warm.

A moreish vegan snack, flavoured with smoked paprika, cumin and coriander. Simply spice, roast and get stuck in!

- Heat oven to 200C/180C fan/gas 4. Tip the chickpeas into a bowl and toss with the rapeseed oil, smoked paprika, cumin and coriander along with a big pinch of salt. Toss well until the chickpeas are well coated, then tip out onto a baking tray and bake for 35 mins, moving them round the tray halfway through so they dry out evenly and are crunchy. Leave to cool, then store in an airtight container.

- Preheat oven to 400 degrees.
- Rinse chickpeas in colander; drain well, shaking to remove as much water as possible.
- Combine chickpeas, olive oil, salt and pepper in baking pan large enough to hold chickpeas in a single layer.
- Bake 15 minutes or until chickpeas begin to brown, shaking pan twice to brown evenly.
- Add chili powder and cayenne to taste; bake an additional 5 minutes or until dark golden-red.
- Serve with lime wedges.
