SPICY JERK POTATO & PINEAPPLE HASH



Spicy jerk potato & pineapple hash image

This easy hash is full of punchy flavours, and makes a satisfying midweek family supper with streaky bacon, pineapple and spicy seasoned potatoes

700g Maris Piper potatoes , cut into medium chunks
1 tbsp vegetable oil
4 rashers streaky bacon , cut into bite-sized pieces
40g unsalted butter
½ tbsp jerk seasoning
200g prepared pineapple chunks
4 large eggs
½ small pack coriander , torn
½ red chilli , thinly sliced

Steps:

  • Bring a large pan of lightly salted water to the boil. Add the potatoes and boil for 7 mins, then drain and leave to steam-dry for 5 mins. Meanwhile, heat the oil in a large frying pan over a medium heat and fry the bacon for 5 mins until crispy.
  • Add the butter to the pan along with the potatoes and seasoning, and fry over a medium heat, turning occasionally, for 12 mins. Nestle the pineapple chunks in the pan and cook for a further 3 mins.
  • Crack the eggs over the potatoes, cover the pan with a lid or large plate and cook for 5-6 mins over a medium-low heat until the whites are just set and the yolks are still runny. Finish with the coriander and a sprinkle of chilli.

20 ounces Simply Potatoes® Shredded Hash Browns
1 dozen egg
1 lb chorizo sausage
1 chopped jalapeno, seeds removed
1 cup cheddar cheese

Steps:

  • Saute Chorizo Sausage and jalapeno for 3 minutes on medium heat, add the potatoes. Cook on Medium high for 7 minutes or until potatoes are tender and beginning to brown. Add beaten eggs, cook for 5 minutes on Medium heat, stirring occasionally. top with cheese and serve when cheese melts - about 2 minutes. Serve immediately.

If desired, garnish each serving with a dollop of sour cream, some chopped cilantro, and a few sweet, spicy nuts. A Thanksgiving favorite that's a kid favorite year-round. Freezes well!

3 tablespoons olive oil
4 shallots, sliced
1 pound tart apples, cored and cut into 1/4-inch pieces
2 tablespoons grated fresh ginger
1 lime, zested and juiced
¼ teaspoon red pepper flakes, or more to taste
¼ teaspoon ground cayenne pepper, or more to taste
2 quarts chicken broth
2 (15 ounce) cans sweet potatoes, drained
½ teaspoon salt, or to taste
1 lime, cut into wedges

Steps:

  • Heat olive oil in a large soup pot over medium heat; cook and stir shallots in the hot oil until soft, about 3 minutes. Stir apples, ginger, zest from 1 lime, red pepper flakes, and cayenne pepper into the pot. Reserve lime juice. Cook and stir mixture until apples are very soft, about 15 minutes.
  • Pour chicken broth into pot; add sweet potatoes and salt. Cover and bring to a boil. Reduce heat to low and simmer for 10 minutes. Puree soup with an immersion blender until smooth. Stir reserved lime juice into soup. Garnish with lime wedges to serve.

2 ounces Simply Potatoes Diced Potatoes with Onion
1 large onion
1 large green pepper
1 (12 ounce) can Spam
1 cup vegetable oil

Steps:

  • Use a skillet.
  • 1/2 cup vegetable oil pour inches Turn Skillet to 350 degrees. Dice up onions and peppers and spam to small cubes. Place in skillet. Stir occasionally. Add 2 bags of simply potatoes diced. Cook till a little golden brown.
  • Then serve with Texas toast on side.
