POTATO WEDGES
These chunky, peppery golden potato wedges are always a winner at parties and barbecues

Steps:
- To prepare and cook your potato wedges: Preheat your oven to 200˚C/400˚F/gas 6. Put a large pan of salted water on to boil.
- Scrub the potatoes clean and get rid of any gnarly bits. Cut the potatoes into chunky wedges. Add to the pan of boiling water and parboil for 8 minutes. Drain in a colander and leave to steam dry for a couple of minutes.
- Transfer to a roasting tray and add a good lug of olive oil and a pinch of salt and pepper. Toss together so all the wedges are coated in the oil then spread out in one layer. Cook in the hot oven for 30 minutes until golden, crisp and cooked through. Delicious served with steak or chicken.

- Make the dip. Ripple the mustard and honey through the mayonnaise in a small bowl. Cover and chill.
- Preheat the oven to fan 180C/ conventional 200C/gas 6. Cut each potato into eight wedges, then cook in boiling salted water for 5 minutes.
- In a large bowl, mix the butter and spice with a little seasoning. Drain the potatoes, then add to the bowl and shake. Transfer to two baking sheets and bake for 20-25 minutes, turning occasionally, until crisp and browned. Serve hot, with the dip.

- In a large resealable plastic bag, combine the first eight ingredients; add the potatoes. Seal bag and toss to coat. Arrange in a single layer on greased baking sheets. , Bake at 400° for 30-35 minutes or until potatoes are tender and golden brown, turning once.

I love these potatoes - they are so crispy, have so much flavor and are so easy to throw together! The foil lined baking sheet also makes for super easy clean up which is always appreciated!

Steps:
- Preaheat the oven to 525°F
- Scrub and quarter the potatoes (you can peel them if you like - I never do and I think the skins make them crispier) and place them in a large bowl.
- Drizzle the olive oil over the potatoes and toss to coat.
- Sprinkle seasonings over potatoes and toss to coal well.
- Line a baking sheet with aluminum foil and spray the foil with cooking spray.
- Arrange the potatoes in one layer on the baking sheet.
- Roast for 20 minutes, turning once halfway through cooking.

I thought I'd post the ones that I liked the look and sound of here, to share and for future reference. This way you might find something you like and my kitchen gets decluttered! If you try it before me let me know what you think. This is from Tesco's 'Simple Steps to a Healthier 2007'.

Steps:
- Preheat oven to 220C/425F/Gas7.
- Slice each potato in half lengthwise and the cut each half into three thick wedges. Try and keep the wedges relatively even sized.
- In a bowl mix the oil and the seasoning.
- Add the wedges and toss until evenly coated.
- Spread the out on a non-stick baking tray and bake them for 15-20 minutes, until cooked and nicely coloured.
- Serve with your favourite dip.

- Combine potatoes and oil in a large bowl or plastic bag, tossing well to coat.
- Combine salt, garlic powder, and red pepper in a small bowl.
- Sprinkle salt mixture over potatoes, tossing well to coat.
- Arrange potatoes in a single layer on 2 baking sheets coated with cooking spray.

Wash the potatoes under cold running water, scrubbing well with a scrubber to get rid of any dirt (there’s no need to peel them).On a chopping board, cut each potato in half lengthways, then cut each half in half lengthways, and then each piece in half again so you end up with 8 wedges, then add to a large mixing bowl.
- Drizzle over 2 tablespoons olive oil, then toss everything together to coat.Spread out into a single layer over two large baking trays, then bake in the hot oven for 35 to 40 minutes, or until golden and cooked through.
- Use oven gloves to remove the trays from the oven, then leave to sit for a couple of minutes (this will make it easier to remove them from the tray), then use a fish slice to transfer them to a serving dish.
