One 8-ounce can pineapple chunks, drained
1 tablespoon chile powder
1 teaspoon ground cumin
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Skewer 3 pineapple chunks onto each cocktail skewer or toothpick and arrange on a plate.
  • In a small bowl, combine the chile powder, cumin, salt and pepper and mix with a fork. Sprinkle onto all sides of the skewered pineapple chunks and serve.

2 bell peppers, diced
2 jalapeños, diced (seeds optional)

2 pounds, grass fed ground beef
1/4 cup chili powder

red pepper flakes (optional)
sea salt to taste
black pepper to taste
1 (20-ounce) can of diced pineapple
1 (15-ounce) can of tomato sauce
1 (14-ounce) can of fire roasted diced tomatoes

Steps:

  • 1.Preheat a large Stock Pot or Dutch Oven over medium heat (You can do this in the Crock Pot as well, see notes below) 2.Brown your thin strips of bacon in your pan 3.Add in your onions, peppers, jalapeños, and garlic and continue to cook, stirring often for 5 minutes or until your onions become translucent 4.Now add in your Grass fed Ground Beef, chili powder, and cumin and stir until your ground beef is cooked through 5.Add in all your remaining ingredients, stir well, and increase heat until your chili comes to a boil 6.Once boiling, reduce the heat to low, cover, and simmer for 45 Minutes Notes For the crockpot: 1. Brown your bacon in a saute pan and then place in your crockpot 2. Saute your ground beef in the bacon fat until cooked through and then add to your crockpot with all the remaining ingredients 3. 1/2 cup pineapple juice
1/2 tablespoon chile-garlic sauce, or more to taste
Serving suggestions: cooked salmon or pork

Steps:

  • Combine the BBQ sauce, pineapple juice and chile-garlic sauce in a small saucepan. Bring to a low simmer, then reduce the heat to very low. Let cook, stirring often, until thickened, about 20 minutes.

The chef who introduced me to this idea, Lindsey Bareham, recommends serving this recipe with drinks before dinner. To really make the dish shine you need to have a chilli with a bit of kick in it, although it doesn't have be one of the really firey ones like a habanero or bird's eye.

  • Core and peel the pineapple and cut into bite-sized chunks.
  • Trim and split the chilli, scrape away the seeds and slice into small strips.
  • Sprinkle the chilli and salt over the pineapple.
  • Serve on a plate with toothpicks.
  • Every bite should have a bit of chilli.

1 (20 ounce) can crushed pineapple in heavy syrup, drained with syrup reserved
1 tablespoon cornstarch
1 teaspoon ground ginger
¾ cup orange juice
2 tablespoons maple syrup

Steps:

  • In a medium bowl, mix the crushed pineapple, cornstarch and ground ginger. Gradually stir in enough of the reserved pineapple juice to make the mixture smooth.
  • In a medium saucepan over medium heat, blend orange juice and maple syrup. Cook and stir 5 minutes, until clear and thickened. Mix in the pineapple mixture. Continue to cook and stir until well blended and thick, about 15 minutes.
