SPICY ORANGE BEEF & BROCCOLI STIR-FRY
With fresh broccoli, ginger, red bell peppers and plenty of fresh citrus, this healthy beef stir-fry is sure to become a favorite. And it's ready in 30 minutes, making it the perfect healthy weeknight dinner. Serve with brown rice.

- With a small sharp knife or vegetable peeler, carefully pare wide strips of zest from one of the oranges. Cut zest into 1-inch strips and set aside. Squeeze juice from all the oranges into a small bowl (for about 3/4 cup). Add soy sauce, rice wine (or sherry), cornstarch and sugar and stir to combine; set aside.
- Heat 1 teaspoon oil in a wok or large skillet over high heat until almost smoking. Add beef and stir-fry just until no longer pink on the outside, about 1 minute. Transfer to a plate lined with paper towels and set aside.
- Add the remaining 2 teaspoons oil to the pan and heat until very hot. Add garlic, ginger, chiles and the reserved orange zest; stir-fry until fragrant, about 30 seconds. Add broccoli and water. Cover and steam, stirring occasionally, until the water has evaporated and the broccoli sizzles, about 3 minutes. Add bell pepper and stir-fry for 1 minute more.
- Stir the reserved orange sauce and pour it into the wok. Bring to a boil, stirring; cook until the sauce has thickened slightly, 1 to 2 minutes. Add scallion greens and the reserved beef and toss to coat with sauce; heat through.

SPICY ORANGE STIR FRY SAUCE
This is a combination of several recipes I found online and tweaked a little to pull together. THis recipe makes enough for a stir-fry that serves two people, but it is easily doubled or tripled. I like to marinate my chicken in it first, and then thicken up the left over marinade with the cornstarch, but it works just as well as just a sauce. I recommend trying a stir fry with chicken, broccoli, and peanuts.

SPICY ORANGE BEEF STIR FRY (橙味牛肉)
Savoury, fruity, slightly sour and refreshingly spicy, orange beef stir-fry is a comforting dish that can be easily prepared in your own kitchen.

- Place beef strips in a bowl. Add all the ingredients for the marinade. Mix well until all the liquid is absorbed by the beef. Leave to combine for 10 minutes.
- Mix all the ingredients for the sauce. Set aside.
- Heat up a wok (or a deep frying pan) over a high heat then pour in 1½ tablespoons of oil. Sear the beef until it becomes pale. Dish out and set aside.
- Discard any liquid in the wok. Pour in the remaining ½ tablespoon of oil. Add orange zest, fresh chilli, ginger and garlic. Cook until fragrant then stir in the beef.
- Fry for 1 minute or so. Pour in the sauce (stir well beforehand). Dish out when beef is evenly coated with the thickened sauce. Serve immediately.
SPICY ORANGE PORK STIR FRY
Pork tenderloin chunks are stir fried in an orange based, thai curry paste along with chinese vegetables. The curry paste gives this dish a kick with a subtle flavor of oranges. More or less curry paste can be added to suit your hotness. This is great with rice or chinese noodles.

- In a wok, heat olive oil.
- Add pork tenderloin and saute till the pork is no longer pink.
- Add garlic and saute for a second making sure you don't burn it.
- Add vegetables and mushrooms and stir fry for approximately 5 minutes.
- In the meantime, in a small measuring cup, squeeze two oranges to make 1 cup of juice.
- Add ginger, garlic curry paste, and soy sauce to the orange juice and mix well.
- Pour sauce over vegetable/meat mixture and stir fry approxmately five minutes.
- Remove about 1/4 cup liquid from wok and add the cornstarch and stir thoroughly until there are no lumps.
- Turn up to high and add cornstarch, stirring constantly to thicken sauce.

We halved the recipe and cooked up 11 large shrimp from Costco for 2 people. At first we burned the garlic and ginger, so we started over and turned the heat down to medium. - Place corn starch in a medium bowl and gradually whisk in OJ until smooth. Add soy sauce, rice vinegar, honey, garlic and red pepper flakes, season with salt and pepper and set aside.
- In pot or wok heat oil over medium-high. Working in batches, cook chicken until slightly browned and cook through. Transfer to plate and set aside.
- Add broccoli, carrots, water chestnuts and 1/2 cup water into wok. Cook, partially covered until broccoli is bright green, about 3 minutes. Add chicken back to wok along with cornstarch mixture, bring to a boil and cook until sauce thickens- 2 to 3 minutes.

STIR-FRIED ASPARAGUS AND BASIL WITH SPICY ORANGE SAUCE
Steps:
- Combine the orange juice, soy sauce, and hot red pepper flakes in a small bowl and set aside.
- Snap off the tough ends of the asparagus. If the asparagus are thin, cut them on the diagonal into 2-inch pieces. If the asparagus are average or thicker, cut the spears in half lengthwise and then on the diagonal in 2-inch pieces.
- Heat 1 tablespoon of the oil in a large nonstick skillet set over high heat. When the oil is shimmering but not smoking, add the asparagus and stir-fry for 2 minutes. Push the asparagus to the sides of the pan and place the garlic and ginger in the center. Drizzle the remaining 1 teaspoon oil over the garlic and ginger. Cook until fragrant, about 20 seconds. Add the orange juice mixture, toss to coat well, and cover. Cook until the asparagus are tender, 2 to 3 minutes, depending on the thickness of the spears.
- Remove the cover and add the basil. Stir-fry until the sauce has reduced to a thick glaze, about 30 seconds. Serve immediately.
