This homemade one pot backpacking meal is worth washing a dish for - it combines orzo pasta with a spicy and flavorful sauce that will fill you right up after a long day of exploring.

1 cup orzo pasta
1/2 cup freeze dried or dehydrated vegetables
2 tablespoons tomato powder
1 tablespoon Creole spice
1 teaspoon salt
1 tablespoon olive oil
3 oz summer sausage or jerky (optional - omit to make this meal veg friendly)
2 ½ cups water

Steps:

  • Pre-Trip: Place the pasta, freeze dried vegetables, tomato powder, Creole spice, and salt in a resealable bag. Pack along the olive oil and summer sausage.
  • At Camp: Empty the contents of the bag into your cook pot. Add the water and olive oil and bring to a low boil. Cook for about 10 minutes or until the pasta is tender, making sure to stir fairly often (especially towards the end) to prevent the food from scorching and sticking to the bottom of the pan.
  • In the meantime, cut up the sausage or jerky and add to the pot as the rest of the meal is cooking to heat through.
  • Remove from the heat and enjoy!

Jambalaya originated in the Caribbean Islands. The Spanish culture mixed with the native foods and created what we know as Jambalaya. Jambalaya is traditionally made in three parts, with meats and vegetables, and is completed by adding stock and rice. It is also a close cousin to the saffron colored paella found in Spanish culture. My twist on this classic recipe is to add tomatoes and Orzo Pasta to chicken stock. This makes it more like a hearty Jambalaya soup. Enjoy!

FROM THE PANTRY - MAKING SPECIAL SPICE BLEND
2 teaspoon(s) kosher salt
2 teaspoon(s) mrs dash garlic & herb seasoning
2 teaspoon(s) paprika
1 teaspoon(s) ground black pepper
1 teaspoon(s) jamaican sytle jerk seasoning
1 teaspoon(s) cayenne pepper
1 tablespoon(s) dried oregano
1 teaspoon(s) red pepper flakes
JAMBALAYA INGREDIENTS
1 1/2 cup(s) orzo pasta
1 pound(s) medium white shrimp peeled and deveined
1 pound(s) boneless/skinless chicken breasts, cut into 1" pieces
1 cup(s) red, yellow, green & orange bell peppers, diced
1 package(s) johnsonville andouille smoked sausage, cut into 1/2" slices
5 clove(s) garlic, diced
1 cup(s) white onions, diced
1 1/2 cup(s) low sodium chicken broth
14 1/2 ounce(s) can diced tomatoes - low sodium
4 tablespoon(s) special spice blend, divided - 2 tbsp each for chicken and shrimp
- olive oil for sauteing

Steps:

  • Directions for spice blend. Combine all ingredients together and blend well. You may also use a coffee grinder to blend your spices. I love making my own spice blend, make sure your spice rack is up to date with fresh spices and make your own blend. Store in an airtight container and use for your favorite dishes.
  • Step 1 Place chicken in a clean bowl and add spice seasoning over chicken and gently toss until the chicken is coated well. Then in a separate bowl, do the same thing with the shrimp. Cook orzo pasta according to package instructions. But cook "al dente" because you will finish cooking pasta when it is added to the jambalaya mixture.
  • Step 2 In a large skillet, add about 2 tbsp olive oil. Start with chicken first, place in pan and add part of the onions, garlic and peppers and sauté until it is about half done. Then remove chicken and set aside. Add more oil if required, then add the balance of onions, garlic, peppers and shrimp. Sauté until shrimp is nice a pink, but do not over cook.
  • Step 3 Now add to the skillet, tomatoes and chicken broth and combine with shrimp. Stir gently and add chicken back to the skillet. Continue to cook until chicken, shrimp and vegetables are tender. Let simmer for about 3 - 5 minutes. Then add orzo pasta to mixture and combine well and let simmer for about 5 minutes.
  • Serve your Jambalaya Place in serving bowls and garnish with fresh chopped parsley.

This is an easy jambalaya recipe that I've been making for a long time. Many recipes call for serving the "sauce" over the rice, but I cook everything all together. (As long as your heat isn't too high, there should be enough liquid to cook the rice without making it gummy.) Enjoy!

1 cup chopped bell pepper (red and or or green)
1 medium onion, chopped
2 stalks celery, chopped
2 jalapenos (or red chiles, seeded and chopped)
5 garlic cloves, minced
1 tablespoon dried thyme
1 tablespoon dried basil
1 tablespoon dried parsley
2 teaspoons dried oregano
1/2 teaspoon cayenne pepper (or more to taste)
1/4 teaspoon smoked hot paprika (or more to taste) (optional)
1/4 teaspoon red pepper flakes
1 teaspoon grill seasoning
1 teaspoon sugar
salt and pepper
1 lb andouille sausage, sliced
1 lb boneless skinless chicken breast (or thighs)
1 (28 ounce) can crushed tomatoes
3 cups chicken stock
1 1/2 cups white rice (uncooked)
2 tablespoons olive oil
1 tablespoon butter

Steps:

  • In a large pot, heat 1 T olive oil and add the sliced sausage and 1/2 of the grill seasoning. Saute on medium-high until the sausage gets some color on it, then remove it and set it aside. Add in the chicken (adding more oil if necessary) and the rest of the grill seasoning and saute until the chicken is browned but not cooked through. Remove the chicken from the pot and set aside.
  • Add the butter and a bit more olive oil to the pot and mix in the peppers, onions, celery and jalapenos. Saute on medium heat until the vegetables are softened, about 8 minutes. Add in the garlic and saute for an additional 2 minutes. Stir in the cayenne, paprika, and red pepper flakes and saute for an additional minute to toast the spices.
  • Stir in the crushed tomatoes and chicken broth and bring to a simmer. Stir in the thyme, basil, parsley, oregano, and sugar. Simmer, partially-covered, over low heat for 20 minutes.
  • Return the sausage and chicken to the pot. Stir in the rice. Cook for an additional 20 - 30 minutes, stirring occasionally, until the rice is tender and the chicken is cooked through. Taste for seasoning and add salt and pepper as desired.

3 tablespoons olive oil, divided
2 boneless skinless chicken breasts, cut into bite-sized pieces
1 lb hot italian sausage, thinly sliced into rounds
3 small bell peppers, diced
1 jalapeño pepper, seeded and finely chopped
1 white onion, diced
4 cloves garlic, minced
1 can diced tomato
5 cups chicken stock, or broth
1 ½ cups long grain white rice, uncooked
2 tablespoons cajun seasoning
1 teaspoon dried thyme, crushed
¼ teaspoon cayenne pepper
1 bay leaf
1 ½ lb large shrimp, raw. peeled, and deveined
1 small ham steak, cubed
1 cup frozen okra, thawed
salt and pepper, kosher and freshly cracked black pepper, to taste

Steps:

  • Heat 1 tbsp oil in a crockpot or large, deep saute pan over medium-high heat. Add chicken and sausage and saute for 5-7 minutes, stirring occasionally, until the chicken is cooked through and the sausage is lightly browned. Transfer to a clean plate and set aside.
  • Add the remaining 2 tablespoons of oil to the crockpot. Add bell peppers, jalapeño, onion and garlic. Sauté for 6 minutes, stirring occasionally, until the onions are softened.
  • Add the diced tomatoes, chicken stock, rice, Cajun seasoning, thyme, cayenne, bay leaf, and stir to combine. Continue cooking until the mixture reaches a simmer. Then reduce heat to medium-low, cover and simmer for about 25-30 minutes, or until the rice is nearly cooked through, stirring every 5 minutes or so along the way so that the rice does not burn.
  • Add the shrimp, ham, okra, and stir to combine. Continue to simmer, stirring occasionally, until the shrimp are cooked through and pink. Stir in the chicken and sausage, and remove and discard the bay leaf.
  • Taste season the jambalaya with salt, pepper, and additional Cajun seasoning if needed. Remove from heat and serve warm.
