SPICY BEEF KEBABS

Spicy Beef Kebabs image

Although many cuts, from the round to the chuck, have kabob potential, I believe the sirloin primal best delivers that perfect balance of beefy flavor and meaty texture that you expect from something as elemental as a kabob. I also like sirloin because it's very easy to fabricate in the home kitchen environment. Oh, and if you've ever heard that story about King Henry VIII having knighted this cut of meat, thus making it Sir Loin, that's crazy talk. The sir comes from the French for "under." Sirloin actually means "under the loin." This recipe first appeared in Season 9 of Good Eats.Photo by Lynne Calamia

SPICY MEXICAN LAMB KEBABS

Spicy Mexican Lamb Kebabs image

Many Mexican recipes start with a paste made with various rehydrated dried chiles, onion and fruit juices. Here a paste is used as a spicy marinade to flavor tender chunks of lamb. The hearty taste of red meat and the spicy heat of chiles creat the perfect marriage. For a smoky heat, try chipotle chiles. For over-the-top heat, use scotch bonnet chiles. For a nice bit of spice without a lot of burn, experiement with jalapeno or serrano chiles. Serve the lamb rolled in warm tortillas accompanied by the traditional beans and rice. Try the paste on chicken, beef or pork, too. Time does not include marinating time.

Provided by Crafty Lady 13

Categories     Lamb/Sheep

Time 20m

Yield 4 serving(s)

Number Of Ingredients 14

1 dried ancho chile, seeded, deveined, torn into pieces
1 cup coarsely chopped cilantro
1/2 cup chopped onion
1/4 cup lime juice
2 green jalapeno chiles, halved, seeded and deveined (optional)
1 garlic clove
2 teaspoons canola oil
1 teaspoon coarse salt
1/2 teaspoon pepper
1/4 teaspoon ground cinnamon
1 1/2 lbs well-trimmed boneless leg of lamb, cubed (2 inches)
1 red onion, cut into 1 1/2-inch pieces
fresh cilantro stem
lime wedge

Steps:

  • Soak ancho chile in small bowl of boiling water to cover 30 minutes or until chile is soft. Strain, reserving soaking liquid. Place chile and all remaining marinade ingredients in blender; blend to form smooth paste, adding reserved soaking liquid as needed.
  • Pour marinade over lamb and red onion in resealable plastic bag. Refrigerate 2 hours, turning occasionally.
  • Heat grill. Remove lamb and onion from marinade, leaving on plenty of the spice paste; discard marinade. Alternately thread lamb and onion onto 4 (12-inch) metal skewers. Grill, covered, over medium-high heat or coals 8 to 10 minutes or until browned on all sides and lamb is pink in center. Garnish with cilantro sprigs and lime wedges.

SOSATIES (SOUTH AFRICAN KEBABS IN SPICY SAUCE)

Sosaties (South African Kebabs in Spicy Sauce) image

Sosaties have their roots in Malay cuising; in Malay; sate means "spicy sauce" and sesate means "skewered meat", Lamb sosaties are the South African national favorite, but beef, pork and chicken are common also, feel free to substitute if desired. The meat is marinated for 1-2days in a spicy, curry mixture accented with apricot jam and ginger. Sosaties are prepared and served at braai, the Afrikaans word for picnic or barbecue held in the bush. Marinate time is NOT included in prep or cook times. Posted for ZWT 7. I found this at PBS.org.

SWEET AND SPICY BEEF KEBAB

Sweet and spicy beef kebab image

A really simple beef kebab, that tastes great done in the oven or on the BBQ. (makes enough for 2 people as a main meal, or 3 people as a light meal.)

Steps:

  • combine all the marinade ingredients in a bowl and stir with a fork until combined.
  • take the beef, and with the back of a large knife, tenderize untill it is about 1cm thick. then slice the beef into 5cm long strips.
  • place the beef into a sandwich bag, and pour over the marinade. place the bag in the fridge and leave to marinade overnight (this step can be reduced down to 20 minutes if you dont have time, but it is better after marinating overnight.)
  • approx 1 hour before cooking, place bamboo skewers in a shallow tray, and cover with one hour, to avoid burning during the cooking process.
  • preheat your oven to 170c/fan 150c/gas 5 and slice the onion into thick wedges (aprox 12 wedges) and separate each wedge in half. (so you should end up with 24 chunks of onion).
  • take the marinading beef out of the freezer and thread onto the soaked skewers, alternating with the chunks of onion.
  • once all of the onion and beef has been used, brush the onion with the remaining marinade sauce and sprinkle with chili flakes. place the kebabs on a tray and bake in the oven for 20 minutes, turning half way through the cooking process.
  • check that the beef is cooked by cutting into one of the strips. once the kebab is cooked, remove from the oven, and serve immediately.

Time 45m

Yield Makes 20

Number Of Ingredients 11

3 garlic cloves , roughly chopped
knob of fresh ginger , roughly chopped, plus extra to serve
1 orange , grated zest and juice
3 spring onions , roughly chopped
2 tbsp clear honey
1 tbsp light soy sauce
2 tbsp vegetable oil
4small skinless boneless chicken breast fillets , cut into cubes
20 button mushrooms
20 cherry tomatoes
2large red peppers , seeded and each cut into 10

Steps:

  • Grind the garlic, ginger, orange zest and spring onions to a paste in a food processor. Add the honey, orange juice, soy sauce and oil, then blend again. Pour the mixture over the cubed chicken and leave to marinate for at least 1 hr, but preferably overnight. Toss in the mushrooms for the last half an hour so they take on some of the flavour, too.
  • Thread the chicken, tomatoes, mushrooms and peppers onto 20 wooden skewers, then cook on a griddle pan for 7-8 mins each side or until the chicken is thoroughly cooked and golden brown. Turn the kebabs frequently and baste with the marinade from time to time until evenly cooked. Arrange on a platter, scatter with chopped spring onion and eat with your fingers.
