Time P2D

Number Of Ingredients 8

1 pound mixed olives, such as DeLallo Gigante Olives & DeLallo Jumbo Pitted Calamata Olives, drained & rinsed
4 cloves garlic, thinly sliced
2 sprigs rosemary
8-10 sprigs thyme
1 bay leaf
lemon rind from 1/2 lemon
optional: 1 teaspoon crushed red chili flakes
1 cup olive oil

Steps:

  • Layer the olives, garlic, herbs, bay leaf, lemon rind, & chili flake in a 16-ounce jar (or 16-ounce airtight container of choice). Slowly pour the olive oil over top, just until the olives are submerged. Depending on the size of your olives, you may or may not need the full cup of olive oil.
  • Set the sealed jar in the refrigerator for at least 48 hours, or up to 1 week.
  • 2 hours before serving, remove the olives from the refrigerator to bring them to room temperature. Transfer to your favorite serving bowl. Enjoy them on their own, or serve along with crackers, charcuterie, or on a holiday cheese board. Enjoy!

Time 20m

Yield 10 servings

Number Of Ingredients 10

2 cups large green olives with pits, such as Cerignola (11 ounces)
2 cups large black olives with pits, such as Kalamata (11 ounces)
Zest of 1 orange, peeled in large strips
4 large garlic cloves, smashed
2 teaspoons whole fennel seeds
2 teaspoons chopped fresh thyme leaves
3/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2/3 cup good olive oil
4 sprigs fresh thyme

Steps:

  • Drain the green and black olives from the brine or oil that they're packed in and place them in a medium bowl. Add the orange zest, garlic, fennel seeds, thyme leaves, red pepper flakes, 1/2 teaspoon salt and 1/2 teaspoon black pepper. Pour the olive oil over the mixture, add the thyme sprigs and toss to combine.
  • Transfer the mixture, including the olive oil, to a medium (10-inch) sauté pan. Heat over medium heat until the oil begins to sizzle. Lower the heat and sauté for 4 to 5 minutes, stirring occasionally, until the olives and garlic are heated through and fragrant. Serve warm right from the pan or transfer to a serving dish. Offer a small dish for the pits.

Time 14m

Yield 4 serving(s)

Number Of Ingredients 12

12 garlic cloves, unpeeled
1 carrot, peeled and cut diagonally into slices 1/4 inch thick
24 mixed green olives in brine, and
black olives, drained
12 cocktail onions, in vinegar, drained
12 baby gherkins, drained
2 tablespoons extra virgin olive oil
1 tablespoon white wine vinegar
1/2 teaspoon salt
1 pinch hot chili powder
1/2 teaspoon pimientos or 1/2 teaspoon sweet paprika
1 pinch fresh thyme leave

Steps:

  • Bring a small saucepan three-fourths full of water to a boil over high heat. Add the garlic, return to a boil and cook for 3 minutes. Add the carrot, return to a boil and cook for 1 minute more. Drain, then plunge the garlic and carrot slices into cold water. Drain again and peel the garlic (the skins will come off easily).
  • Transfer the garlic and carrot slices to a glass bowl. Add the olives, onions and gherkins and mix well. Add the olive oil, vinegar, salt, chili powder, pimentón and thyme and stir gently to coat all the ingredients evenly. Cover and refrigerate the olive and vegetable mixture until well chilled, at least 2 hours or up to 6 hours, stirring once or twice.

  • Pour all the in-brine olives into a big colander set in your kitchen sink. Run hot – and I mean hot - water all over the olives for a minute or so. Turn off the hot water and shake the colander to remove as much water as you can.
  • Put all the marinade’s ingredients into a microwave-proof bowl. Stir well, then place the bowl in the microwave and microwave it for two minutes. After that, give the marinade a really good stir, then microwave it again for another two minutes. This heating will rapidly pull out all the marinade’s flavors. Also, the marinade is now going to be pretty hot. Good, that’s ideal. That heat means it’s going to get into the olives - quickly.
  • Pour all the hot marinade over the dry olives in the mixing bowl and give the whole lot a thorough, but gentle stir. And I mean gentle. Stir it just enough so that all the olives get coated – inside and out – with the marinade. Done.
