1 tablespoon grated lemon peel
3 tablespoons lemon juice
3/4 teaspoon crushed red pepper
1/2 teaspoon salt
2 cloves garlic, finely chopped
3 tablespoons olive or vegetable oil
1 lb uncooked peeled deveined large shrimp (22 to 25 shrimp), thawed if frozen and tails peeled
1/2 cup loosely packed fresh basil leaves
1/2 cup mayonnaise or salad dressing

Steps:

  • Set oven control to broil. In medium glass or plastic bowl, mix lemon peel, lemon juice, red pepper, salt, garlic and 1 tablespoon of the oil. Add shrimp; toss to coat. In ungreased 15x10x1-inch pan, spread shrimp.
  • Broil shrimp with tops 2 to 3 inches from heat 3 to 5 minutes or until shrimp are pink and firm.
  • In food processor, place basil and remaining 2 tablespoons oil. Cover and process until chopped. Add mayonnaise; cover and process until smooth. Serve shrimp with mayonnaise.

This was given to me by my friend, Elaine. It is one of the most delicious shrimp recipes for the BBQ I have ever had, and it is so easy. My son would eat the whole recipe if I didn't watch him.

2 ½ tablespoons olive oil
¼ cup butter, melted
1 ½ lemons, juiced
3 tablespoons Dijon mustard (such as Grey Poupon Country Mustard™)
½ cup minced fresh basil leaves
3 cloves garlic, minced
salt to taste
white pepper
3 pounds fresh shrimp, peeled and deveined
skewers

Steps:

  • In a shallow, non-porous dish or bowl, mix together olive oil and melted butter. Stir in lemon juice, mustard, basil, and garlic, and season with salt and white pepper. Add shrimp, and toss to coat. Cover, and refrigerate for 1 hour.
  • Preheat grill to high heat. Remove shrimp from marinade, and thread onto skewers. Discard marinade.
  • Lightly oil grill grate, and arrange skewers on preheated grill. Cook for 4 minutes, turning once, or until opaque.

3 tablespoons lemon juice
3/4 teaspoon crushed red pepper

2 sticks cold butter, cut into pieces
1/4 cup fresh parsley leaves
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper
4 cloves garlic, peeled
1 whole lemon, juiced
Crusty bread, for serving

Steps:

  • Preheat the oven to 375 degrees F. Rinse the shrimp to separate, and then arrange in a single layer on a baking sheet.
  • To the bowl of a food processor, add the butter, parsley, salt, red pepper, garlic and lemon juice. Pulse until combined. Sprinkle the cold butter crumbles over the shrimp.
  • Bake until the shrimp is opaque and the butter is hot and bubbly.
  • Serve with hot crusty bread. Peel and eat the shrimp, and then encourage guests to dip the bread into the butter in the bottom of the pan.

1 tablespoon butter
1 tablespoon olive oil
1/4 onion, finely chopped
1/4 teaspoon hot pepper flakes or 1/2 a red chili pepper, finely chopped
1 teaspoon lemon zest
2 cloves garlic, finely chopped
1 plum tomato, seeded, finely chopped
2 tablespoons dry white wine
20 medium-large shrimp
salt & pepper
1 splash lemon juice
3 basil leaves, chiffonade (strips,sliced thinly)
lemon slice (to garnish)

Steps:

  • 1. In a sauté pan over medium/high heat, combine the butter and olive oil. When the butter is melted, add the hot pepper flakes (or chili pepper) and onion. Sauté for 2 minutes or until the onions are softened.
  • 2. Add the lemon zest, tomatoes, garlic and white wine. Sauté for another 2 minutes.
  • 3. Add the shrimp and cook for 2-3 minutes on each side. Season the shrimp with salt and pepper to taste. Add a splash of lemon juice. Cook for 1 minute more.
  • 4. Transfer to warm plate and serve the shrimp topped with the basil chiffonade and lemon slices.

3/4 lb cooked shrimp, thawed and drained

1/4 cup parmesan cheese, grated

Steps:

Now that's a combination...cajun shrimp and chipotle mayo. This may also be served as an appetizer. Adapted from Scrumpdillyicious.

1 lb medium shrimp, peeled and deveined
2 tablespoons olive oil
1 tablespoon cajun seasoning (homemade or store bought)
1/2 tablespoon chipotle chile in adobo, minced
1/2 teaspoon brown sugar
1 lemons or 1 lime, sliced in wedges for garnish
salt and pepper, for seasoning
1 cup mayonnaise
2 -3 canned chipotle chiles in adobo (to taste)
1 tablespoon adobo sauce
1/2 lime, juice

Steps:

  • In a large bowl, toss together the shrimp with the olive oil, Cajun seasoning, brown sugar and minced chipotles in adobo sauce. Mix well to fully coat the shrimp. Cover and refrigerate for 30-60 minutes.
  • Grilling Method: Preheat an outdoor grill to medium and barbecue shrimp until they curl up and turn pink. These may be threaded on oil-rubbed or water-soaked wooden skewers.
  • In the meantime prepare the Chipotle Mayonnaise (instructions in last paragraph). Serve shrimp with dip.
  • Baking Method: Preheat oven to 350°F Spread out the marinated shrimp onto a foil-lined baking sheet and season with salt and pepper. Bake until the shrimp curl up and turn pink, about 10-15 minutes. Serve warm or at room temperature with a garnish of lemon or lime wedges.
  • Sauteeing Method: Preheat a large skillet over medium to medium-high heat. Add about 1/2 tablespoon of oil and once hot add the shrimp, being careful not to overcrowd the pan. Cook about 2 minutes per side.
  • To Make Chipotle Mayonnaise: Add all of the ingredients in a food processor and blend. Cover and keep refrigerated until ready to use.
