At one of the highest levels of heat comes one of Jamaica's most famous exports. Not reggae, not rum...JERK CHICKEN. We can handle the heat, but we're not here to show off how much pain we can tolerate. Looking to hit a delicate balance between heat and flavor, we made a fiery jerk-inspired spice rub for chicken wings and added a sweet and spicy mango-cilantro sauce to temper the heat.

2 tablespoons paprika
1 teaspoon cayenne
2 teaspoons ground allspice
1/2 teaspoon ground nutmeg
1/2 tablespoon garlic powder
1/4 teaspoon ground cloves
1 teaspoon minced ginger
2 cloves garlic, minced
2 teaspoons minced fresh thyme
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 pounds chicken wings, separated at the joint
1/3 cup orange juice
1/2 cup mango jam
1 tablespoon honey
1/4 cup cilantro leaves, plus more for garnish
1 tablespoon finely grated orange zest
2 scallions, chopped
1 Scotch bonnet pepper, chopped (see Cook's Note)

Steps:

  • Prepare a grill for high indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off).
  • For the wings: Add the paprika, cayenne, allspice, nutmeg, garlic powder, cloves, ginger, minced garlic, thyme, salt and pepper to a small bowl and stir to combine. Reserve 1 tablespoon of the spice mixture for the mango sauce.
  • Put the chicken wings in a large bowl with the remaining spice mixture. Toss to evenly coat. Reserve the wings while you make the sauce.
  • For the mango-cilantro sauce: Put the orange juice, mango jam, 1 tablespoon reserved spice mixture, honey, cilantro, orange zest, scallions and Scotch bonnet in a blender. Blend until smooth. Pour into a bowl and reserve at room temperature while you grill the wings.
  • Place the chicken wings on the grill over the indirect heat zone. Cover and grill for 5 minutes. Flip the wings and continue to cook for an additional 5 minutes. Move the wings directly over the heat and cook until nicely charred and cooked through, about 5 minutes.
  • Remove the wings from the grill and toss with the reserved sauce. Pile onto a platter and garnish with chopped cilantro.

You can adjust the heat in this recipe by the type of pepper you use. I used serrano peppers and thought it was just right, but I like food pretty spicy so if that's not for you, use a milder pepper, such as jalapeno. I found this in the Chicago Tribune 'Good Eating' section. I added the 2 hour chill time to the prep time.

3 hot red peppers, chopped (to taste)
2 garlic cloves, crushed
1 onion, chopped
1/2 cup water
1/4 cup vegetable oil
2 tablespoons white vinegar

2 teaspoons allspice
1 teaspoon salt
1 teaspoon fresh ground black pepper

Steps:

  • Arrange the chicken wings in a single layer in a large baking pan.
  • Combine remaining ingredients in a blender or a food processor; puree until very smooth. Pour sauce over the wings, coating evenly. Cover the pan with plastic wrap; refrigerate at least 2 hours.

Steps:

  • Make the marinade:.
  • In a food processor or blender purée the onion, the scallion, the garlic, the thyme, the salt, the allspice, the nutmeg, the cinnamon, the jalapeño, the black pepper, the Tabasco, the soy sauce, and the oil.
  • In a large shallow dish arrange the wings in one layer and spoon the marinade over them, rubbing it in (wear rubber gloves). Let the wings marinate, covered and chilled, turning them once, for at least 1 hour or, preferably, overnight.
  • Arrange the wings in one layer on an oiled rack set over a foil-lined roasting pan, spoon the marinade over them, and bake the wings in the upper third of a preheated 450°F oven for 30 to 35 minutes, or until they are cooked through.

1 tablespoon dried ground thyme
1 1/2 teaspoons cayenne pepper

3/4 teaspoon ground cinnamon

2 tablespoons soy sauce

jerk seasoning, season to your taste, as spicy as you like it
18 chicken wings

Steps:

  • Preheat the grill to medium high.

I was fortunate to receive an old family recipe from a business associate who is from Jamaica for jerk seasoning. We like it so much that I make 2# batches at a time. For those of you not familiar with Jerk, it is a spicy, sweet, tangy and HOT seasoning for grilled meat, pork and chicken particularly. This spice blend recipe will make enough for several batches, but remember, the idea is to put as much on the meat as you can get to stick.

2 tablespoons ground thyme
1 tablespoon ground rosemary
1 tablespoon ground allspice
1 tablespoon ground ginger
1 1/2 tablespoons sea salt
1 1/2 teaspoons onion powder

1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
3/4 teaspoon garlic powder

12 bay leaves (finely crumbled)

3 lbs chicken (pieces, wings, halves, whatever)
1 lime, juice of
1/4 cup olive oil

Steps:

  • Combine all but chicken, lime juice and oil in mixing bowl and whisk to mix well.
  • Whisk together lime juice and olive oil.
  • Rub chicken well with lime/oil mix. Do not marinate.
  • Coat chicken with dry seasoning/spice mixture. The idea here is to get as much as possible to stick to the chicken. We store our seasoning in a leftover spice container with large sprinkle holes and use that to season. This is not a rub, so it should not be applied in rub fashion.
  • Refrigerate 1-3 hours, then remove from refrigerator and allow to come to near room temperature.
  • Prepare grill for direct/indirect grilling.
  • Grill chicken over hot direct fire. Don't worry about the black, it's supposed to be there. In fact, 30-40% of the skin should end up black, but it will not be bitter.
  • Once seared, remove to the indirect heat area of the grill and cook to 165* internal temperature.
  • One quick dance across the direct heat before serving will help crisp it a bit.
  • Serve with plenty of napkins.

I had jerk chicken for the first time from a restaurant called "Flames" here in Boston, and, as is seemingly my mission nowadays, I wanted to find a way to make it at home. This is a recipe I've tweaked to my own personal tastes, but be warned, it is very VERY speecy spicy! So you may want to have some rice or fruit nearby to quench the FLAMES! I used my little Foreman grill, and the chicken turned out perfectly!

6 tablespoons olive oil
5 habaneros, chopped (wear gloves or be careful not to touch your eyes, very painful!) or 5 scotch bonnet peppers, with seeds, chopped (wear gloves or be careful not to touch your eyes, very painful!)
2 scallions, green and white parts, chopped
1/4 cup dried thyme
1 tablespoon dry mustard
1/2 cup malt vinegar
4 garlic cloves, peeled, chopped
4 teaspoons ground allspice
2 teaspoons ground nutmeg
1 tablespoon kosher salt
1 tablespoon fresh ground black pepper
3 tablespoons dark rum
2 tablespoons water
12 skin-on boneless chicken breasts
1 cup ketchup
3 tablespoons soy sauce

Steps:

  • Boil rum and 2 tablespoons water in small saucepan for 3 minutes.
  • Transfer rum mixture to blender; add oil, chiles, scallions, thyme, dry mustard, vinegar, garlic, allspice, nutmeg, salt, and pepper, blend until smooth.
  • Transfer 2 tablespoons jerk seasoning to small bowl; mix in ketchup and soy sauce to make sauce.
  • Arrange chicken in large glass baking dish and coat on all sides with paste. Cover and refrigerate at least 1 hour and up to 4 hours.
  • Arrange chicken breasts on grill, skin sides down. Grill, turning once, until cooked through, about 7 to 9 minutes per side. (On Foreman grill, just do 8-9 minutes.) Transfer breasts to platter with rice or other accompaniment. Serve with hot sauce on side.
