This Indian-inspired kofta curry aka meatballs in curry sauce need nothing else but plain basmati rice and a big spoon!

2 lbs lean ground pork (or lamb)
1 tbsp fresh ginger (peeled and grated or 1 tsp dried ginger)
1 tbsp cumin
1 tbsp coriander
1/4 tsp ground cloves
1/4 tsp ground cinnamon
1/8 tsp nutmeg
1/4 tsp black pepper
1/4 tsp cayenne pepper
1 tsp salt
2 tbsp plain yogurt
1 tbsp vegetable oil
1 large onion (chopped)
3 garlic cloves (minced)
1 tbsp fresh ginger (peeled and grated)
2 tbsp cilantro stalks (chopped)
3 tbsp Indian curry paste (not sauce)
400 gl/14 oz canned chopped tomatoes
250ml/ 1 cup water
10g/1 cup black kale/cavolo nero or spinach (chopped)
125ml/1/2 cup light cream/single cream (or coconut milk)
1 tsp garam masala (optional)
2 tbsp cilantro leaves (chopped)

Steps:

  • In a large bowl combine pork, ginger, cumin, coriander, cloves, cinnamon, nutmeg, black pepper, cayenne pepper, salt and plain yogurt.
  • Roll into golf ball-sized meatballs and brown in 1 tbsp of vegetable oil until golden but not cooked all the way through. Remove to a plate and set aside.
  • Discard excessive fat but leave approximately 1 tbsp in the pan. Add onions, garlic, ginger and chopped cilantro stalks and cook over low heat without browning for 10 minutes, stirring occasionally.
  • Add curry paste and stir for a minute, then add canned tomatoes and water, stir to combine, return the meatballs to the pan, and spoon some curry sauce on them to coat them, then turn the heat up and bring to a boil, then turn the heat to low, cover with a lid and simmer for 20 minutes.
  • Add chopped kale and any other vegetables if using and cook uncovered for 10 minutes longer, stirring once in a while to avoid burning. In the last few minutes add light cream and taste for salt, add more if necessary. (I add no salt to this sauce as Patak's curry pastes are quite salty already!)
  • Sprinkle with garam masala and chopped cilantro leaves. Serve with basmati rice, naan and/or lentil dhal for a low carb version.

500 g minced meat
2 tablespoons lemon juice
2 bread rolls
4 garlic cloves
2 small hot red chili peppers
5 cm gingerroot
1 egg
4 cloves
2 teaspoons turmeric
2 teaspoons cumin
2 teaspoons black peppercorns
4 cardamom pods
2 tablespoons coriander seeds
2 tablespoons fish sauce
1 tablespoon brown sugar
500 ml yoghurt
2 tablespoons red curry paste
2 tablespoons instant chicken bouillon granules
1 zucchini
1 red bell pepper
4 green onions
2 tablespoons sesame oil
2 tablespoons chopped coriander leaves

Steps:

  • Water bread rolls for 15 minutes, press out water afterwards.
  • Chop chilli, ginger and garlic.
  • Mix lemon juice, bread roills, minced meat, curcuma, chopped chilli, ginger and garlic and egg to a dough.
  • Ground gloves, cumin, black pepper, coriander seed and broken cardamom pods.
  • Add ground spices, fish sauce and brown sugar to dough.
  • Mix all ingredients and form meatballs out of 2 tbsp of dough.
  • Chop zucchini, bell pepper and green onions to 2 cm long pieces.
  • Heat sesam oil.
  • Roast meatballs 2 minutes from each side, then put aside.
  • Roast green onions for one minute, than add zucchini and bell pepper and roast for another two minutes.
  • Put yoghourt into the pan and add meatballs again.
  • Add curry paste and chicken broth
  • Cook for 10 minutes. Turn meatballs after 5 minutes.
  • Serve with rice and decorate with coriander leaves.
  • Enjoy!

500g minced chicken , turkey, lamb, beef or pork
1 medium onion
2 garlic cloves , crushed or chopped
2 tsp mild or medium curry powder
2 tsp ground cumin
1 tsp garam masala
½ tsp paprika or cayenne pepper
2 tbsp fresh coriander , chopped
1 egg , beaten
50g fresh breadcrumb
1 tbsp olive oil

Steps:

  • Heat oven to 180C/fan 160C/gas 4.
  • Put the mince into the mixing bowl. Add the onions, garlic, curry powder, cumin, garam masala, paprika or cayenne pepper and coriander, then mix well. By adding these spices, you'll get a delicious flavour without having to add any salt.
  • Add the beaten egg and breadcrumbs, then mix again.
  • Divide the meat mixture into 15-18 evensized pieces and shape into balls (they should be about the size of a walnut). Always wash your hands thoroughly after handling raw meat so you don't transfer any germs that may be on the meat to other food or equipment.
  • Heat the oil in the frying pan over a medium heat and add the meatballs using a spoon. Cook them for 5 mins, turning until golden brown. Remove from the pan and place them on to the tray. Bake in the oven for 15-20 mins.
  • Remove from the oven. Remember to use oven gloves! Allow to cool slightly and serve with a fresh, crisp green salad, some pitta bread and tomato salsa.

2 pounds ground beef round
1 large red onion, minced
2 large cloves garlic
3 tablespoons light soy sauce
2 large eggs, beaten
1 teaspoon minced ginger
1 teaspoon salt
1/2 teaspoon freshly ground pepper
4 teaspoons extra virgin olive oil
Indian Spiced Yogurt Sauce
1 pint yogurt
2 medium cloves garlic, minced
1 tablespoon fresh lemon juice
2 tablespoons extra virgin olive oil
2 teaspoons ground cumin
2 teaspoons ground turmeric
1/4 teaspoon cayenne
Salt and freshly ground pepper
Garnish
2 tablespoons minced curly parsley

Steps:

  • Meatballs
  • 1. Combine the ground beef, onion, garlic, soy sauce, eggs, ginger, salt, and pepper in the bowl. Mix the ingredients with your hands until they are well blended and hold together well.
  • 2. Preheat the broiler.
  • 3. Brush the baking sheet with 2 teaspoons of the oil. With your hands, form the meat mixture into 24 round balls and place them 1 1/2 inches apart on the baking sheet. (Each ball should weigh about 1/2 ounce.) Lightly moisten your hands before forming each ball to facilitate rolling. Brush the meatballs with the remaining oil and broil them, 4 inches from the heating element, 6 to 8 minutes, turning them once, until they are cooked through.
  • Place the meatballs in a shallow bowl with the Indian-Spiced Yogurt Sauce on the side, or cut off the top of a small round loaf of bread, remove the insides, and spoon the meatballs into the bread. Dust with chopped parsley for color.

  • 1. Line the strainer with the cheesecloth. Place it over a bowl and spoon the yogurt into the strainer. Allow the yogurt to drain in the refrigerator for 3 hours.
  • 2. Transfer the drained yogurt from the cheesecloth to the other bowl and blend in the garlic, lemon juice, oil, cumin, turmeric, and cayenne. Season to taste with salt and black pepper.

Steps:
