This simple peppercorn sauce is packed with flavour and is a must-have when serving up steak. Red wine, double cream and stock make a rich, flavoursome condiment

1 tbsp butter
2 large shallots , finely chopped
3 tsp green peppercorns , in brine, drained
3 tbsp brandy
100ml red wine
200ml good-quality beef stock
4 tbsp double cream

Steps:

  • Put the butter in a large, high-sided frying pan, then fry the shallots and peppercorns over a medium heat for 5 mins, until the shallots have softened but not browned. Add the brandy and cook until it has reduced away to almost nothing.
  • Pour the wine into the pan, turn up the heat and boil rapidly until reduced by half. Add the stock and reduce again, this time by two-thirds, this will take around 5 mins. Stir the cream into the sauce and allow it to thicken slightly. Check the sauce is seasoned to your liking before serving with steak.

4 steaks or 4 chicken breast fillets
1 cup beef stock or 1 cup chicken stock
1 cup cream
3 teaspoons canned green peppercorns, rinsed and drained
1 tablespoon brandy

Steps:

  • Pan fry the steak or chicken in a little oil or butter. Remove from the an and cover to keep warm.
  • Add the stock to the meat juices in the pan. Stir over low heat until boiling, then add the cream and peppercorns. Boil for 8-10 minutes, stirring constantly until slightly thickened. Add the brandy and boil for 1 minute. Serve with the meat.

FILLET WITH PEPPERCORN SAUCE

8 whole beef fillets or other good steaks
Lemon pepper
Seasoned salt
Freshly ground black pepper
Melted butter
4 to 6 tablespoons tri-color peppercorns, crushed
4 tablespoons butter
1 beef bouillon cube
4 to 6 tablespoons Dijon mustard
1 cup brandy
1 1/2 to 2 cups heavy cream (can substitute half-and-half for some of the cream)

Steps:

  • For the steaks: Sprinkle both sides of the steak with lemon pepper, seasoned salt and plenty of freshly ground black pepper. Grill for 2 to 3 minutes per side over high heat, and then a further 3 to 5 minutes over lower heat. Brush with melted butter as they cook.
  • Meanwhile, make the sauce: Start by crushing the peppercorns with a rolling pin in a zip-top bag and set them aside.
  • Next, heat a heavy ovenproof skillet over medium-high heat and melt the butter. Crumble in the beef bouillon cube. Whisk to combine. Then add the Dijon mustard to the skillet and whisk it around a bit. Pour in the brandy. Whisk the Dijon and brandy together until combined, and then let it bubble for about 45 seconds or so. Then pour in the heavy cream and the crushed peppercorns. Whisk it all together, allowing it to bubble for a few minutes to thicken. Spoon it over the grilled steaks.

Pan juices from steak
4 steaks (1-1 1/2 inches thick)
1/3 cup minced shallot
1 clove garlic minced
1/4 cup Cognac
2 cups brown stock or canned beef broth
1 tablespoon black peppercorn, coarsely crushed
1/3 cup heavy cream
4 teaspoons cornstarch
2-3 teaspoons Dijon mustard

Steps:

  • Cook steaks and keep them in one layer in skillet. Remove steaks from skillet and skim all but 1 tablespoon of the fat from the pan juices in the skillet. To skillet add, shallots and minced garlic and cook them for 1 to 2 minutes until softened. Deglaze with Cognac, scraping up bits which cling to skillet. Add stock or canned beef broth and peppercorns. In a small bowl combine cup heavy cream and cornstarch. Whisk cornstarch mixture into sauce and simmer until lightly thickened. Whisk in mustard and pour juices from plate into pan.

2 tablespoons olive oil
2 shallots, sliced
2 cloves garlic, peeled and smashed
3 sprigs fresh thyme, leaves only
1 cup brandy
1 box beef stock
2 cups cream
2 tablespoons grainy mustard
1/2 cup green peppercorns in brine, drained, brine reserved

Steps:

  • Add olive oil to pan after removing beef. Add shallots, garlic, and thyme; saute for 1 to 2 minutes, then, off heat, add brandy and flambe using a long kitchen match. After flame dies down, return to the heat, add stock and reduce by about half. Strain out solids, then add 2 cups cream and mustard. Reduce by half again, then shut off heat and add green peppercorns.

  • Rinse the pepper corns and set aside.

  • Stir over low heat until boiling, then add the cream and peppercorns.

Elk is perhaps the finest of all the venison meats. It is very fine grained and mild flavoured, almost like beef. Like all wild venison, it is very lean so it benefits from larding, barding and marinading. With that in mind, you can treat it like beef. Steaks are best grilled, cooked rare or at most medium rare. Well done meat will be tough due to the lack of fat.

4 elk steaks (1)
2 cloves garlic, minced
2 tablespoons vegetable oil
salt & pepper
1 teaspoon butter
1 teaspoon vegetable oil
1/2 small red onion, finely diced
1/4 cup balsamic vinegar
1 cup red wine
1 cup beef stock
2 tablespoons grainy mustard
1/4 cup green peppercorn, rinsed
salt & pepper

Steps:

  • Trim any visible fat from the steaks.
  • Combine the garlic and oil.
  • Pour over steaks and marinate, refrigerated, overnight. Season the steaks with salt and freshly ground pepper.
  • Grill or broil about five-six minutes per side, depending on the heat level of the grill.
  • Stop while the steak is still quite rare. Set aside on a heated platter in a low oven until the sauce is ready.
  • GREEN PEPPERCORN SAUCE: In a small saucepan, melt the butter in the oil over high heat until hot but not smoking.
  • Add onion, and saute, stirring, until tender, about 30 sec. Add vinegar and wine, and cook, scraping bottom of pan to dissolve residue, until reduced by about half, 2 to 3 min.
  • Add stock and mustard, and cook, stirring frequently, until reduced by about half, 4 to 6 min.
  • Remove from heat, stir in peppercorns and correct sea soning.
  • Drizzle sauce over steaks.
  • Serve at once.

A friend gave me the cherished green peppercorns & this recipe. It's simple & scrumptious. Elegant enough for company, yet doesn't involve dozens of ingredients or hours of prep.

4 boneless chicken breasts
1 (14 ounce) can Swanson chicken broth (or other brand)
1 cup chablis
1 1/2 tablespoons green peppercorns in brine
1 1/2 tablespoons cornstarch
1 cup heavy cream

Steps:

  • Brown the chicken breasts in a frying pan, just to add color.
  • Place the chicken breasts in an oiled roasting pan, sprinkle with salt & pepper, & bake at 350 for approximately 20 minutes.
  • Sauce:.
  • Crush the peppercorns with a mortar & pestle or between 2 spoons.
  • In a medium saucepan, add chicken broth, chablis, and peppercorns.
  • In a small prep bowl, combine a couple tablespoons of the broth/chablis with the cornstarch & then incorporate back into the saucepan.
  • On low heat, stir until slightly thickened.
  • Add cream & stir.
  • Remove chicken from oven (any juices from the chicken can be added to the sauce).
  • Place chicken on plates & spoon sauce over each breast.
  • Prep time includes the time to make the sauce while the chicken is cooking.
  • The green peppercorns can be found in specialty shops or online.

6 (6 ounce) filet mignon
1 tablespoon butter
1 tablespoon olive oil
1/3 cup brandy (optional)
1/3 cup shallot, chopped
1 1/2 tablespoons green peppercorns
3/4 cup whipping cream
1 tablespoon Dijon mustard
1 tablespoon fresh tarragon or 1/2 tablespoon dried tarragon

Steps:

  • Heat butter and oil in a large skillet over medium heat.
  • Season filets with salt and pepper.
  • Saute 5 minutes per side for rare (10 min for medium).
  • Transfer to a heated platter and keep warm.
  • To make the sauce, add brandy to same skillet.
  • Set aflame, shaking pan until flame dies.
  • Add shallots and stir on high heat for 2 to 3 minutes.
  • Rinse green peppercorns in cold water.
  • Drain and chop.
  • Add to pan with cream, mustard, and tarragon.
  • Boil on high heat 2 to 3 minutes, stirring until sauce thickens.
  • Add juice from filets.
  • Pour sauce over filets and serve.
