SPICY GUACAMOLE
This party-time guacamole is spicy, quick, and relatively healthy. Refrigerate guacamole with plastic wrap against the surface of the dip to prolong shelf life. Serve with tortilla chips or your favorite dipping accompaniment.

Steps:
- Add avocados and lemon juice to a medium mixing bowl; mash until desired consistency is almost reached. Stir in tomatoes, scallions, jalapeno peppers, garlic, cilantro, salt, red pepper flakes, pepper, and cayenne. Taste guacamole and adjust for seasoning.

This is a wonderful guac recipe. My mom gave this to me; she had xeroxed it from what looks like maybe Taste of Home magazine. It is great! And definitely spicy. If you need more spice, add some hot sauce. I don't think you'll need it, though :-)

- Using fork, mash avocado with lime juice in small bowl.
- Add cilantro, chopped onion, chopped garlic, serrano chilies and salt and stir to combine.

- Mash avocado and tofu in a bowl.
- Squeeze garlic through garlic press and add to avocado.
- Finely chop bell pepper and green onion and stir.
- Add herbs and spices.
- Mix well.
- Add hot sauce, stir in lime juice.
- This can be refrigerated as leftovers but don't make more the a few hours in advance of serving.
GARLIC GUACAMOLE
No tomatoes in this guac - which makes it a great one for when fresh tomatoes aren't readily available. I often make it in the summer even when tomatoes are available as this is one of my favorite guacs - fair warning though, the garlic comes through loud and clear!! - Halve avocado and scoop pulp into medium bowl. Add minced jalapeños and finely chopped onions.
- Place chopped garlic clove on cutting surface and sprinkle with the sea salt (or other course salt). Using the side of a knife, mash the salt into the garlic until you have a paste.
- Add garlic paste & lemon juice to avocado mixture and mash together with a fork until desired consistency is reached making sure to distribute garlic throughout.
- Serve with tortilla chips! Store leftovers in tightly covered container in fridge - although best eaten right away.

SPICY GARLIC GUACAMOLE
Guacamole is one of my favorite snacks in the world. It's healthy - full of great fats and tons of health benefits. It's versatile - snack on it with some chips or use it as a topping for nearly any dish (eggs, toast, sandwich, burger, etc), and it is DELICIOUS as a party appetizer. There has never been a time I served it and didn't get asked for the recipe.

- Chop the garlic and chilies in really fine pieces, The finer the better. Most recipes would tell you to de-seed your peppers, but not I. That's where the kick comes in.
- Chop your onion, in fine cubes. Wear your goggles if you need to.
- Chop the tomato. Its important to remove the seeds so the guac isn't too runny.
- Add the avocado. Here's a cool trick on how to cut it like a pro.
- Add the sea salt. I normally add around 1 tbsp, but taste test it as always.
- Add in the lime juice and chopped cilantro last.
- Stir! If you have a mortar & pestle, that's even better.

SPICY BASIL GUACAMOLE

- In a large mixing bowl, mash 1 of the chopped avocados with a fork. Add the remaining chopped avocados, the garlic, tomatoes, lime juice, lemon juice, green onions, basil, crushed red pepper flakes, salt and pepper; stir to combine. Taste and adjust the seasoning, as needed, with crushed red pepper flakes, salt and pepper, to taste.
- If not serving immediately, sprinkle a bit of lemon juice over the top and cover put plastic wrap directly on top of the guacamole surface. Store in the refrigerator for up to 2 days.

SPICY GUACAMOLE
This spicy guacamole goes GREAT as an appetizer with chips or as an accent to main dishes, such as fajitas, etc. The jalepenos really give it a spicy kick! I find it best to buy avocados when they're green and ripen them myself. The credit for this recipe goes to my sister. It took a LONG time for me to get this recipe from her; hope you enjoy it.

Steps:
- In small pot, boil 2-3 jalepenos. (If your jalepenos aren't very hot, you can add more.) Boil them for about 20 minutes on medium heat, or until they're squishy. You'll know they're ready when the color turns muted. The tops should just pull right off.
- With tops off, squeeze them gently to remove excess water. Put them in the bowl that will contain your guacamole. With a fork, mash them up into small, squished bits, making sure it separates instead of sticking together.
- Peel, deseed, and halve the avocados. Add them to the jalepenos and mix VERY well. You want to make sure you distribute the jalepenos evenly.
- Squeeze the lemon to add juice into the mixture. Add salt and garlic powder and mix again.
