The traditional BBQ sauce for grilled chicken (or ribs!) that everyone has had at some point -- very tasty with a little extra personality. You will not regret cooking!

Steps:
- Heat the oil in a skillet over medium heat and cook the onion and garlic until tender. Mix in ketchup, vinegar, Worcestershire sauce, brown sugar, dry mustard, salt, pepper and hot sauce. Bring to a boil. Reduce heat to low and simmer 10 minutes, stirring occasionally. Remove from heat and set aside.
- Preheat grill for high heat.
- Lightly oil grill grate. Place chicken on grill. Brush constantly with the sauce and cook 8 to 15 minutes on each side, depending on size of piece, until juices run clear. Discard any remaining sauce.

- Add all ingredients except the chicken to a medium bowl and whisk to combine. *
- Transfer the marinade mixture to a large ziptop plastic bag, add the chicken, seal, and squish contents around to evenly coat the chicken.
- Place bag in the fridge to marinate for at least 30 minutes, or up to 24 hours.
- Preheat an outdoor grill to medium-high heat (or indoor grill pan) and grill the chicken for about 7 minutes, or until done; flip intermittently to ensure even cooking.
- Optionally garnish with fresh herbs and serve with reserved marinade, if desired.

- In a small bowl, mix together salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley. Sprinkle spice mixture generously on both sides of chicken breasts.
- Heat butter and olive oil in a large heavy skillet over medium heat. Saute chicken until golden brown, about 6 minutes on each side. Sprinkle with 2 teaspoons garlic powder and lime juice. Cook 5 minutes more, stirring frequently to coat evenly with sauce.

- In a small saucepan, heat oil over medium heat. Add garlic; cook and stir 1 minute. Add chili sauce, brown sugar, 1 teaspoon seasoning blend and 1/4 teaspoon cayenne. - In a shallow glass dish, mix the oil, lime juice, lime zest, garlic, oregano, red pepper flakes, salt, and black pepper. Add chicken, and turn to coat. Cover, and marinate in the refrigerator for 1 hour, turning occasionally.

- Combine jelly, garlic, herbs, and oil. Spread mixture between skin and meat of each thigh. Place in a large ziplock bag with thighs. Refrigerate overnight.

BARBECUED GARLIC CHICKEN
This is my variation on a Thai dish call Gai Yang. It is a versatile dish which can be eaten cold at a picnic. It is a crowd pleaser.

Steps:
- Cut the chicken in half lengthways, and if you like, remove the bones with a small pointed knife, leaving only the wing bones.
- If using chicken pieces, proceed directly to step 2.
- Crush the garlic with the salt to a smooth paste.
- Coarsely crush the peppercorns in a motar and pestle or a blender.
- Combine in a flat dish with the coriander, and the lime juice.
- Rub the mixture into the cicken on all sides, cover and refrigerate overnight, or at least an hour.
- However, this recipe tastes better if refrigerated over night.
- Barbecue the chicken halves or chicken pieces, turning the chicken every 5 minutes or so, until the chicken is no longer pink and the skin is crisp.
- If the weather does not permit, you can cook under a grill, (broiler) or in the oven.
- To serve the boned chicken, diagonally slice the chicken skin side up and place on a serving platter.
- If using chicken pieces arrange the pieces on a serving platter.
- Garnish with halved cherry tomatoes and curls of spring (green) onions.
- Serve with a salad of sliced tomatoes, sliced cucumber and spring (green) onions which have been seasoned with lime juice and salt only.
- A side dish of steamed rice goes well with this dish.
GARLIC-SOY GRILLED CHICKEN BREASTS
This recipe recently appeared in our local newspaper. We tried it and loved it! It's a great tasting and easy recipe to make, especially for camping. The hot chili paste gives it a nice bite but, of course, we added more than the one teaspoon called for in the original recipe. We served it with grilled vegetables and garlic bread.

- Using a sharp knife, cut through the two wing joints; discard wing tips. Place wings in a large bowl; add vinegar and water. Refrigerate, covered, 45 minutes. - Coat both sides of chicken breasts in Frank's Red Hot.
- Sprinkle both sides generously with garlic powder.
- Sprinkle both sides with black pepper.
- Let stand in fridge for at least 30 minutes.
- Spray grill with oil.
- Preheat on high for 10 minutes.
- Transfer chicken breasts to grill with tongs and cook for 7-10 minutes on each side until done.
- Baste with hot sauce while cooking for more flavour.
