SPICY FISH AND OLIVE SPAGHETTI



Spicy Fish and Olive Spaghetti image

This easy weeknight dinner is loaded with fiber and protein and feeds a family of four with just one 8-ounce piece of fish. And thanks to the whole-grain pasta, this 420-calorie-per-person dish is satisfying as well as economical.

10 ounces whole-grain spaghetti (about 3/4 of a box)
2 tablespoons extra-virgin olive oil, plus more for tossing
2 cloves garlic, thinly sliced
Kosher salt
Pinch crushed red pepper
One 28-ounce can no-salt-added whole plum tomatoes, crushed by hand
1/2 teaspoon dried oregano
1 large (8-ounce) tilapia fillet, cut into 3/4-inch pieces
10 kalamata olives, quartered
1/2 cup loosely packed chopped parsley (about 1/2 bunch)

Steps:

  • Bring a large pot of water to a boil. Add the spaghetti and cook according to package directions; drain, reserving 1 cup of the pasta water. Toss the spaghetti with some oil and set aside.
  • Add the oil, garlic, 3/4 teaspoon salt and crushed red pepper to a large skillet over medium-high heat. Once the oil begins to shimmer, add the tomatoes, reserved pasta water and oregano; bring to a high simmer and cook until the sauce thickens but is still loose, 12 to 15 minutes.
  • Add the fish and olives and cook, stirring occasionally, until the fish is cooked through and flaky, 3 to 4 minutes. Add the spaghetti and parsley. Toss to combine and divide among four bowls.

1 lb tilapia fillet
1 garlic clove, crushed
1 teaspoon garam masala
1 teaspoon chili powder
1/4 teaspoon turmeric
1/2 teaspoon salt
1 tablespoon vegetable oil
2 tablespoons lemon juice

Steps:

  • Pat fish dry.
  • In small bowl mix together the garlic, garam masala, chili powder, turmeric, salt, oil and lemon juice.
  • Baste the fish evenly all over with mixture.
  • Grill fish for 10 minutes basting often.
  • Serve hot.

2 -3 lbs fresh fish fillets (black drum, redfish, trout or your choice)
15 ounces prepared alfredo sauce (Bertolli brand is really good)
1 can rotel diced tomatoes and green chilies (mild is plenty spicy for me!)
2 tablespoons butter
2 tablespoons olive oil
tony chacere's creole seasoning
lemon pepper

Steps:

  • Check fillets for small bones, rinse and pat dry with paper towels.
  • Sprinkle both sides of fillets lightly with Cajun seasonng and lemon pepper.
  • Heat cast iron or non-stick skillet, add butter and olive oil.
  • Place fillets in hot skillet, sear several minutes per side until light brown and easily flake in thickest parts.
  • Drain Rotel and mix with Alfredo Sauce.
  • Pour Alfredo/Rotel mixture evenly over fillets.
  • Reduce heat and continue cooking several minutes until sauce mixture begins to brown at edges.
  • Remove from heat, cover and let rest for five minutes or more to allow flavors to blend.

1/2 cup lime juice
1/2 cup all-purpose flour
2 tablespoons taco seasoning
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
3 tablespoons vegetable oil

Steps:

  • In a dish, arrange fish in a single layer.
  • Pour lime juice over fish.
  • Let stand for 15 minutes.
  • Combine the flour, taco seasoning, cumin and cayenne.
  • Remove fillets from juice and pat dry with paper towels and discard lime juice.
  • Coat fillets with flour mixture.
  • In a large skillet, cook fillets, in batches, over medium-high heat in oil for 6-8 minutes on each side or until fish flakes easily with a fork.

This fish is seasoned with Ethiopian chili powder, berbere. You can bake the fillets or fry them in a skillet.

1 pound(s) tilapia fillets (may use another white fish)
2 teaspoon(s) berbere
3 tablespoon(s) olive oil
1/2 cup(s) breadcrumbs, finely crushed
1/2 cup(s) buttermilk
1 - lemon
1/4 teaspoon(s) ground allspice
- salt, to taste

Steps:

  • Cut the fish fillet into 4 pieces. Roll the lemon to release the juice, and rinse the fillets with fresh lemon juice. Pat dry.
  • Mix the berbere, allspice and breadcrumbs.
  • Rub the fillets with 2 tablespoons of the oil.
  • Dip the fillets in the buttermilk and then into the breadcrumbs, covering all sides.
  • On a baking rack, lay the fish fillets side by side; lightly coat the fillets with one tablespoon of oil;
  • In a preheated 400° oven, bake the fillets for 15 minutes or until golden brown; or in a greased, medium heat skillet, fry the fillets, turning once, until golden brown.
