An easy everyday Fish Curry with coconut and tamarind. This ones spicy, tangy, sour and bursting with flavour.

3/4 cup freshly grated Coconut (see note 1)
1 Tablespoon Coconut Oil
2 medium Onions (sliced)
8 Kashmiri Red Chilies (whole)
1 Teaspoon Mustard Seeds
1 Teaspoon Coriander Seeds
6 Cloves Garlic
1 Teaspoon whole Peppercorns
1 Sprig Curry Leaves
1 Tamarind (marble sized Ball)
1 large Tomato (cut into chunks)
1/2 cup Water
600 Grams Seer Fish (Surmai/Anjal/Kingfish)
1 Teaspoon Turmeric Powder
2 Tablespoons Coconut Oil
1 ½ Teaspoons Salt
½ Tablespoon Red Chilli Powder
1 Tablespoon Coconut Oil
6-8 Cloves Garlic (with the skin on, smashed)
1 Teaspoon Mustard Seeds
1 sprig Curry Leaves

Steps:

  • Clean and wash the fish slices and rub turmeric all over them. Cover and keep aside. Marinate for 15 minutes.

Simple fish curry made in Indian style. Mildly spicy, flavorful and delicious tasting fish curry. Serve it with rice or roti.

500 grams Fish ((half kg))
½ tbsp ginger garlic paste
⅛ tsp turmeric
¼ to ½ tsp red chilli powder
¼ tsp salt (or as needed)
1 tbsp oil ((adjust as needed))
½ tsp cumin ((or jeera))
2 medium onions (sliced or 1 cup sliced)
½ tbsp ginger garlic (minced or paste)
2 medium tomatoes (ripe (¾ to 1 cup chopped))
½ tsp salt ((adjust to taste))
1 tsp red chilli powder ((adjust as needed))
⅛ tsp turmeric
½ tsp fennel seeds ((optional) (saunf))
2 tbsp coconut ((grated or ¼ cup coconut milk or 12 cashew nuts))
1 tbsp oil
1 sprig curry leaves (or small bay leaf)
1 to 2 green chili ((chopped or slit))
1 to 1 ½ tsp garam masala (or curry powder as needed (refer notes))
1 ¼ to 1 ½ cup water

Steps:

  • Marinate fish with ½ tbsp ginger garlic paste, ⅛ tsp turmeric, ¼ tsp red chilli powder & ¼ tsp salt.
  • On a flat fry pan, heat 1 tsp oil. Fry fish pieces slightly until the raw smell goes away just for 2 to 3 mins on both sides. You can also sear the fish. Keep this aside. (refer picture below)
  • Heat 1 tbsp oil in a pot and add cumin. When they sputter, add onions and saute until lightly golden.
  • Next add ginger garlic paste and saute for 30 seconds. Add tomatoes & ½ tsp salt. Saute until tomatoes turn soft and mushy.
  • Next add coconut, fennel seeds (optional), red chili powder & turmeric. Fry until the mixture turns fragrant & raw smell has gone away.
  • Cool this & add to a blender jar along with 2 to 4 tbsps water. Blend to a smooth or coarse paste to suit your liking. (refer notes). You can also use a immersion blender. Keep this aside.
  • Add 1 tbsp more oil to the same pot used earlier. Heat up on a low flame.
  • When the oil turns slightly hot, add curry leaves & green chilies.
  • When they splutter, add the ground onion tomato paste and garam masala. Fry until the mixture smells good. If you feel it is not hot enough for your taste, then add more chilli powder at this stage & saute.
  • Pour 1 ¼ to 1½ cup water. Mix and bring it to a boil. Cook until you see traces of oil on the surface and the gravy thickens a bit.
  • Gently slide the fish pieces and cook covered on a medium heat.
  • Carefully flip or turn the pieces to the other side after 3 to 4 mins.
  • Cook until the fish pieces bulge a bit. This is the indication they are cooked completely. Taste the curry and add more salt if needed.
  • Optionally garnish fish curry with coriander leaves if desired.

1 ½ lb white fish
3 tablespoons red Thai curry paste (divided)
2 tablespoons coconut oil
½ medium onion (finely minced)
2 tablespoons finely minced ginger
3 cloves garlic (finely minced)
15 ounce can coconut milk
½ cup water
1 tablespoon fish sauce
1 tablespoon coconut or brown sugar
4 cups chopped veggies (pictured are green beans, carrots, and red bell peppers)
Minced cilantro and lime juice (to serve)

Steps:

  • Cut the fish into pieces about 2-inches wide. Dry the fish with a paper towel then rub 1 tablespoon of the curry paste over the pieces.
  • Heat the oil in a large pot over medium-high heat. (See notes.) Add the onion, ginger, and garlic and cook until golden brown, about 5 minutes. Add the remaining 2 tablespoons of curry paste, coconut milk, water, fish sauce, and sugar. Add the veggies and bring the pot to a boil.
  • Reduce the heat to medium-low and add the fish. Cover the pot and cook for 5 minutes, or until the fish is no longer opaque. If your fish is quite thick, you may need to flip the pieces over and cook for 1-2 minutes more.
  • Serve with a little minced cilantro and a squeeze of lime juice.

1 tbsp oil
1 onion, chopped
2 tbsp medium curry powder
thumb-sized piece ginger, peeled and finely grated
3 garlic cloves, crushed
2 x 400g cans chopped tomatoes
400g can chickpeas
4 cod fillets (about 125-150g each)
zest 1 lemon, then cut into wedges
handful coriander, roughly chopped

Steps:

  • Heat the oil in a large, lidded frying pan. Cook the onion over a high heat for a few mins, then stir in the curry powder, ginger and garlic. Cook for another 1-2 mins until fragrant, then stir in the tomatoes, chickpeas and some seasoning.
  • Cook for 8-10 mins until thickened slightly, then top with the cod. Cover and cook for another 5-10 mins until the fish is cooked through. Scatter over the lemon zest and coriander, then serve with the lemon wedges to squeeze over.

From Leith's Cookery Bible - at last I found the fish curry I like - any firm white fish will do for this curry. Be very careful not to overcook the fish as it will begin to fall apart and look unattractive. It is a fairly mild curry but it can be made hotter by using an extra green chilli. Remove the seeds of the green chilli under cold running water.

675 g fish, filleted and skinned
1/2 inch piece fresh ginger, slivered
1 garlic clove, crushed
suflower oil
1 large onion, sliced
1 green pepper, deseeded and chopped
1 green chili, deseeded and chopped
5 ml ground cumin
5 ml ground cinnamon
5 ml turmeric
water
110 g Greek yogurt
of fresh mint

Steps:

  • Cut the monkfish into 1 inch cubes.
  • Fry the fish in a non-stick pan in a little sunflower oil with the ginger and garlic. Remove from the pan.
  • Add the onion, pepper and green chilli and allow to soften without browning for 2-3 minutes. Add the dry spices and cook for a further 2 minutes. Stir reguarly and add a little extra oil if they are getting too dry.
  • Take the pan off the heat. Return the fish, ginger and garlic. Add enough water to half cover the fish and vegetables and bring grandually up to the boil. Season well. Simmer for 10 minutes., Remove the fish with a slotted spoon. Reduce the sauce, by boiling rapidly to a syrupy consistency.
  • Beat the yohurt with a little water, add some of the hot fish juices, mix well and return to the pan. Bring up to the boil but do not allow it to get too hot. Return the fish to the saucepan.Pile into a warm serving dish and serve decorated with roughly chopped fresh mint.

1-2 tbsp Madras curry paste (we used Patak's)
400g can tomato
200ml vegetable stock

rice or naan bread

Steps:

  • Heat the oil in a deep pan and gently fry the onion and garlic for about 5 mins until soft. Add the curry paste and stir-fry for 1-2 mins, then tip in the tomatoes and stock.
  • Bring to a simmer, then add the fish. Gently cook for 4-5 mins until the fish flakes easily. Serve immediately with rice or naan
