1 box (9 oz) frozen corn, thawed
2 medium carrots, cut into chunks (1 cup)
2 stalks celery, chopped (2/3 cup)
1 medium onion, cut into 1/2-inch-thick slices
2 cloves garlic, finely chopped
1 cup Old El Paso™ Thick 'n Chunky salsa
1 1/2 teaspoons ground cumin
1 teaspoon chili powder
1/2 teaspoon freshly ground pepper
1 lb boneless skinless chicken breasts
1/2 lb boneless skinless chicken thighs
2 1/2 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
4 soft corn tortillas (6 inch), cut into strips
Chopped fresh cilantro, if desired

Steps:

  • Spray 4- to 5-quart slow cooker with cooking spray. In slow cooker, mix potatoes, corn, carrots, celery, onion and garlic. Stir in salsa, cumin, chili powder and pepper. Place chicken on top of vegetable mixture. Pour broth over ingredients.
  • Cover; cook on High heat setting 4 hours.
  • Remove chicken from slow cooker to plate. Shred using 2 forks. Return chicken to slow cooker. Stir tortilla strips into stew. Garnish with cilantro.

1 whole garlic bulb
2 to 3 tablespoons olive oil, divided
2 dried ancho chilies
2 dried chipotle chilies
1 bottle (12 ounces) dark beer
3 pounds beef stew meat, cut into 3/4-inch pieces
2 large onions, chopped
3 cans (16 ounces each) kidney beans, rinsed and drained
3 cans (14-1/2 ounces each) diced tomatoes, undrained
2 cans (8 ounces each) tomato sauce
2 tablespoons Worcestershire sauce
1 tablespoon chili powder
1 teaspoon pepper
1/2 teaspoon salt
Optional: Shredded cheddar cheese and sliced jalapeno pepper, seeded

Steps:

  • Preheat oven to 425°. Remove papery outer skin from garlic bulb, but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Brush cut cloves with 1 teaspoon oil. Wrap in foil. Bake until cloves are soft, 30-35 minutes. Unwrap and cool slightly. Squeeze garlic from skins; mash with a fork., Meanwhile, in a large dry skillet over medium-high heat, toast chilies on both sides until puffy, 3-6 minutes. (Do not blacken.) Cool. Remove stems and seeds; coarsely chop chilies. Place in a small bowl; cover with beer. Let stand until softened, about 30 minutes., In the same skillet, heat 1 tablespoon oil over medium-high heat. Brown beef in batches, adding additional oil if needed; transfer to a 6-qt. slow cooker. In the skillet, heat 2 teaspoons oil over medium heat. Add onions; cook and stir until tender. Add to beef., Stir in the remaining ingredients, mashed garlic and dried chilies mixture. Cover and cook on low until meat is tender, 7-9 hours. If desired, serve with cheese and jalapenos.

2 (15.2 ounce) cans whole kernel corn, with liquid

Steps:

  • Crumble the ground beef into a large skillet over medium-high heat. Add the sausage, garlic and onion; cook and stir until the meat is no longer pink. Drain off grease, and transfer the contents of the skillet to a large pot.
  • Pour the tomatoes into the pot with the meat, and stir in the potatoes, pinto beans, corn, diced tomatoes with chilies, mixed vegetables and water. Season with cumin, chili powder, salt and pepper. Cover, and simmer over medium-low heat for at least 1 hour. Stir occasionally. The longer this stew cooks, the better it gets.

14 ounces dried pinto beans
4 cups water, or more as needed, for boiling
Splash vegetable oil
13 ounces Mexican longaniza sausage, casing removed, broken into large pieces
2.6 ounces white onion, evenly chopped
4 medium poblano pepper, seeded, sliced into long strips
4 cloves garlic, minced
3 Serrano chile peppers, evenly sliced
1/2 tablespoon fine sea salt, or more to taste
1/2 tablespoon ground cumin
2 dried bay leaves
5 fresh epazote leaves, optional
6 cups broth from beans or a mixture of broth and water, boiling

Steps:

  • Gather the ingredients.
  • Pick through the beans and remove any rocks or debris.
  • Then throughly rinse and place in a large pot. Pour in enough water to cover by 3 inches.
  • Partly cover and simmer until cooked through. You will most likely need to add more water to the pot, do not let them dry out and always keep plenty of water in the pot.
  • Once the beans are cooked, separate them from the broth and reserve the broth. (Please make sure you have all of the ingredients ready to go because the following process moves fast.)
  • In a large pot heat a splash of oil, then add the longaniza and sauté until it begins to brown slightly.
  • Drain the sausage, but leave a bit of the oil in the pan, set the sausage aside.
  • Next add the onion and sauté until soft.
  • Then add the Poblanos and sauté them for about 4 minutes.
  • Add the garlic and Serrano chilies and sauté for about 3 minutes - be careful not to breathe in the chile smoke, it will make you cough.
  • Now add the salt, ground cumin, and bay leaves.
  • Then gently pour in the drained-cooked beans.
  • Finally, very carefully, pour in the broth and give the stew a gently stir.
  • Then place the epazote inside the pan.
  • Partially cover and simmer under medium-low heat for about 45 minutes or longer if desired. The amount of broth that will be left in the pot is entirely up to you. Some people like their beans more soupy while others chunkier. Taste and adjust seasoning if desired.
  • Allow to cool slightly before serving.
  • Serve as a main dish topped with finely chopped cilantro and with warm corn tortillas on the side. Alternatively, these beans may be served as a side dish to grilled meats like steak -- or arranchera is my favorite.

SLOW-COOKER COWBOY CHILI

When I make this recipe, I like it to be so hot it's barely edible, so I put in about a dozen serano peppers. If you want it milder you can just add one or two jalapenos or omit them entirely. I also put canned jalapenos in mine which I don't think are very spicy but they do add a nice peppery flavor. I like to serve this chili in sour dough bread bowls. Note: When I do anything in the slow-cooker, I always wait and add the onions a couple of hours before the end. When you leave onions in a slow-cooker too long they get an upleasant taste which taints the whole dish. This is just a preference of mine; if they don't bother you you can put them in with the rest of the ingredients.

drizzle of oil
1 large onion , chopped
6 rashers smoked streaky bacon , chopped
8 chicken portions (we used thighs and drumsticks), skin removed
1 tbsp smoked paprika
2 x 400g cans chopped tomatoes with garlic
200g barbecue sauce (measure by filling half a 400g can if you don't have scales)
1 tbsp dried oregano or mixed dried herbs
2 x 400g cans pinto beans
grated cheddar and tortilla chips, to serve (optional)

Steps:

  • Heat the oil in a large casserole dish with a lid. Add the onion and bacon, and cook over a medium heat for 15 mins, until the onion is really soft and starting to brown, and the bacon is crisp. Push to the side of the pan, increase the heat and add the chicken pieces. Cook for a few mins until the meat is nicely browned, but don't worry if it's not evenly coloured. Add the paprika, tomatoes, along with half a can (200ml) water, the barbecue sauce, herbs, a pinch of salt and a generous amount of black pepper. Cover with a lid, lower the heat to a gentle simmer and cook for 45 mins, stirring occasionally.
  • Check that the chicken is tender - if not, cover again and cook for 15 mins more. Add the beans and simmer, uncovered, for 20 mins until the sauce is thickened. Serve in bowls topped with grated cheddar and tortilla chips, if you like.

1/2 cup chopped onion
2 garlic cloves, smashed
1 (16 ounce) can tomatoes, cut up

1/2 teaspoon ground cumin
1/2 teaspoon dried basil, crushed
4 large carrots
1 (10 ounce) package frozen chopped broccoli (or fresh)

Steps:

  • Trim fat from meat.
  • Cut meat into 3/4 inch cubes.
  • Spray a large saucepan with veggie spray.
  • Heat saucepan, add meat, onion and garlic, cook over medium high heat 'til meat is brown and onion is tender.
  • Drain off fat.
  • Stir in undrained tomatoes, broth, chili powder, cumin, basil and 2 cups water.

SPICY ETHIOPIAN CHICKEN STEW (DORO WAT OR SANBAT WAT)

Adapted from the daringgourmet.com. "There is a reason why Doro Wat is the national dish of Ethiopia and one of the most famous of all African dishes - it's fabulous! This authentic Doro Wat recipe captures the very best of Ethiopian cooking!" The stew is made from chicken and sometimes hard-boiled eggs is the most popular traditional food in Ethiopia, often eaten as part of a group who share a communal bowl and basket of injera flatbread. A Jewish version of doro wat is eaten by the Beta Israel (Ethiopian Jews) called "sanbat wat" (Sabbath wat). Sanbat wat is a traditional Shabbat dish. In order to avoid mixing of meat and dairy, vegetable oil can be used as a parve substitute in lieu of ghee. Yeqimem zeyet, a form of niter kibbeh made from vegetable oil, can also be used.

  • Add the garlic, ginger, and 1 tablespoon oil and continue to sauté, covered, for another 20 minutes, stirring occasionally.

  • Heat the olive oil in a wide pot over low heat. Slice the kielbasa into ½-inch thick slices and toss them in the oil. Add the ground beef into the pot and break it up with a large cooking spoon. Season the meats with salt, pepper, garlic powder, and onion powder. Turn the stove heat up to high and cook until the meats release their fats and gain a browned char.
  • Reduce the heat down to low and melt the butter in the pot. Once the butter is melted, pour in the first amount of beef broth. Cut the zucchini into ½-inch thick quarters and cut the tomatoes into halves or quarters as well. Add the veggies to the pot. Cover the pot with a lid and bring the broth to a simmer.
  • Let the pot simmer for at least 10 minutes or more. The longer you simmer, the softer your vegetables will become. After 10 minutes, you can pour in the final amount of beef broth.
